3 cups all-purpose flour
1 tsp cinnamon (ground)
1 tsp baking soda
1/2 tsp salt
2 cups granulated sugar
1 cup vegetable oil
2 tsp vanilla
3 large eggs
2 cups mashed bananas (very ripe, approx. 5 medium*)
1 cup crushed pineapple (drained, reserve liquid)
1 cup macadamia nuts (chopped)
1 cup shredded coconut (unsweetened)
1 1/2 cups powdered sugar
4 tsp pineapple juice

Steps:

  • Preheat oven to 350F and grease a 10 or 12 cup Bundt pan with cooking spray.
  • In a medium bowl, whisk together flour, cinnamon, baking soda, and salt.
  • In the bowl of an electric mixer, beat sugar, oil, and vanilla until combined.
  • Add eggs one at a time, fully incorporating after each addition. Beat till pale and fluffy (approx. 3-4 mins).
  • Add banana, pineapple, coconut, and macadamia nuts and mix until combined.
  • Add flour mixture and beat until just combined.
  • Pour into prepared Bundt pan and smooth the top with a spatula.
  • Rap Bundt pan on counter a couple of times to release air bubbles and fill nooks and crannies.
  • Bake until a cake tester comes out mostly clean (approx. 60-70mins).
  • Cool on a wire rack for 10mins.
  • Rap pan against counter to loosen the cake and turn out onto wire rack.
  • Cool completely before glazing.
  • Combine sugar and pineapple juice in a small measuring cup. Whisk with a fork until combined and lumps are gone. Add more juice as needed until desired consistency is reached.
  • Pour over cooled Bundt Cake.

1 cup unsalted butter (, softened)
2 cups sugar
4 large eggs
2 teaspoons vanilla extract
1 cup sour cream
20 ounces crushed pineapple (, drained well and squeezed dry)
2 cups sweetened shredded coconut (, divided)

Steps:

  • Preheat oven to 350 degrees and spray an angel food pan with baking spray.
  • Sift together the flour, baking powder, baking soda, and salt.
  • To your stand mixer add the butter and sugar on medium speed until lightened in color and fluffy, about 3 minutes.
  • Add in the eggs one at a time, then add the vanilla extract.
  • Alternate flour and sour cream until just combined.
  • Stir in the pineapple and 1 1/2 cups of coconut and pour batter into angel food cake pan.
  • Sprinkle remaining coconut shreds on top of the batter and bake 50-55 minutes.
  • Let cake cool 20 minutes before removing from pan.

1 1/2 cups sugar
1/4 teaspoon cream of tartar
1/8 teaspoon salt
1/3 cup water
2 egg whites
1 teaspoon coconut extract
1 cup coconut
1/2 cup butter
1 1/4 cups sugar
2 eggs
1 tsp. coconut extract
2 1/4 cups flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup sour cream
1/4 cup Blue Curacoa
1/4 cup rum
1/4 pineapple juice
Blue food coloring

Steps:

  • Preheat oven to 350F. Grease and flour a bundt pan.
  • In a large bowl of a standup mixer with a paddle attachment blend butter and sugar together for 2 min. on medium speed until light and fluffy.
  • Add eggs and coconut extract and blend. Mix flour with the salt and baking powder and add to the mixture along with the sour cream. Beat for 2 min. scraping down the bowl often.
  • Stir in Blue Curacoa, rum, and pineapple juice. Add blue food coloring to the desired color.
  • Pour the cake batter into the prepared bundt pan.
  • Bake for 45-50min. or until a cake tester comes out clean. Cool completely in pan. Invert onto a serving platter.
  • For the frosting add the sugar, cream of tartar, salt, water, and egg whites in the top of a double boiler or metal bowl. Beat with a handheld electric mixer for 1 minute.
  • Place pan over boiling water, being sure that boiling water does not touch the bottom of the top pan.
  • Beat constantly on high speed with an electric mixer for 7 minutes. Beat in coconut extract.
  • Fold in coconut and ice cake.

I found this on another web site when I needed a cake recipe using ingredients I had on hand. The only thing I didn't have was a banana so I used 1/3 cup vegetable oil instead and it turned out great! I also put extra pecans around the top of the bundt pan to "decorate" the cake.

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour a 10 inch Bundt pan.
  • In a large bowl stir the melted butter, eggs and the banana.
  • Add the cake mix and crushed pineapple with juice and mix.

1/3 cup oil
3 eggs
1 1/4 cups water
1 (20 ounce) can crushed pineapple, drained
1 (8 ounce) package cream cheese, softened
1 (3 3/4 ounce) package instant vanilla pudding
1 1/2 cups cold milk
2 cups non-dairy whipped topping
grated coconut (to garnish)
chopped nuts (to garnish)

Steps:

  • Prepare cake according to package directions using oil, eggs and water.
  • Bake in greased and floured 9X13 pan.
  • When cool, punch holes in cake with handle of wooden spoon.
  • Pour pineapple over top of cake.
  • Combine cream cheese, pudding and milk; beat until smooth and thick enough to spread.
  • Spread over top of cake.
  • Top with whipped topping, coconut and nuts.
  • Refrigerate until ready to serve.

1 can(s) crushed pineapple, drained, (tall can) reserve juice
2 c bisquick baking mix
1 c flour, sifted
1 tsp baking soda
3/4 c sour cream
1 3/4 c granulated sugar
3/4 c margarine
2 tsp vanilla extract
2 large eggs, beaten
1/4 c rum or two teaspoons rum flavoring
reserved pineapple juice
1/2 c chopped nuts

Steps:

  • 1. Beat Bisquick, flour, soda together. Beat one cup of the sugar, sour cream, 1/2 cup of the margarine, eggs and vanilla extract for 3 minutes. Add flour mixture and beat for one minute more. Mix in pineapple and two tablespoons of rum or rum flavoring.
  • 2. Pour into a well greased bundt pan and bake at 350 degrees for 45 minutes. To make the glaze, combine 3/4 cup of sugar, 1/4 cup margarine and the reserved pineapple juice. Stir over low heat to blend. Add 2 Tbs rum or rum flavoring and stir well. Remove cake from oven and spoon half of glaze over cake. After it has set, spoon on the rest. Sprinkle with nuts.

  • In a large bowl, combine the sugar, flour and baking soda. Combine eggs and pineapple; stir into dry ingredients just until moistened. Fold in nuts. , Transfer to a greased 13x9-in. baking pan. Bake at 350° for 32-38 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack., For frosting, in a large bowl, beat cream cheese and butter until fluffy. Add confectioners' sugar and vanilla; beat until smooth. Frost cake. Store in the refrigerator.
