HERMIT COOKIES
Old-fashioned hermit cookies are a classic recipe full of spice, dried fruit, and nuts for a hearty cookie that is perfect with a cup of coffee or glass of milk.

Steps:
- Whisk together the flour, baking soda, and spices. Set aside.
- In a large bowl, cream together the sugar and butter until soft & fluffy. Add the eggs and mix well. Slowly add the coffee and mix well.
- Add the dry ingredients and stir until completely incorporated.
- Fold in the raisins and nuts.
- Cover the bowl and refrigerate. Chill for at least 1 hour, longer okay.
- Pre-heat oven to 400 degrees Fahrenheit. Grease baking sheets, or line with a sheet of parchment paper.
- Drop the dough by Tablespoons onto prepared sheet pan.
- Flatten the dough slightly with the palm of hand.
- Bake for 10 - 12 minutes or until golden brown and set on top.
- Cool on wire rack.

HAWAIIAN HERMIT COOKIES
A nice tropical variation of the traditional hermit cookie. For another twist on this theme substitute diced dried pineapple for part of the dried dates.

Steps:
- In a large bowl combine flour, baking soda and baking powder.
- Add butter, egg and vanilla.
- Mix until thoroughly blended.
- Roll dough into walnut sized balls and place 2 inches apart on a lightly greased cookie sheet.
- Press down slightly with the heal of your hand to flatten.
- Bake at 350ºF for 11 to 13 minutes or until edges are lightly browned.
- Cool 5 minutes on cookie sheet; then remove and cool completely on wire racks.

HERMIT COOKIES
This version of this delicious cookie is quite different than the others already posted. With an old fashioned flavour they will have your kids coming back for more. It's my husband's favorite cookie!

Steps:
- Mix the flour, baking soda, salt, cinnamon, ginger, cloves, raisins and nuts in a bowl. Cream 2 cups sugar, margarine and eggs in a mixing bowl until light and fluffy. Beat in the molasses. Add the flour mixture and mix well. Chill, covered, for 2 hours.
- Preheat the oven to 325*F.
- Shape the dough into fingersize pieces. Roll in sugar. Arrange on greased cookie sheets.
- Bake for 7 minutes. Cool on wire racks.
