Taste of Home Old Fashioned Ham Balls image

Sticky, sweet-and-sour, savoury ham meatballs in a brown sugar and mustard glaze. Use up your leftover ham, or make like us and skip the ham dinner going straight to these.

Number Of Ingredients 9

2 pounds ground pork
2 pounds leftover ham
4 large eggs
1 1/2 cups milk
1 1/3 cups crushed shredded wheat cereal (You can use a food processor or a zipper top bag and a mallet for the job!)
3 1/2 cups brown sugar (lightly packed)
1 1/2 cups water
1 cup apple cider vinegar (Don't use white vinegar here. It lacks oomph!)
2 teaspoons ground mustard powder (Or 1 tablespoon prepared British-style mustard, like Coleman's.)

Steps:

  • Use the coarse setting on your meat grinder to grind your ham. (If you do not have a meat grinder, use your food processor to pulse until it is finely chopped like hamburger or chop very finely with a large, sharp knife.)
  • Preheat the oven to 350°F.
  • Evenly coat two 9"x13" baking dishes with non-stick cooking spray.
  • Combine all the ham ball ingredients in a large mixing bowl and mix together with your hands until all ingredients are evenly distributed.
  • Roll the meat into 2-inch balls. (I use a medium sized disher to get evenly sized meatballs so they cook at the same rate.)
  • Arrange the ham balls in the pans. Set aside.
  • Add all the glaze ingredients to a medium-sized, heavy-bottomed saucepan over medium-high heat and bring to a boil, whisking just until the sugar is fully melted.
  • Reduce heat and simmer for 4 minutes. Do not cover the pan while simmering.
  • Pour the glaze over the ham balls, dividing evenly between the two pans.
  • Bake the ham balls, uncovered, for 70 minutes, or until the sauce has reduced to a syrupy consistency and the ham balls are browned.

1 can (20 ounces) unsweetened pineapple chunks, undrained
1/2 cup packed brown sugar
1/4 cup cornstarch
1/2 cup cider vinegar
1 package (32 ounces) frozen fully cooked homestyle meatballs
2 medium green peppers, cut into 1-inch pieces
1 jar (10 ounces) maraschino cherries, drained
Salt and pepper to taste
Hot cooked rice, optional

Steps:

  • Drain pineapple, reserving juice in a 2-cup measuring cup; add enough water to measure 2 cups. In a small saucepan, mix brown sugar, cornstarch, vinegar and juice mixture until blended. Bring to a boil; cook and stir until thickened., In a 3-qt. slow cooker, combine meatballs, peppers, drained pineapple and sauce. Cook, covered, on low 6-8 hours or until meatballs are heated through and peppers are tender., Stir in cherries; cook, covered, on low 15-30 minutes longer or until heated through. Season with salt and pepper to taste. If desired, serve with rice.

Number Of Ingredients 11

Meatball Ingredients:
2 pounds leftover ham
2 pounds ground pork
4 eggs
1 1/4 cups milk
1 1/2 cups panko breadcrumbs (gluten free panko will work fine as well)
Glaze Ingredients:
3 1/2 cups brown sugar
1 1/2 cups water
1 cup apple cider vinegar
2 teaspoons ground mustard powder

Steps:

  • Preheat the oven to 350 degrees. Lightly grease (2) 9x13 baking dishes with oil and set aside. Use the coarse setting on your meat grinder to grind the leftover ham. If you don't have a meat grinder, you can use a food processor to pulse until it is chopped like hamburger meat.
  • Combine all the meatball ingredients in a large bowl and mix with your hands until combined. Roll into 1 1/2" - 2" meatballs. I use a medium size cookie scoop to scoop them all the same size before smoothing them with my hands. Arrange the meatballs in the baking pans and set aside.
  • Whisk together all the glaze ingredients in a medium size saucepan over medium high heat. Bring to a boil, whisking until the sugar has dissolved. Reduce the heat to medium and simmer for 4-5 minutes, until the sauce has thickened.
  • Pour the glaze over the ham balls, dividing it between the two pans. Bake the ham balls, uncovered, for 75-85 minutes, until the ham balls have browned and the sauce has reduced to a syrupy consistency. Enjoy!
  • FREEZER MEAL: Let the meatballs cool and then transfer to a freezer safe Ziploc or an airtight container. Pour all remaining glaze over them and press out any air. Let thaw in the refrigerator before reheating covered in the oven, on the stove-top or in the microwave.

This is my newest, favorite meatball recipe. If you like a sweet twist, you'll like this one. The meatballs will be slightly pink inside when done because of the pork, so do not overbake them!

1 ¼ pounds ground smoked ham
1 pound ground pork
1 pound lean ground beef
1 cup milk
2 eggs
1 ½ cups graham cracker crumbs
1 (10.75 ounce) can tomato soup
¼ cup cider vinegar
1 cup packed brown sugar
1 teaspoon mustard powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ham, pork OR sausage, and the ground beef. Stir in the milk, eggs and graham cracker crumbs and mix well. Form into large balls about 2 inches in diameter and place them in a 9x13 inch baking dish.
  • In a separate medium bowl, combine the soup, vinegar, brown sugar and mustard powder. Mix well and pour over the meatballs.
  • Bake at 350 degrees for 1 hour or until internal meat temperature reaches 160 degrees F (73 degrees C).

2 ½ cups cooked and cubed ham
2 green onions, chopped
1 cup pineapple chunks, drained

Steps:

  • Melt the butter in a large skillet over medium heat. Saute the ham, onions and pineapple chunks in the butter for about 5 minutes.

MEATBALLS
1 can(s) spam, mashed
2 lb ham, ground
1 lb ground beef
1 lb pork sausage
1 sleeve saltine crackers (crushed to crumbs)
1 tsp poultry seasoning
1 tsp dry mustard
1 tsp ground ginger
1 tsp ground black pepper
1/4 tsp cayenne pepper
3 large eggs
SAUCE
2 Tbsp oil (butter or margarine work too)
1 - 2 c carrots, sliced
3 - 4 stick celery, sliced
1 large onion, julienned
2 large bell peppers
2 can(s) (20 ounces each) pineapple chucnks, including juice
1 jar(s) (14 - 18 ounces) apricot jam
1 tsp ground ginger
1/3 c vinegar
3 Tbsp corn starch
1 c cold water (to mix corn starch into)
ADDITIONAL OPTIONAL INGREDIENTS
1 tsp dry mustard (added to sauce)
1 tsp red pepper flakes (added to sauce)

Steps:

  • 1. Mix together all of the meatball ingredients. (I use my hands, use a spoon if you want...)
  • 2. Form mixture into about 1 or 2 inch diameter meatballs. *** The kids love shaping the meatballs and placing them on the baking sheets. *** you will get around 130 - 150 meatballs depending on size and consistency of size.
  • 3. Cook Rice according to package and the amount you want. Leave covered until needed. While rice is cooking, start cooking meatballs. Bake at 350 degrees on baking sheets for 20 minutes. OR go to step #4
  • 4. Fry meatballs on medium-high heat with about 3 TBS of cooking oil. Rolling them to cook all over. Don't over crowd them in pan. Remove them to a platter or a baking sheet as they are cooked. When all are done, Start the Stir Fry sauce.
  • 5. *** You can cook this as a meatloaf by baking at 350 degrees for 1 hour maybe a bit longer depending on your oven.
  • 6. Start with the carrots in oil, stirring about 2 minutes before adding the celery, stirring about 2 minutes before adding the onion 2 minutes, then the bell peppers. Stirring until almost cooked.
  • 7. Add remaining sauce ingredients, EXCEPT the cornstarch mixture. Bring to the boil, then add cornstarch mixture, stirring constantly until sauce is cooked and thickened. *** if you like a thinner sauce, just add a little water. *** you don't have to add the corn starch, but you still need the water. Adding the cornstarch thickens the sauce and helps it to cling to the meatballs.
  • 8. Add pineapple, including the juice!
  • 9. Add meatballs into the pan with sauce ingredients. Coat with the sauce.
  • 10. Serve over rice. *** If making for an appetizer, skip the rice and put all on a skewer or toothpick. *** You can skip the veggie part of the sauce if you want to make only the meatballs and pineapple.

Ham Balls are a classic midwestern meatball recipe. Ground ham and ground beef are mixed together with graham crackers and topped with a tomato brown sugar sauce.

1 lb ground ham (see note about finding and/or making ground ham**)
1 lb ground beef
1 cup graham cracker crumbs (finely ground)
1 egg
3/4 cup milk
1 10 3/4 oz. can condensed tomato soup
1 cup brown sugar
1/2 cup white vinegar
1 tsp dry mustard

Steps:

  • Preheat the oven to 350°
  • Combine the meatball ingredients. In a large bowl lightly combine the 1 lb ground ham, 1 lb ground beef, 1 cup graham cracker crumbs, 3/4 cup milk, and 1 egg. Make large meatballs. Form the mixture into large meatballs, about 1/3 cup in size each. Place into a 9x13 baking dish. You will have about 12-15 meatballs.
  • Whisk together the sauce ingredients & pour over meatballs. In another bowl whisk together the can of condensed tomato soup, 1 cup brown sugar, 1/2 cup white vinegar, and 1 tsp dry mustard. Pour the sauce over the meatballs.
  • Bake 1 hour. Bake in the oven, uncovered, for 1 hour, basting the tops of the ham balls with the sauce once or twice during cooking.
  • Cool & eat! Let the meatballs cool for about 5-10 minutes and then serve with mashed or baked potatoes and veggies.

1 (8 ounce) can crushed pineapple, well drained
1/4 cup finely chopped green or red bell pepper ((or a mix of both))
3 Tablespoons finely chopped green onion
1 teaspoon seasoned salt
2 cups chopped pecans, divided

Steps:

  • In a large bowl, mix all of the ingredients (only 1 cup of the pecans) together until well combined. Shape into a ball. Place the remaining 1 cup of pecans on a plate and roll the ball in the pecans covering well.

1/2 pound ground pork
1 cup soft bread crumbs
2 large eggs, beaten
