Hawaiian Fudge--Non Chocolate image

Unique candy with fudge like texture with delightful tropical flavor but no chocolate. My husband's co-workers expect him to bring this to the office every year at Christmastime. We had this every Christmas. Mom got it from Southern Living Cookbook that is currently falling apart and held together by various batters and rubber bands.

2 1/2 cups sugar
1 cup whole milk or 1 cup cream
1 (6 ounce) can crushed pineapple
1 cup pecans
1/2 cup coconut (optional)

Steps:

  • Combine sugar, milk or cream, and well drained pineapple. Bring to a boil over medium heat and cook until mixture reaches the soft ball stage (232-240 on the candy thermometer).
  • Remove from heat and stir in pecans and coconut if using. You can also add a few drops of green food coloring for aesthetics, but be careful or it will glow :0 and look like toxic waste ;)
  • Let cool slightly and then beat until creamy.
  • Pour into a greased loaf pan, cook and cut into squares.
  • The cook time is is approximate. Experienced candy makers know it depends on the weather and how fast you can get the milk to heat up to soft ball stage.

This fudge is amazingly great, and made with absolutely no cooking or heating. Add chopped walnuts or almonds, or even other flavorings, if you like.

1 cup virgin coconut oil, room temperature
1 cup unsweetened cocoa powder
½ cup honey

Steps:

  • Lightly grease 8x8 inch baking dish.
  • Pour the coconut oil into a bowl, and sift in the cocoa, stirring to blend evenly. Stir in the honey, and mix until smooth. Spread mixture into prepared dish, and refrigerate at least 1 hour. Cut into 1 inch squares.

  • Line an 8x8-inch cake pan or casserole dish with heavy-duty aluminum foil or waxed paper allowing the foil to extend over the edge 2 to 3 inches (you'll use this as handles to pull the fudge out of the pan). Spray the foil or paper with non-stick spray.
  • In an electric mixer beat cream cheese until soft. Place 1/4 cup of the Andes Peppermint Crunch in a zip-top bag and crush slightly. Add the 1/4 cup crushed candies and the 1/4 cup un-crushed candies to the cream cheese. Mix until completely incorporated (the cream cheese should turn light pink)
  • Turn the mixer to low speed and add powdered sugar 1 cup at a time to the mixer. Combine completely before adding another cup of sugar. The mixture needs to be really stiff and dry(ish). To test, pinch some of the fudge off and roll it into a ball, if it stays in the ball without going flat it's thick enough. Add more sugar if it's not this consistency.
  • Spread evenly into the prepared pan. Refrigerate 30 minutes to 1 hour. They will cut much cleaner when cold.
