Steps:
- Finely chop water chestnuts and green onions.
- In a large bowl, mix water chestnuts, green onions, pork, and beef. Add soy sauce and mix well.
- Take one wonton skin out of the pack. Using your finger, wet the edges of the wonton.
- Scoop about a teaspoon of filling into the middle of the wrap and fold like a triangle. Press the edges firmly to seal.
- Finish wrapping the rest of the wontons until all the filling is gone. If you stuff your wontons well, this will only take one pack of wonton skins, but I often go over by about 3-5 wontons.
- When ready to fry, heat up oil in a deep skillet or wok to 350 degrees F.
- Fry wontons until cooked through, flipping halfway through cooking. This takes me about 2 minutes per side. I can comfortably fit about 7-8 wontons in my 12 inch cast iron skillet.
- Line a serving platter with paper towels to absorb the leftover oil as the cooked wontons cool. Wontons can be enjoyed at room temperature, but keep leftovers in the fridge.

Steps:
- In a bowl, mix the ground pork, shrimp, soy sauce, sesame oil and white pepper together. Stir to combine well to form a sticky filling.
- To wrap the wontons, lay a piece of the wonton wrapper on your palm and add 1/2 tablespoon of the filling in the middle of the wrapper. (Use 1 teaspoon filling if you are a beginner.) Dip your index finger into the sealing water and trace it on the outer edges of the wonton wrapper.
- You can wrap the wontons three ways. To make a triangle, just fold it up to form a triangle. Pinch the edges to seal tight. To make them into the pretty shape (far left in the above picture), just pull the two corners of the triangle down so one overlaps the other, pinch and seal with water. To make them into Hong Kong style wonton (far right in the above picture), please watch my video at the top of this post.
- Heat up some oil for deep-frying. Once the oil is fully heated, deep fry the wontons until golden brown. Drain the excess oil with paper towels. Serve hot with Chinese sweet and sour sauce or Thai sweet chili sauce.

Steps:
- In a medium bowl, mix together the lunchmeat, water chestnuts, green onions, parsley, hard-cooked eggs, pepper, and oyster sauce. Set aside.
- On a clean flat surface, such as a cutting board, lay out 4 to 6 wonton skins at a time. Place a tablespoon of the meat mixture into the center of each one. Keep a small bowl of water next to the work area to dip fingers in. Use wet fingers to moisten the corners of each wrapper. Quickly pinch all 4 corners together to seal in the filling. If it doesn't hold, use more water. Keep filled wontons covered with plastic wrap to prevent drying while the others are made.
- Heat one inch of oil in a deep heavy skillet over medium-high heat, or heat recommended amount of oil in a deep-fryer to 365 degrees F (185 degrees C). Fry wontons for a few minutes on each side, or until golden. Remove to paper towels to absorb excess grease. Enjoy the grinds!

FRIED SAIMIN
Fried saimin is saimin (Hawaii's signature noodle soup dish), but without the soup! It's easy to make. You just need noodles and toppings like Spam, kamaboko (fish cake), carrots, eggs, and green onions.

Steps:
- First step is to prepare all the topping ingredients. Slice the Spam and kamaboko (aim for the size of a fat matchstick). Peel and julienne the carrot. Beat the egg, scramble the egg, and then sliced thinly. Chop the green onion. Set all this on the side.
- Next, prepare the noodles. Bring water to a boil in a small pot. Drop in the frozen noodle and cook for 30 seconds. Remove and drain immediately. Rinse with cool water (this stops the noodles from further cooking and also removes excess starch).
- Now we start cooking! Put a little oil in a saucepan, and pan fry the Spam over medium heat. Pan fry for 2-3 minutes (until it starts to brown a bit). Then add the kamaboko and carrots. Pan fry another 2 minutes and then pour everything out into a bowl.
- Add a bit more oil to the empty saucepan, and then add in the saimin noodles. Stir fry for 2 minutes (longer for more crisp noodles, less for softer noodles). Add in half the seasoning packet and mix well so that the seasoning is evenly distributed.
- Add the Spam/kamaboko/carrots back in the pack. Stir fry everything together and add in the remaining half of the seasoning packet and a teaspoon of soy sauce. Sitr fry another minute. Add in the sliced egg and green onions. Toss quickly, and pour onto a plate. Eat and enjoy! ^_^

Steps:
- Heat a wok or large frying pan over medium heat. Drizzle in 2 tablespoons of oil and scramble the eggs for 30 seconds or until cooked to your preference. Set the eggs aside on a plate.
- Drizzle in 2 tablespoons of oil again to the wok. Fry the toughest vegetable (for this recipe it is the carrots) for a couple of minutes. Then keep frying the next tender vegetable (onions) and fry for another couple of minutes. Lastly, add in the most tender vegetable and cook for a minute. Set aside the cooked vegetables.
- *If your meat isn't cooked or you would like to warm it up, fry the meat in the wok for a few minutes or until the meat is cooked.
- Drizzle in 2 tablespoons of oil again to the wok. Add in the leftover rice and fry it until all of the rice has been coated in the oil. Add in the oyster sauce, shoyu, white pepper, and salt. Stir fry until well combined.
- Add everything back to the wok. Eggs, vegetables, and meat. Stir fry everything until has mixed well. Serve hot as a hearty meal or side dish. Enjoy!
