HAWAIIAN EGG ROLLS
As an avid cook, I am constantly trying to come up with recipes for leftovers. This one gives a whole new twist to extra ham. My two children think these egg rolls are wonderful, and they freeze well. I thaw as many as needed and bake them. -Terri Wheeler, Vadnais Heights, Minnesota

- In a large saucepan, saute spinach and ginger in olive oil for 1-2 minutes. In a large bowl, combine the ham, water chestnuts, pineapple, green onion and soy sauce. Stir in the spinach mixture. , Place 3 tablespoons ham mixture in the center of each egg roll wrapper. Fold bottom corner over filling; fold sides over filling toward center. Moisten remaining corner with water; roll up tightly to seal. , In an electric skillet, heat 1 in. of canola oil to 375°. Fry egg rolls until golden brown, about 2 minutes on each side. Drain on paper towels. Serve with sweet-sour sauce.

Steps:
- Preheat oven to 350 degrees.
- Cut the rolls through the middle to make them into buns (but cut through it in one sheet without pulling them apart).
- Spread the mayonnaise on the bottom layer of the bread and put the bread into an 8x8 metal square pan.
- Layer the eggs, shredded cheddar cheese, and bacon.
- Put the bread on top to close the sandwiches.
- Brush the melted butter over the tops of the sandwiches,
- Bake covered for 10 minutes, take foil off and cook an additional two minutes.
- Cut into 16 small sandwiches.

- In a mixer fitted with a dough hook, dissolve the remaining 1 Tbs raw sugar in the water. Add the yeast and let proof 10 minutes. Add the pineapple juice-sugar mixture and the coconut oil, and stir until combined. One cup at a time, add the flour until dough is soft but not overly wet or sticky (~7-1/2 cups). Knead 10 minutes.

Divide the dough in half, then continue to divide to make 32 balls. Distribute the dough balls between two (13x9) bake dishes sprayed with cooking spray, and let the dough rise again for ~40 minutes.
- Heat oven to 375F. Brush the tops of the risen balls of dough with remaining pineapple juice. Bake at 375F for 30 minutes until golden brown.
