As an avid cook, I am constantly trying to come up with recipes for leftovers. This one gives a whole new twist to extra ham. My two children think these egg rolls are wonderful, and they freeze well. I thaw as many as needed and bake them. -Terri Wheeler, Vadnais Heights, Minnesota

Yield 7 egg rolls.

Number Of Ingredients 11

10 fresh spinach leaves, julienned
1/2 teaspoon ground ginger
2 tablespoons olive oil
1/2 pound fully cooked ham, coarsely ground (about 2 cups)
4 water chestnuts, chopped
1/4 cup crushed pineapple, undrained
2 tablespoons chopped green onion
1 tablespoon soy sauce
7 egg roll wrappers
Canola oil for frying
Sweet-and-sour sauce

Steps:

  • In a large saucepan, saute spinach and ginger in olive oil for 1-2 minutes. In a large bowl, combine the ham, water chestnuts, pineapple, green onion and soy sauce. Stir in the spinach mixture. , Place 3 tablespoons ham mixture in the center of each egg roll wrapper. Fold bottom corner over filling; fold sides over filling toward center. Moisten remaining corner with water; roll up tightly to seal. , In an electric skillet, heat 1 in. of canola oil to 375°. Fry egg rolls until golden brown, about 2 minutes on each side. Drain on paper towels. Serve with sweet-sour sauce.

2 tablespoons chopped green onions
1 tablespoon soy sauce
7 egg roll wraps

sweet and sour sauce

Steps:

16 Hawaiian Bread Rolls ((This is 1 1/3 package))
1/4 cup mayonnaise
1/2 cup shredded cheddar cheese
9 eggs (, scrambled)
1 pound bacon (, cooked)
2 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees.
  • Cut the rolls through the middle to make them into buns (but cut through it in one sheet without pulling them apart).
  • Spread the mayonnaise on the bottom layer of the bread and put the bread into an 8x8 metal square pan.
  • Layer the eggs, shredded cheddar cheese, and bacon.
  • Put the bread on top to close the sandwiches.
  • Brush the melted butter over the tops of the sandwiches,
  • Bake covered for 10 minutes, take foil off and cook an additional two minutes.
  • Cut into 16 small sandwiches.

  • Put the dough in a warm place and let rise 1 hour. Turn dough out onto a clean surface floured with 1/2 cup flour. Knead the dough a bit to incorporate some of the flour and make the dough smooth. Divide the dough in half, then continue to divide to make 32 balls. Distribute the dough balls between two (13x9) bake dishes sprayed with cooking spray, and let the dough rise again for ~40 minutes.
  • Heat oven to 375F. Brush the tops of the risen balls of dough with remaining pineapple juice. Bake at 375F for 30 minutes until golden brown.

  • Bake the rolls for 20 to 25 minutes, or until the internal temperature reads 190°F on a digital thermometer.
