1 package yellow cake mix (regular size)
3 packages (3.4 ounces each) instant vanilla pudding mix
4 cups cold whole milk
1-1/2 teaspoons coconut extract
1 package (8 ounces) cream cheese, softened
1 can (20 ounces) crushed pineapple, well drained
2 cups heavy whipping cream, whipped and sweetened
2 cups sweetened shredded coconut, toasted

Steps:

  • Mix cake batter according to package directions. Pour into two greased 13-in. x 9-in. baking pans. Bake at 350° for 15 minutes or until the cakes test done. Cool completely. , In a large bowl, combine pudding mixes, milk and coconut extract; beat for 2 minutes. Add the cream cheese and beat well. Stir in pineapple. , Spread over the cooled cakes. Top with whipped cream; sprinkle with coconut. Chill for at least 2 hours.

2 cups graham cracker crumbs
1/2 cup butter (melted)
1/2 cup butter (softened)
2 large eggs
1 teaspoon vanilla extract
2 cups powdered sugar (measured after sifting)
20 -ounce crushed pineapple (drained WELL)
8 -ounce whipped topping (or 2-3 cups homemade whipped topping)

Steps:

  • Grease an 8x8-inch or 9x9 inch baking pan. Preheat oven to 325 degrees.
  • Stir together graham cracker crumbs and melted butter in a medium bowl. Press into your prepared pan. Bake for 10 minutes. Let cool completely.
  • Use an electric mixer to mix softened butter, eggs, vanilla extract until smooth. Gradually beat in powdered sugar. Spread mixture on top of graham cracker crust and bake for 15 minutes. Cool completely.
  • Gently fold together whipped topping and drained crushed pineapple. Spread on top of filling. Cover and refrigerate until ready to serve.

Inspired by the flavors of Hawaii, this rich dessert combines moist cake, creamy pudding, toasted coconut, and sweet pineapple into one fabulous treat. Another delicious dessert with coconut and pineapple is Pina Colada Pie, which has that same tropical flair.

1 package yellow cake mix (18.5 oz)
2 packages (3-4 oz.) French vanilla instant pudding mix
1 package (3-4 oz.) coconut cream instant pudding mix
4 cups milk
1 1/2 teaspoons coconut extract
1 package cream cheese - softened (8 oz.)
1 can pineapple (20 oz.) crushed, well drained
16 ounces Cool Whip - thawed
2 cups coconut - toasted

Steps:

  • Prepare cake according to package directions. Pour into 2 (9") greased and floured cake pans. Bake according to package directions. Cool completely. Toast coconut. To toast coconut, spread in even layer on baking sheet. Place on top rack of oven while cake is baking. Check after 2 minutes, stir around, bake another 2 minutes or until nicely browned. Let cool. Beat pudding, milk and coconut extract. Add softened cream cheese, beat well. Stir in crushed pineapple. Lay 1 round cake on serving platter. Spread 1/2 cup cream cheese mixture over top. Place 2nd cake on top. Spread 1/2 cup cream cheese mixture on top. Spread Cool Whip over entire cake. Sprinkle all over with toasted coconut. Note: The coconut can be toasted ahead of time and frozen for up to 1 month. Note: You will have leftover pudding mix. To use up the pudding mix, you can make a 9x13 lemon cake, spread pudding mixture over top, then Cool Whip, then coconut.

Haupia is a classic Hawaiian dessert made from coconut milk, sugar, cornstarch, and water. It's like a cross between coconut jelly and pudding. Cut into square and eat chilled. Simple and refreshing!

1 can coconut milk
5 tablespoons cornstarch
4 tablespoons sugar
1/2 cup water

Steps:

  • Mix cornstarch and water in a small bowl. Mix till the cornstarch is completely dissolved. Set aside.
  • In a small saucepan over medium heat, combine the whole can of coconut milk and sugar. Whisk together, and keep whisking until it's just about to boil.
  • Slowly pour in the cornstarch/water mixture while whisking.
  • Turn the heat to low, and keep cooking for 10-15 minutes. You'll want to stay at the stove at this whole time, and whisk pretty frequently. You'll know the haupia is ready when it gets much thicker (almost "gluey") and starts to pull away from the side of the saucepan when you whisk.
  • Pour into a greased (or parchment paper lined) 8x8 pan. Let cool at room temperature for 15 minutes. Then cool in the fridge for 1-2 hours until set. Cut into squares and enjoy chilled ^_^

13-15 frozen mini pie shells
14 oz. condensed milk
1 can pineapple
½ cup sour cream
1 can whipped cream
3 tbsp shredded coconut

Steps:

  • Preheat oven to 375 degrees F.
  • Line up mini tart shells on a cookie sheet and bake for 10 minutes.
  • Allow the shells to cool.
  • In a large bowl, mix together condensed milk and sour cream.
  • Add 7 tbsp pineapple juice (from the can) and mix until thoroughly combined.
  • Dice 8-10 pieces of pineapple and add into the condensed milk mixture.
  • Fill up each tart shell with the mixture.
  • Bake for an additional 7 minutes. Allow to cool then chill in the refrigerator for 1 hour.
  • Toast the shredded coconut on a small non-stick skillet, over medium heat. Cook for about 2-3 minutes, or until the majority of the shredded coconut shreds turn golden brown.
  • Top off each tart with whipped cream, toasted coconut and one small piece of pineapple.

  • When the coconut milk just starts to simmer, add the sugar/cornstarch mix, and whisk. Keep whisking until the mixture thickens and starts looking slightly translucent. This took me about 10 minutes. When you bring your whisk up, the haupia should flow off of it and you can see the trace of it for a few seconds before it "melts away".
  • Pour into the 8x8 pan and allow to cool on the counter before refrigerating. Refrigerate until solid and completely cooled. If you are using the full 5 tablespoons, you should be able to pull the sides away from the pan and invert the whole thing onto a cutting board. If it seems too soft for that, just cut it while in the pan. Cut into 2 inch pieces (16 pieces total) and serve.
