- Mix cake batter according to package directions. Pour into two greased 13-in. x 9-in. baking pans. Bake at 350° for 15 minutes or until the cakes test done. Cool completely. , In a large bowl, combine pudding mixes, milk and coconut extract; beat for 2 minutes. Add the cream cheese and beat well. Stir in pineapple. , Spread over the cooled cakes. Top with whipped cream; sprinkle with coconut. Chill for at least 2 hours.

- Grease an 8x8-inch or 9x9 inch baking pan. Preheat oven to 325 degrees.
- Stir together graham cracker crumbs and melted butter in a medium bowl. Press into your prepared pan. Bake for 10 minutes. Let cool completely.
- Use an electric mixer to mix softened butter, eggs, vanilla extract until smooth. Gradually beat in powdered sugar. Spread mixture on top of graham cracker crust and bake for 15 minutes. Cool completely.
- Gently fold together whipped topping and drained crushed pineapple. Spread on top of filling. Cover and refrigerate until ready to serve.

- Preheat oven to 375 degrees F.
- Line up mini tart shells on a cookie sheet and bake for 10 minutes.
- Allow the shells to cool.
- In a large bowl, mix together condensed milk and sour cream.
- Add 7 tbsp pineapple juice (from the can) and mix until thoroughly combined.
- Dice 8-10 pieces of pineapple and add into the condensed milk mixture.
- Fill up each tart shell with the mixture.
- Bake for an additional 7 minutes. Allow to cool then chill in the refrigerator for 1 hour.
- Toast the shredded coconut on a small non-stick skillet, over medium heat. Cook for about 2-3 minutes, or until the majority of the shredded coconut shreds turn golden brown.
- Top off each tart with whipped cream, toasted coconut and one small piece of pineapple.
