HAWAIIAN CHICKEN PIZZA
Instead of the traditional ham, this Hawaiian chicken pizza not only adds chicken as a topping, but bacon as well.

- In a medium bowl, mix together the flour, salt and yeast. Add the water and mix with a wooden spoon or your hands. It should be sticky, but not lumpy.
- Cover with saran wrap and a towel in a warm place, allowing it to rise for 24 hours. Transfer to a floured surface and shape into ball. Use when ready.
- Place pizza stone in oven 8" from the broiler element and preheat to 500°F. You want stone to be in oven for at least 30 minutes at 500°F.
- In a medium skillet, cook the bacon over medium heat until fat is rendered and crisp. Place on paper towel-lined plate and reserve 1 tbsp bacon fat.
- If using chicken breasts, use same skillet you cooked the bacon. Season with Emeril's Essence and cook in skillet for 4 minutes on each side until completely cooked through and shred. If using rotisserie chicken, just shred, add the seasoning and set aside.
- Sprinkle pizza peel with cornmeal or flour. Use your hands to gently tug, pull and push the dough to the shape you want and place on pizza peel.
- Spread a light layer of the pizza over the dough, leaving about 1 inch around the edges untouched. Add about 1/2 cup of the mozzarella cheese. Spread the cooked chicken, bacon, pineapple and red onion. throughout the pizza. Add the remaining cheese.
- Once stone is preheated, turn broiler to high. Transfer pizza to pizza stone and bake for 4-5 minutes or until top is bubbly and bottom is golden brown. Top with cilantro if using.

- Marinate chicken breasts in teriyaki marinade in the refrigerator for 1 hour.
- Preheat the oven to 400 degrees F (200 degrees C). Lightly spray a 9x13-inch baking pan with cooking spray. Place marinated chicken on the prepared pan; discard excess marinade.
- Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the oven and let cool slightly, about 10 minutes. Keep oven on.
- Lay drained pineapple tidbits between paper towels to pick up excess juice.
- Place pizza crust on a baking sheet and cover with sauce.
- Dice cooled chicken into small pieces. Cover pizza sauce with Canadian bacon, then chicken pieces, then with pineapple. Sprinkle with mozzarella cheese and top with oregano.
- Bake in the preheated oven until cheese is a light golden brown, 15 to 17 minutes. Remove from the oven and cut into triangles.

- Warm up chicken with barbecue sauce then set aside.
- Brush crust with olive oil then a light layer of barbecue sauce.
- Top with 1/2 of the shredded cheese.
- Next add the chicken, onions, peppers, and pineapple, and remaining shredded cheese.
- Cook on a pizza pan in a 400* oven for about 10 minutes or until cheese is melted.

- Preheat a grill to medium-high heat. Brush both sides of chicken lightly with 1 Tbsp of the olive oil and season both sides with salt and pepper. Grill until cooked through, rotating once halfway through cooking, and brushing with 3 Tbsp of the barbecue sauce during last 1 - 2 minutes of grilling. Remove from grill and set aside to cool 5 minutes.
- Spread pizza dough out on a floured sheet of parchment paper over a pizza tray to a 12-inch round. In a mixing bowl whisk together remaining olive oil and garlic. Brush entire surface of dough with olive oil mixture and let rest 10 minutes.
- Cut chicken into cubes. Brush dough with remaining barbecue sauce (1/2 cup + 1 Tbsp). Top with 1/3 of the mozzarella then top with chicken, pineapple, bacon and red onion. Sprinkle with remaining mozzarella and season with freshly ground black pepper.
