POLYNESIAN CHICKEN
A little recipe I picked up from my favorite sergeant in the corps. His recipe calls for papaya, but he told me it's optional. I hope you like. Serve over rice.

Steps:
- In a large bowl, stir together pineapple chunks (with juices), peppers, carrots, and coconut. Mix in basil, ginger, garlic, oregano, and bay leaf. Pour in ginger ale, and stir in chicken strips. Cover, and refrigerate for about 1 hour.
- Heat oil in a large skillet over medium heat. Pour in chicken and marinade; simmer, stirring occasionally, until chicken is fully cooked and lightly browned, about 25 minutes.
- In a small bowl, mix together cornstarch and water; stir into sauce; cook to thicken, about 5 minutes more.

HAWAIIAN TERIYAKI CHICKEN

Steps:
- Combine the water and soy sauce and then dissolve the sugar in the liquid. Add the garlic and ginger and then the chicken.
- You can soak the meat in the marinade for up to 3 days or at least 24 hours.
- Grill the chicken
- Strain and Boil the left over teriyaki marinade and use to pour over the chicken after grilled.
POLYNESIAN CHICKEN
Polynesian Chicken is a great retro Chinese restaurant dish. Made with a few large pieces of crispy, batter-fried seasoned chicken breast, set on a bed of shredded Chinese vegetables in a luscious brown sauce, you'll thoroughly enjoy this Polynesian chicken

- Carefully split the chicken breast into two thinner pieces that are roughly the same size. Sprinkle the salt, white pepper, onion powder, and garlic powder on both sides of the chicken breast, and set aside.
- Make the batter by mixing all of the batter ingredients in a bowl until combined. Do not overmix! Meanwhile, heat 4 cups of canola oil in a small wok or cast-iron frying pan until it reaches 350 degrees F. Use a candy thermometer to check the temperature, because you don't want to burn the batter before the chicken is cooked.
- Dip both of the chicken breasts into the batter and fry until golden brown (about 2-3 minutes on each side), turning the chicken pieces often in the oil. Set the fried chicken aside on a wire rack to drain off any excess oil.
- If you are unsure whether or not the chicken is done, you can cut into one of the pieces to make sure the juices are no longer pink. However, the chicken is cut thin, so it's relatively easy to cook it until it's just done. This is important for achieving a tasty chicken dish.
- Heat your wok over high heat, and add 1 tablespoon of the frying oil to your wok. Add the garlic, mushrooms, bamboo shoots, and red bell peppers, and stir-fry for 30 seconds. Add in the Shaoxing wine, followed by the napa cabbage. Continue to stir-fry for 30 seconds, and stir in the soy sauces, salt, sugar, sesame oil, oyster sauce, and white pepper.
- Next, add the snow peas and give everything a quick stir. Add the hot chicken stock. Let the sauce come to a boil, and add the cornstarch/water mixture. Stir-fry for another 30 seconds until the sauce has thickened enough to coat a spoon.
- Transfer the vegetable mixture to a plate. Slice the chicken into 1½-inch wide pieces, and place on top of the bed of vegetables. Serve immediately with white rice!

- In a 3- or 4-qt. slow cooker, combine the first nine ingredients. Cook, covered, on low 3-4 hours or until a thermometer reads 165°. Remove chicken; cool slightly., Meanwhile, in a small bowl, mix cornstarch and water until smooth; gradually stir into cooking juices. HAWAIIAN CHICKEN OR POLYNESIAN CHICKEN
A really tasty dish that is neither too "pineapple-y" or too overwhelmed by spices. This is either a wonderful dinner dish or a great party item. You'll be the hit of any pot luck. It couldn't be easier to make, and you can even substitute chicken wings for the breasts and turn this into a mouth-watering appetizer. The scent of this dish cooking will have your family or friends salivating. Serve with rice or couscous and ENJOY! (Note added: Please add more seasoning if you like. One review notes this is tasteless which it certainly is not. But common sense in cooking calls for the chef to make sure a dish is seasoned to taste before taking it off of the stove.) NOTE: For a diet requiring limited fats and cholestrol, remove skin and fat from pan once the chicken had cooked, and reduce the amount of canola oi.

- Fry chicken breasts in a large pan with oil until cooked, about 30 minutes.
- Remove from pan and remove all but 2 tablespoons of the oil.
- Add the curry powder to the oil and cook for 1 minute on medium heat.
- Add onions and celery, cooking until the celery is soft.
- Add pineapple, broth and a small amount of salt and pepper, if desired.
- Simmer for 2 minutes and add chicken back into the pan.
- Cook, simmering for 35-45 minutes with pan covered.
- Remove chicken.
- Make a loose paste with cornstarch and a small amount of water.
- Add to ingredients in pan, simmering on high fora few minutes until sauce is a bit thick.
- Pour over chicken.
- Serve with rice or couscous.

- Preheat oven to 425 degrees F.
- In a large bowl combine your chicken, egg, paprika, onion powder, sugar, garlic powder, and pepper.
- Mix until well combined (mixing with hands or a food processor works best) and roll into one inch balls.
- Place on a cookie sheet and bake for 15 minutes, or until they are all the way cooked through and not pink in the middle.
- Remove the meatballs from the oven and place on a pan rubbed with olive oil.
- Let the meatballs brown on all sides, then remove from heat and set aside.
- Slice a fresh pineapple. Using the same pan, brown the pineapple. I drizzled honey over my pineapple to give it a sweeter taste, but this is optional.
- Cook until pineapple is browned.
- Using a toothpick, pierce a pineapple chunk and a meatball and place on plate.
- Drizzle teriyaki sauce over the kabob.

- Whisk pineapple juice, soy sauce, brown sugar, garlic, and ginger together in a bowl until brown sugar has dissolved. Pour marinade into a resealable plastic bag. Add chicken thighs and coat with the marinade. Squeeze out excess air and seal the bag. Marinate in the refrigerator, 4 hours to overnight.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Reduce heat to low on one burner of the preheated grill. Place oven-safe dish over the low burner; add butter and green onions to the dish and allow to slowly melt. Remove chicken from the marinade and shake off excess. Discard the remaining marinade. Grill chicken in batches over the medium burners, turning once, until juices run clear, about 10 minutes per batch.
- When chicken is cooked, place each piece into the butter and onion "bath", turning a couple of times to ensure it is well coated. Continue to grill remaining chicken, adding each piece to the butter and onion "bath", pushing already-coated pieces to the side until all pieces have been coated.

- Marinade: Arrange the Chicken Breast is a shallow dish. Whisk all the ingredients for the marinade together in a small bowl and pour on top of the chicken. Cover and let marinate in the refrigerator for 4 to 6 hours, or a minimum of 30 minutes at room temperature.

- Whisk the marinade ingredients together in a large covered container, until fully combined. Set aside about half of the marinade in a separate container (cover and refrigerate the reserved marinade until ready to grill).
- Add the thawed chicken pieces to the large container; turn to coat in the sauce. Make sure container is covered. Refrigerate chicken overnight, or at least 4-6 hours.
- Prepare BBQ. Lightly oil the grill with the olive oil. When coals are hot and ready to go, add the chicken pieces. Discard the marinade that the raw chicken was in.
- Grill the chicken until done (larger pieces of chicken will require longer cooking time). Use the reserved marinade (from step #1) to baste the chicken continually while it cooks.
