We were very excited to kick off season 14 of Cooking Hawaiian Style with the multi-talented singer songwriter Kuana Torres. We had Kuana in our kitchen 7 seasons ago and thought it was about time to bring him back. His mana'o on Hawaiian culture and cuisine makes for an extra special episode. In addition to singing, Kuana spends much of his time online these days conducting hula work shops and lei making classes, this pandemic has not slowed him down one bit. Kuanaʻs Chicken Lūʻau recipe is definitely worth a try.

2 Bags Taro Leaf
3 Cups Profood Frozen Coconut Milk (or )
Chaokoh Brand ((Fresh is always better))
1/2 Tray Boneless, Skinless Chicken (or Chicken Breast)
Salt

Steps:

  • Boil leaf down until soft (4 to 5 hrs).
  • Remove from pot and into strainer. Drain well.
  • In a separate pot, boil chicken for 30 to 35 minutes or until soft.
  • Remove from pot, cool, shred and set aside.
  • Heat stove to medium/low setting and add lūʻau leaf back into pot.
  • Stir in coconut milk.
  • Keep a constant stir so that burning does not occur (20 minutes).
  • Add shredded chicken and stir (5 minutes).
  • Turn stove off.
  • Add salt to taste. Finished

Hawaiian Chicken - A great dinner idea with wonderful caramelized pineapples on top and cooked it a delicious sauce! Serve with couscous, rice, mashed potatoes, whatever you enjoy!

Number Of Ingredients 12

Chicken Thighs or Drumsticks. Allow 2 - 3 per person.
As many pineapple rings as you like. I allowed 2 per person
cup The pineapple juice from the can of your pineapples, about 1 or so?
2 cups or 500 ml hot water
1 chicken stock cube
2 teaspoons mustard, your favourite choice
1 Tablespoon Sugar
1 Tablespoon honey
1 Tablespoon Tomato puree
Salt & Pepper
1 Tablespoon vinegar
2 Tablespoons flour ** if you are using more liquid, you will need to use more flour or cornstarch to thicken the sauce.

Steps:

  • Set Oven to 180 C / 350 F / Gas 4
  • Wash and prepare the chicken in a suitable oven proof dish. Allow enough space for the chicken to sit separate and also to hold the sauce. Pour over the pineapple juice. Add salt and pepper to the chicken if you wish.
  • In a jug, add the stock cube to the hot water to dissolve it, then in a bowl, add the flour and enough cold water to make it into a paste. Once done, add the remaining ingredients for the sauce and stir to avoid any lumps. Add this to the jug of hot water & dissolved stock cube.
  • Pour the sauce all over the chicken and then arrange the pineapple rings how you like.
  • Place in the oven for 60 minutes. Halfway through cook time, you may want to move the pineapple rings a little so the skin underneath browns evenly. The chicken will look like it is burnt, but in fact it is the sugars & pineapple caramelising, so please don't worry!
  • Serve with cous cous, rice or whatever you like!

2 tablespoons macadamia nut oil
2 teaspoons minced garlic
4 cups chicken stock
3 (10 ounce) packages whole frozen spinach, thawed
1 1/2 cups coconut milk

Steps:

  • Cut chicken into 1 inch cubes. Heat oil in a large skillet and saute chicken and garlic until light brown. Add stock, cover and simmer for 10 mins or until tender. Drain spinach and stir spinach and coconut milk into skillet.
  • Simmer for 5 minutes and serve.

2 pounds boneless skinless chicken breasts (diced)
Salt and Pepper to taste
2 cups diced bell peppers (red, orange, yellow mix)
1 fresh pineapple (diced)
3 cups Cooked white rice
1 Tbs olive oil
3 Tbs Soy Sauce
3 Tbs dark brown sugar
2 Tbs rice vinegar
½ tsp ground ginger
1 Tbsp minced garlic
1/2 cup barbecue sauce
½ cup pineapple juice

Steps:

  • Heat olive oil in a large skillet over medium-high heat.
  • Season chicken with salt and pepper then add to the skillet.
  • Sear outside until a nice golden crust forms.
  • Remove chicken from pan, add in peppers and saute for 3-5 minutes until tender, remove from pan
  • Add sauce ingredients to pan, and bring to a simmer, add chicken back in, and cook on medium-low heat, letting sauce reduce while chicken cooks through.
  • Add peppers and pineapple to pan, and cook a few minutes more, until sauce is thick, sticky, and glossy, and peppers are tender
  • Serve over cooked white rice.

½ cup brown sugar
¼ cup sweet paprika
2 Tbsp smoked paprika
1 Tbsp black pepper
1 Tbsp chili powder
1 Tbsp granulated garlic
1 Tbsp onion powder
1 Tbsp kosher salt
2 tsp ground cumin
1 cup pineapple juice, divided
½ cup brown sugar, packed
¼ cup ketchup
¼ cup soy sauce
¼ cup chicken broth
1 tsp ginger paste
1 tsp minced garlic
½ cup King's Hawaiian Big Island Lava Sauce
3-4 lbs (1.3-1.8 kg) boneless, skinless chicken breast

Steps:

  • To make the dry seasoning place all of the ingredients into a bowl and stir until well combined. Transfer to an airtight container and store in a cool, dry place.
  • Place your chicken in a large casserole dish and sprinkle with some of the dry seasoning - you can use as much or as little as you like. Make sure to flip the chicken over to coat both sides.
  • Pour a half-cup of pineapple juice over the chicken then cover and refrigerate for 30 minutes or in the fridge overnight if possible.
  • To make the sauce place the other half-cup of pineapple juice, brown sugar, ketchup, soy sauce, chicken broth, ginger, and garlic. and whisk together. Stir in the Lava BBQ Sauce. Divide into two lidded containers and keep in the refrigerator until needed. Use one of the sauces to baste during cooking, and the other to coat after cooking. This is to avoid cross-contamination.
  • When ready to cook, drain the chicken and discard the marinade.
  • Grill the chicken over medium heat for 12-14 minutes on each side or until cooked through, the juices run clear, and there is no pink in the middle. Cook for longer if required.
  • Baste the chicken occasionally with the sauce every 4 minutes.
  • Baste the chicken once removed from the heat before serving.

  • Cut three bacon strips in half; cook until partially cooked but not crisp. Drain on paper towels., Season chicken with salt and pepper; place in a 3-qt. slow cooker. Top each thigh with a half piece of bacon. Top with onion, pineapple and barbecue sauce., Cover and cook on low for 4-5 hours or until chicken is tender. Cook remaining bacon until crisp; drain and crumble. Sprinkle over each serving.

2 tablespoons peanut oil (or substitute sesame or macadamia oil)
2 teaspoons minced garlic
4 cups chicken stock
3 (10 ounce) boxes spinach, thawed (frozen whole-leaf spinach)
1 1/2 cups coconut milk
4 cups cooked rice

Steps:

  • Remove bones and skin from chicken breasts and cut meat into 1 inch cubes.
  • Heat oil and saute chicken until lightly browned; add garlic and saute one minute.
  • Pour chicken stock over the browned meat and garlic, and simmer 10 minutes or until chicken is tender.
  • Drain the thawed spinach, then stir spinach and coconut milk into the chicken mixture. Simmer five minutes.
