We were very excited to kick off season 14 of Cooking Hawaiian Style with the multi-talented singer songwriter Kuana Torres. We had Kuana in our kitchen 7 seasons ago and thought it was about time to bring him back. His mana'o on Hawaiian culture and cuisine makes for an extra special episode. In addition to singing, Kuana spends much of his time online these days conducting hula work shops and lei making classes, this pandemic has not slowed him down one bit. Kuanaʻs Chicken Lūʻau recipe is definitely worth a try.

Steps:
- Boil leaf down until soft (4 to 5 hrs).
- Remove from pot and into strainer. Drain well.
- In a separate pot, boil chicken for 30 to 35 minutes or until soft.
- Remove from pot, cool, shred and set aside.
- Heat stove to medium/low setting and add lūʻau leaf back into pot.
- Stir in coconut milk.
- Keep a constant stir so that burning does not occur (20 minutes).
- Add shredded chicken and stir (5 minutes).
- Turn stove off.
- Add salt to taste. Finished

- Set Oven to 180 C / 350 F / Gas 4
- Wash and prepare the chicken in a suitable oven proof dish. Allow enough space for the chicken to sit separate and also to hold the sauce. Pour over the pineapple juice. Add salt and pepper to the chicken if you wish.
- In a jug, add the stock cube to the hot water to dissolve it, then in a bowl, add the flour and enough cold water to make it into a paste. Once done, add the remaining ingredients for the sauce and stir to avoid any lumps. Add this to the jug of hot water & dissolved stock cube.
- Pour the sauce all over the chicken and then arrange the pineapple rings how you like.
- Place in the oven for 60 minutes. Halfway through cook time, you may want to move the pineapple rings a little so the skin underneath browns evenly. The chicken will look like it is burnt, but in fact it is the sugars & pineapple caramelising, so please don't worry!
- Serve with cous cous, rice or whatever you like!

- Season chicken with salt and pepper then add to the skillet.
- Sear outside until a nice golden crust forms.
- Remove chicken from pan, add in peppers and saute for 3-5 minutes until tender, remove from pan

- To make the dry seasoning place all of the ingredients into a bowl and stir until well combined. Transfer to an airtight container and store in a cool, dry place.
- Place your chicken in a large casserole dish and sprinkle with some of the dry seasoning - you can use as much or as little as you like. Make sure to flip the chicken over to coat both sides.
- Pour a half-cup of pineapple juice over the chicken then cover and refrigerate for 30 minutes or in the fridge overnight if possible.
- To make the sauce place the other half-cup of pineapple juice, brown sugar, ketchup, soy sauce, chicken broth, ginger, and garlic. and whisk together. Stir in the Lava BBQ Sauce. Divide into two lidded containers and keep in the refrigerator until needed. Use one of the sauces to baste during cooking, and the other to coat after cooking. This is to avoid cross-contamination.
- When ready to cook, drain the chicken and discard the marinade.
- Grill the chicken over medium heat for 12-14 minutes on each side or until cooked through, the juices run clear, and there is no pink in the middle. Cook for longer if required.
- Baste the chicken occasionally with the sauce every 4 minutes.
- Baste the chicken once removed from the heat before serving.

- In a mixing bowl whisk together ketchup, brown sugar, soy sauce, pineapple juice, 2 Tbsp olive oil, rice vinegar, garlic, ginger and sesame oil. Stir in 3/4 tsp pepper and season with salt if desired.

- Brush grill grates with olive oil then place skewers on grill. Grill 5 minutes then brush along tops with 1/4 cup of remaining marinade. Rotate to opposite side and brush remaining 1/4 cup of marinade on opposite side.
