GOODIE GOODIE ICE CREAM
This a local favorite, kind of between a rich ice cream and a sorbet. I haven't tried this recipe but I have had the ice cream at one of our local whole-in-the-walls before they closed up. This particular recipe comes from the Island Style Cook Book put out by the Friends of A. Kobayashi. Time does not include second freezing time.

Steps:
- Mix all ingredients with whisk and blend well.
- Pour in a deep plastic container with cover.
- Freeze for 5 hours.
- Mix again with fork.
- Re-freeze.

- Combine the rice and water in a saucepan and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and water is absorbed.
- Meanwhile, heat a non-stick skillet over medium heat until hot. Fry Spam™ slices until browned. Remove from the skillet, and set aside. Pour the eggs into the skillet; cook and stir until scrambled and cooked through. Set aside.
- For each plate, place two scoops of rice, two scrambled eggs, and two slices of spam. Top with brown gravy.

- Preheat oven to 350 degrees F (175 degrees C). Grease and line with parchment paper one 10 inch tube pan.
- Cream butter or margarine, sugar, and eggs together; add salt, baking soda, crushed pineapple, and pineapple juice. Add coconut, walnuts, and vanilla. Mix in the graham cracker crumbs. Pour batter into the prepared pan.

- Drain pineapple in a fine-mesh colander. Reserve 1 cup of the syrup and refrigerate until use.
- Place pineapple, heavy whipping cream, and 1/2 cup of brown sugar in a blender or food processor; blend until smooth, about 20 seconds. Transfer to an airtight container and refrigerate for 2 hours.
- Place cubed luncheon meat in a large skillet over medium-high heat and cook for 10 minutes. Flip with a spatula every 2 minutes so all sides brown nicely. Add reserved pineapple syrup and 2 tablespoons brown sugar to the skillet; continue cooking until thick and bubbly, about 5 minutes. Remove from heat and let cool.
- While the meat caramel is cooling, pour cold pineapple mixture into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Add dragon fruit in the last 5 minutes of churning.
- Pour the ice cream into an airtight, freezer-safe bowl. Fold in the meat caramel. Freeze until firm, about 4 hours.
