AVOCADO OMELET
I got this from an old friend. It is easy and quite good. Just make the omelet as you would normally with the diced avocado in the middle when you fold the omelet. Then pour the sauce over it. YUM! I added shredded pepper jack cheese like you would in a normal omelet. You could also use plain cheddar.

Steps:
- In med. skillet cook onions, tomatoes, salt, pepper and chili powder in butter. Simmer several minutes or until onions are soft.
- Remove from heat.
- While onions are simmering, peel avocados and reserve a few slices for garnish.
- Mash remaining avocados and add to the onion mixture. Simmer a few minutes to unite flavors.
- Serve the sauce in a small pitcher or gravy boat so that your guests & family can "pour it on.".
- Make the omelet from the omelet ingredients as you would a normal omelet with the diced avocado in the middle, and the cheese. Pour the sauce over the cooked omelet and enjoy. YUM!

Steps:
- Saute mushroom about 5 minutes, till cooked. Place in small bowl.
- Beat eggs with fork until light and lemon colored.
- Stir in green onion, mushrooms, avocado and cheese.
- Add salt and pepper to taste.
- Pour egg mixture into oiled 12" skillet; cook until bottom of omelet is set, 3-5 minutes.
- Flip omelet over in pan; continue to cook until set.
- Cut into pie-shaped wedges and serve.

- In a large bowl, combine the first 11 ingredients. Add ham and sausage; mix well. Shape into two loaves. Place in ungreased 9-in. x 5-in. x 3-in. loaf pans. Bake one loaf at 350 degrees F for 1 hour.
- Meanwhile, combine glaze ingredients in a small saucepan. Bring to a boil; boil for 2 minutes. Remove loaf from the oven; drain. Baste with half of the glaze. Bake 30-40 minutes longer or until a meat thermometer reads 160 degrees F-170 degrees F, basting occasionally.
- Cover and freeze remaining loaf and glaze for up to 2 months. To prepare, thaw in the refrigerator overnight and bake as directed.

BABY BACK BARBECUE RIBS
Easy and delicious, seasoned baby back ribs are sealed in foil and cooked until tender, then finished on the grill with barbecue sauce.

- Preheat grill to medium OR oven to 450 degrees F.
- Center half of ribs in single layer on each sheet of Reynolds Wrap® Heavy Duty Aluminum Foil. Combine brown sugar and seasonings; rub over ribs, turning to coat evenly.
- Bring up foil sides. Double fold top and one end to seal packet. Through open end, add 1/4 cup water or 3 to 4 ice cubes. Double fold remaining end, leaving room for heat circulation inside. Repeat to make two packets.
- TO GRILL: Place rib packets in covered grill and grill 45 to 60 minutes. Remove foil; place ribs on grill
- Brush ribs with barbecue sauce. CONTINUE GRILLING 10 to 15 minutes, brushing with sauce and turning every 5 minutes.
- TO BAKE: Place rib packets on a cookie sheet and bake in oven 45to 60minutes. Remove foil; place ribs on broiler pan. BRUSH ribs with barbecue sauce. BROIL 4to 5inches from broiler, 10to 15minutes, brushing with sauce and turning every 5minutes.
