SAUSAGE HASHBROWN BREAKFAST CASSEROLE
Hash browns, sausage, eggs, and cheese. What's not to love? It can be made ahead of time and refrigerated until ready. Great to share at work, for an overnight guest, and Christmas morning!

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch dish with cooking spray.
- Cook sausage in a large skillet, stirring occasionally, until no longer pink, 6 to 8 minutes. Drain fat and transfer to a bowl.
- Cook and stir hash browns to the same skillet until lightly browned, about 8 minutes. Place hash browns in the baking dish; top with sausage, shredded Cheddar cheese, and green chile peppers.
- Whisk eggs, milk, salt, pepper, onion powder, and garlic powder in a bowl. Pour over hash brown mixture.
- Bake uncovered in the preheated oven until bubbly and the top is golden brown, 35 to 40 minutes.

- Preheat oven to 350 degrees.
- Melt butter and saute the onions and the hashbrowns for 7-10 minutes until soft.
- Cook sausage and drain.
- In a large bowl, mix the eggs, milk, salt, and pepper.
- In a greased baking dish, layer bread, hashbrowns & onions, sausage, and cheese.
- Pour egg mixture on top.
- Top with additional cheddar cheese and bake for 50-60 minutes until hot and bubbly.

- Preheat the oven to 350. Spray a 13x9 inch baking dish with nonstick cooking spray.
- In a large skillet, cook the sausage over medium heat, stirring frequently, until browned and crumbly, about 10 minutes, drain well on paper towels.
- Cut and discard the crusts from the bread. Cut the slices in half and arrange in a single layer in a prepared baking dish, cutting pieces to fit as necessary to cover the bottom of the dish. Sprinkle with the sausage and cheese.
- In a large bowl, whisk together the eggs, milk, mustard, seasoned salt, and pepper. Carefully pour the mixture over the cheese.
- Bake casserole until set and golden, about 40 minutes. Let stand for 10 minutes before serving.

- Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray.
- Melt the butter in a large frying pan.
- Add the onion and saute over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart.
- Saute until soft, about 5 minutes.
- In a second frying pan, saute the sausage, breaking apart large clumps. When the sausage is cooked through, remove it from pan.
- In a large mixing bowl, combine the milk, eggs, salt, pepper, nutmeg and mustard, briskly to blend.

- Fry the sausage until it is almost browned completely and drain on some paper towels. Mix the half-and-half, dry mustard, salt, pepper, hot sauce and eggs together. - Preheat oven to 450 °F.
- Gently press the drained hash browns between paper towels to dry them as best as possible. In a 9-inch pie plate, toss the hash browns with the melted butter into the plate. Press them into the bottom and up the sides to form a crust. Bake for 20 to 25 minutes until golden brown and starting to crisp.
- Meanwhile, in a large mixing bowl, combine the remaining ingredients. When the hash brown crust is ready pour the egg mixture over it and return to the oven.
- Lower the oven temperature to 350 °F and bake for about 30 minutes until the quiche is light golden brown on top and puffed.
