HUEVOS RANCHEROS VERDE

Huevos Rancheros Verde image

Provided by Food Network

Categories     main-dish

Time 14h40m

Yield 1 serving

Number Of Ingredients 16

5 pounds organic pinto beans
1 whole onion, quartered
1 1/2 tablespoons sea salt
10 pounds tomatillos
4 ounces extra-virgin olive oil
2 pounds sweet yellow onions, medium diced
1 ounce garlic, finely diced
3 pounds Roma tomatoes, chopped
1 1/2 pounds jalapenos, finely diced
1 pound salted butter, preferably Challenge
4 ounces fresh cilantro, finely chopped, plus additional for sprinkling
1 tablespoon coarse ground black pepper
2 corn tortillas
2 eggs, preferably cage-free
1/2 ounce crumbled Cotija
Serving suggestions: home fries or hash browns

Steps:

  • Rinse pinto beans well and remove any beans that don't appear fresh or cleaned. Soak the beans in hot water for at least 2 hours and up to 4 hours.
  • Place beans with their soaking liquid, quartered onion and 1/2 tablespoon sea salt in a stockpot. Bring to boil, then reduce heat and simmer, checking occasionally to make sure they are fully covered with water, until beans are soft, about 2 hours. Remove to hotel pans or wide, shallow containers and chill until fully cooled, then cover with plastic and chill overnight.
  • Preheat the oven to 350 degrees F.
  • Remove husks from tomatillos and rinse well, then pat dry. Put in a large stainless steel bowl and lightly coat with 2 ounces olive oil. Spread on a baking sheet and roast until skins appear blistered, about 30 minutes. Let cool completely in the refrigerator, then puree finely (but do not let the seeds break down) in a robot coupe or food processor.
  • Put remaining 2 ounces olive oil, diced onions and garlic in a stockpot and sautee until translucent, being sure not to let the garlic burn. Add tomatoes and jalapenos and cook, stirring occasionally, until cooked down somewhat. Add pureed tomatillos and 4 cups water and let cook until it starts to simmer. Add butter and cook, stirring, until it melts and is fully incorporated, about 10 minutes. Add cilantro, pepper and 1/2 tablespoon salt and turn off heat.
  • Reheat pinto beans in a stockpot, then lightly mash. Add remaining 1/2 tablespoon salt. Remove from heat.
  • Grill corn tortillas on a hot flat top or griddle until they start to mark. Cook eggs over medium and place on top of the grilled tortillas on a dinner plate. Scoop 4 ounces ranchero sauce over eggs. Serve with a 4-ounce portion pinto beans in a ramekin. Sprinkle Cotija on top and garnish ranchero with a pinch of cilantro. Serve with home fries or hash browns.

HASH BROWN HUEVOS RANCHEROS STACKS #SP5

Hash Brown Huevos Rancheros Stacks #SP5 image

Official Contest Entry: Simply Potatoes 5Fix. Southwest style hash brown potatoes are cooked in a waffle iron - giving them a nice brown, crisp crust. Then, they're topped with enchilada sauce, an oven poached egg, and fresh pico-de-gallo salsa. A south-of-the-border breakfast in a flash!

Provided by Donna K.

Categories     Potato

Time 40m

Yield 6 stacks, 6 serving(s)

Number Of Ingredients 5

1 (15 ounce) can mild enchilada sauce
1 (20 ounce) bag Simply Potatoes Southwest Style Hash Browns
2 tablespoons vegetable oil
6 large eggs
1 1/2 cups pico de gallo

Steps:

  • Preheat oven to 400 degrees.
  • Pour enchilada sauce into a blender. Remove 1/2 cup of the hash browns from bag and place in blender. Blend until very smooth, to thicken up the enchilada sauce. (The sauce will get warm from the heat of the blender.).
  • Heat a waffle iron to medium high heat. Brush both top and bottom of waffle iron with a little oil. Scoop a scant 1/2 cup of hash browns, and place in waffle iron. Repeat 5 times, making sure the potatoes are in separate areas. (You may need to cook in batches, depending on the size of your waffle iron.) Close the waffle iron and cook until the hash brown discs are browned and cooked through. Repeat until you have 6 hash brown discs.
  • While potatoes are cooking, break the eggs into six muffin tins that have been filled halfway with hot water. (The water is not an ingredient, just a way of cooking the eggs.) Bake for 6 minutes for eggs that have a runny yolk, longer if you desire more cooked yolks.
  • To assemble, place a hot hash brown disc on a serving plate. Top with a generous spoonful of enchilada sauce. Top with a poached egg. Sprinkle with 1.4 cup of pico-de-gallo fresh salsa.

  • Place the potatoes in a microwave safe container and microwave for 4-6 minutes, turning halfway through, until they're just slightly softened. Slice the potatoes into bite sized pieces.Careful, they might be hot!
  • Heat a large cast iron skillet over medium heat. Melt the butter in the skillet then place the potatoes cut side down in a single layer on top of the butter. (Note: Depending on the size of your skillet, you may need to do this in two batches. The potatoes won't get crispy if they're piled on top of each other.) Cook the potatoes undisturbed for about 4 minutes then flip, exposing the other cut side to the butter. Season with half of the seasonings and cook another 3-4 minutes or until both sides are evenly browned. Finally, flip the potatoes so the skin side is down. Season with remaining seasonings and cook another 3-4 minutes or until potatoes are crisped and cooked through. Remove from heat.

  • 1. __Make the salsa roja ranchera__. Roughly chop the onion, then cut the garlic cloves and serrano chiles in half. Place the tomatoes, onion, garlic, serranos, and water in a Dutch oven or other covered pot. Set the Dutch oven or covered pot over medium-low heat, and cook until all ingredients are slightly softened, about 20–25 minutes. (Alternatively, you could place all of the ingredients on a sheet tray, sprinkle them with water to allow them to steam, and cover them with aluminum foil. Roast in an oven that has been preheated to 275°F until cooked through, about 30 minutes.) Once the vegetables are cooked through, remove the Dutch oven or covered pot from the stove and allow to cool for 10 minutes. Once cooled, transfer all the ingredients to a blender, along with any accumulated juices. Add epazote and blend on high speed until smooth, 1–2 minutes. Season with salt and set aside.
  • 2. __Make the salsa verde ranchera__. Roughly chop the onion, then cut the garlic cloves and serrano chiles in half. Place the tomatillos, onion, garlic, serranos, and water in a Dutch oven or other covered pot. Set the Dutch oven or covered pot over medium-low heat, and cook until all ingredients are slightly softened, about 20–25 minutes. (You can also steam the vegetables as described above.) Once the vegetables are cooked through, remove the Dutch oven or covered pot from the stove and allow to cool for 10 minutes. Once cooled, transfer all the ingredients to a blender, along with any accumulated juices. Add cilantro and epazote and blend on high speed until smooth, 1–2 minutes. Season with salt and set aside.
  • 3. __Make the huevos rancheros__. In a large skillet, heat the grapeseed oil over medium heat. Working in batches to avoid overcrowding, add the tortillas and toast on both sides, flipping once, until slightly crispy but not hard, about 1 minute total. Using tongs, pick up the tortilla and allow any excess oil to drip off. Set aside on a paper towel-lined plate and repeat the process with the remaining tortillas. When all of the tortillas are toasted, spoon your desired amount of refried beans across the surface of each one.
  • 4. __Fry eggs sunny side up__. In a separate large skillet or nonstick pan, heat the olive oil over medium heat. Crack one egg at a time into a bowl, and then carefully pour the bowl’s contents into the hot pan. Fry until the whites are totally set but the egg yolks are still a little runny, about 1 minute. If necessary, use a spoon to baste the egg whites with the hot oil.
