- Preheat oven to 350°. In a large skillet, cook sausage over medium heat until no longer pink; drain on paper towels. In a large bowl, combine 1-3/4 cups cheese and the next 7 ingredients; fold in potatoes., Spread half into a greased shallow 3-qt. baking dish. Top with sausage and remaining potato mixture. Sprinkle with remaining cheese. Cover and bake at 350° for 45 minutes. Uncover; bake 10 minutes longer or until heated through.

I got this recipe from my mother-in-law after having it for breakfast at her house. I've never made it myself, but it was so delicious, I thought I'd share. I'm not sure if you can use another type of oil, so any reviews using a different oil would be appreciated.

Steps:
- Beat eggs and milk, set aside.
- In a large bowl, mix hashbrowns and oil.
- Press along the bottom and up the sides of a 9x13 baking dish.
- Bake at 475* for 15 minutes.
- Layer the sausage, cheese, and onions over the potatoes.
- Pour the egg/milk mixture evenly over the top.
- Turn oven down to 350* and bake for 30 minutes until firm.
SAUSAGE HASH BROWN BREAKFAST CASSEROLE

You can make it the night before and keep the sausage/hash brown mixture separate from the egg mixture, then pour it over top right before it goes into the oven. You might need to cook it a little longer if its cold from the fridge. This is also great if you add a little onion.

- Preheat oven to 350 degrees F (175 degrees C). Grease a half-casserole baking dish or deep-dish pie plate.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.

- Preheat oven to 350°F. Coat a 13- x 9-inch baking dish with cooking spray. Cook sage ground sausage and hot ground sausage in a large skillet over medium-high, stirring often, until they are crumbled and browned, about 10 minutes. Remove from heat; drain well on paper towels.

- 1. Preheat the oven to 350 degrees F. Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray. Melt the butter in a large frying pan. Add the onion, bell pepper and sauté over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart. Sauté until soft, about 5 minutes. In a second frying pan, sauté the sausage, breaking apart large clumps. When the sausage is cooked through, remove it from pan. In a large mixing bowl, combine the milk, eggs, salt, pepper, garlic, nutmeg and mustard, briskly to blend. To assemble, spread the onions, green pepper and hash browns evenly at the bottom of the greased dish..Add bread cubed if using. Distribute sausage as the third layer. Pour the milk and egg mixture over these layers. Add Parmesan as the next layer, while then adding the Cheddar. Let sit in refrigerator overnight. Bake the next morning before breakfast. Bake the casserole, uncovered for 45 to 50 minutes, until puffed and golden brown. - Set oven to 350 degrees F.
- Grease a 13 x 9-inch baking dish.
- In a skillet cook the bulk sausage meat until browned; set aside (if using ground beef cook beef for extra flavor brown with a chopped onion and 1-2 tablespoons fresh minced garlic).

- Preheat oven to 375F degrees.
- Spray 13 x 9 baking dish with nonstick cooking spray.
- In a sauté pan, cook onions and brown and crumble sausage.
- Drain any excess grease. If you'd like, you can just take crumbled sausage out of pan, leaving the grease, and then brown the hash browns a bit, this adds nice flavor to the casserole.
- In a medium bowl, whisk together eggs, milk, 1 cup of shredded cheese and salt and pepper.
- In a baking dish, spread hash browns into bottom of dish.
- Spread cooked sausage on top of hashbrowns.
- Next, pour egg mixture on top of that.
- Sprinkle the remaining cup of cheddar cheese on top.
- Cover with aluminum foil and bake for about 30 minutes.
- Take foil off and bake for additional 10 minutes. Just keep an eye on it to make sure the cheese doesn't brown up too much.
