1 medium onion, chopped
1 garlic clove, minced
1 can (14-1/2 ounces) diced tomatoes, drained
1 teaspoon chili powder
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups frozen mixed vegetables
TOPPING:
3 cups frozen shredded hash brown potatoes, thawed and drained
1 cup shredded cheddar cheese
1 large egg
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large skillet, cook beef, onion and garlic until beef is no longer pink; drain. Stir in tomatoes, chili powder, oregano, salt and pepper; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Stir in the vegetables. , Pour into a greased 9-in. pie plate. Combine topping ingredients; spoon evenly over the meat mixture. Bake, uncovered, at 400° for 30 minutes.

1 pound lean ground beef
1/2 red onion, chopped
3-4 garlic cloves, minced
2 tablespoons all-purpose flour
1 1/4 cups low sodium beef broth
3/4 cup sweet corn (fresh (or canned and drained))
1 green bell pepper, chopped
1 medium carrot (thinly sliced)
1 15 oz. can diced tomatoes, well drained
1 tablespoon tomato paste
1 tablespoon ketchup
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 tablespoon low sodium soy sauce
1 teaspoon salt
1/2 tsp EACH paprika, chili pwdr, dried parsley, dried oregano
1/4 teaspoon pepper
1/2 teaspoon hot sauce, more or less to taste
6 cups frozen hash browns
1 1/2 cups sharp cheddar, divided
1/2 cup freshly grated Parmesan cheese
1/2 cup sour cream
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Hash Brown Topping: Heat 2 tablespoons olive oil over medium heat in a large nonstick skillet. Add hash browns in a single layer and cook undisturbed for 5 minutes. Flip hash browns and cook another 5 minutes. (They will not be all the way cooked - just golden in some places.) Set aside to cool.
  • Meat and Vegetables: Brown beef and onions in a 12" oven proof skillet* over medium high heat until beef is cooked through. Drain off excess grease.
  • Add garlic and sauté 30 seconds. Sprinkle flour over meat and cook while stirring for 2 minutes. Add remaining Meat/Vegetable ingredients and simmer, stirring occasionally, over medium heat for 7-10 minutes or until thickened. Taste and add additional hot sauce if desired. Spread evenly in skillet.
  • Meanwhile, in a large bowl, mix 1/2 cup sharp cheddar cheese, Parmesan cheese, hash browns, sour cream, salt and pepper.
  • Spread hash brown topping evenly over meat mixture and sprinkle with remaining 1 cup sharp cheddar cheese. Bake at 400F degrees for 30 minutes or until hash brown are completely cooked then broil to desired hash brown crispiness.

Steps:

  • Press hash browns between paper towels to remove excess moisture. Press onto the bottom and up the sides of an ungreased 9-in. pie plate. Drizzle with butter. Bake at 425° for 25 minutes. , Combine the ham, cheese and green pepper; spoon over crust. In a small bowl, beat eggs, milk, salt and pepper. Pour over all. Reduce heat to 350°; bake for 25-30 minutes longer or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

8 ounces mushrooms (chopped)
1/2 cup onion (chopped)
2 large cloves garlic (pressed or finely minced)
2 teaspoons kosher salt, divided
Black pepper, to taste
1 tablespoon Worcestershire sauce
1 tablespoon all-purpose flour
1/2 cup beef broth
1/2 cup heavy cream
1/2 cup peas (frozen)
2 cups hash brown potatoes (frozen or deli-packed, shredded, packed)
1/8 cup chives (chopped)
2 cups finely shredded cheddar cheese, divided
1/4 cup mayonnaise
Sweet Hungarian​ paprika, for garnish

Steps:

  • Gather the ingredients. Preheat oven to 375 F.
  • Place ground beef, mushrooms, onion, garlic, 1 teaspoon salt, and pepper in a large heavy skillet.
  • Sauté, breaking up ground beef, until the juices have almost evaporated.
  • Stir in Worcestershire, then flour.
  • Cook 1 minute, stirring often.
  • Add beef broth, stirring to combine, then heavy cream.
  • Simmer until the gravy thickens.
  • Pour into a glass baking dish .
  • Let cool slightly, then sprinkle green peas evenly on top of beef.
  • In a mixing bowl, combine hash brown potatoes, chives, 1 cup of cheddar cheese, the remaining teaspoon of salt, and mayonnaise.
  • Spread evenly on top of the beef layer.
  • Spread the remaining cup of cheddar cheese on top and sprinkle lightly with paprika.
  • Bake for about 45 minutes until cheese has melted and is slightly browned.
  • Let rest 15 minutes before serving.

3 cups frozen hash brown potatoes
1/3 cup melted butter
1 cup cooked chopped ham
1 cup shredded cheddar cheese
1/4 chopped red bell pepper
1/4 cup green onions chopped
1 jalapeno chili, finely chopped

1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • 1. Preheat the oven to 425 degrees. Put the hash brown potatoes on the bottom and up the sides of an ungreased 9 inch pie plate. Drizzle the melted butter over the potatoes and pat into place to form crust. Place the dish in the microwave for 2 minutes on high. Remove the dish and bake at 425 degrees for 25 minutes.
  • 2. Reduce oven temperature to 350 degrees. Layer the chopped ham, shredded cheese, red bell pepper, onion and jalapeno over the baked crust.

1/2 small yellow onion
2 russet potatoes (about 1 pound), peeled
Kosher salt and freshly ground black pepper
1/4 cup clarified butter
1/2 cup creme fraiche or sour cream
1/4 cup fresh chives, chopped
3 tablespoons buttermilk
1 tablespoon caper juice
1 teaspoon honey
Zest of 1 lemon
8 to 10 slices smoked salmon or gravlax
1/4 cup fresh dill fronds

Steps:

  • Preheat the oven to 400 degrees F.
  • Line a colander or strainer with a clean kitchen towel or cheesecloth and place over a large bowl.
  • On the large holes of a box grater, grate the onion and potatoes into the lined strainer. Wrap the kitchen towel around the grated potatoes and onions and squeeze out as much water as possible. Discard the water. Open the towel and spread out the potatoes and onion. Sprinkle generously with salt and pepper.
  • In a 10-inch oven-safe nonstick saute pan set over medium heat, melt the clarified butter. Press the potato and onion mixture into the pan, so that the layer is about 1/2-inch thick. Cook until the bottom is brown and crispy, about 5 minutes. Carefully and gently flip the hash brown onto the other side and cook for an additional 5 minutes. For an extra-crispy hash brown, transfer the pan to the oven for 8 to 10 minutes.
  • In a medium bowl, mix the creme fraiche, chives, buttermilk, caper juice, honey and lemon zest. Set aside.
  • Transfer the hash brown to a plate. Top the hash brown with slices of the smoked salmon. Cut into wedges. Drizzle the sauce over the hash browns. Top with the dill fronds. Serve immediately.

1 pound potatoes
1 large yellow onion
1 tbsp salt
1/2 teaspoon ground pepper
10.5 ounces flour
9 ounces lukewarm water
2 tbsp butter
3 garlic cloves
10 ounces sour cream

Steps:

  • Preheat oven to 480F. Oil the pan (a 20 inch diameter was used for this recipe). Leave in the oven to warm up.
  • Peel onions and potatoes, then grate together. Squeeze the mixture in batches to release as much starch as possible. Add salt, pepper, flour and water. Stir vigorously until integrated. Transfer to the hot pan and even out on all sides.
  • Bake for 30-35 minutes, turning the pan around every 15 minutes.
  • Take the pie out and spread melted butter over it. Leave to cool for a few minutes. Meanwhile, mix sour cream and garlic until smooth.
  • Break the pie apart into smaller pieces, and layer into a serving bowl. Top with sour cream and garlic.
