1 cup grated cheddar cheese (divided)
1 tsp kosher sea salt
1/2 tsp ground black pepper
1/4 tsp paprika
pinch cayenne pepper
8 large eggs
2 tbsp milk (OR half and half)
4 slices cooked bacon (crumbled)
fresh parsley (chopped, optional garnish)

Steps:

  • Preheat oven to 450 degrees. Generously spray a standard size muffin tin pan with baking spray, set aside.
  • In a large mixing bowl, combine the hash browns, 1/2 cup cheese, salt, pepper, paprika, and cayenne. Press the mixture into the bottom, creating a nest.
  • Place in oven and bake for 20 minutes. Reduce heat to 350 degrees.
  • In a medium mixing bowl whisk together the remaining 1/2 cup of cheese, eggs, milk, and bacon. Pour into the baked hash browns, then return to the oven to bake for 12-15 minutes or until fully set.
  • Remove from the oven and allow to cool in the tins for 5 minutes before removing.
  • Garnish with a pinch of salt and pepper, and freshly chopped parsley, if desired. Serve immediately.

¼ cup butter or margarine
¼ teaspoon salt
½ pound ground Italian sausage
½ cup finely chopped mushrooms
½ cup finely chopped red bell pepper
2 cups AllWhites® egg whites
½ teaspoon dried Italian seasoning
½ cup Crystal Farms® Finely Shredded Cheddar Cheese

Steps:

  • Heat oven to 400 degrees F. Grease 12-cup regular muffin cup pan; set aside. In medium bowl combine hash browns, melted butter and salt; mix well. Press about 1/4 cup hash brown mixture into each muffin cup lining bottom and sides. Bake for 12 to 15 minutes or until edges are golden brown.
  • Meanwhile, brown Italian sausage in 10-inch skillet; drain fat. Add mushrooms and red bell pepper. Cook, stirring occasionally, until vegetables are tender. Fill each baked hash brown cup equally with sausage mixture.
  • In small bowl combine AllWhites and Italian seasoning; mix well. Pour AllWhites over sausage mixture filling each muffin cup equally. Sprinkle with cheese. Bake for 12 to 14 minutes or until toothpick inserted in center of cup comes out clean.

1 (20-ounce) package refrigerated hash brown potatoes
4 large eggs
2 tablespoons milk
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
Kosher salt and freshly ground black pepper, to taste
2 slices bacon, diced
8 ounces cremini mushrooms, thinly sliced
1 bell pepper, diced
1 cup chopped baby spinach
1/2 cup shredded Monterey Jack cheese, divided

Steps:

  • Preheat oven to 375 degrees F. Lightly coat a 12-cup muffin tin with nonstick spray. Divide potatoes into each of the 12 muffin tins, pressing carefully to make sure there is an opening in the center. Place into oven and bake for 22-25 minutes, or until golden brown; set aside. In a medium bowl, whisk together eggs, milk, Worcestershire and hot sauce; season with salt and pepper, to taste. Set aside. Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate; drain excess fat, reserving 1 tablespoon in the skillet. Add mushrooms and bell pepper to the skillet. Cook, stirring occasionally, until tender, about 4-5 minutes. Stir in egg mixture until the eggs are completely set, about 3-4 minutes. Stir in spinach, 1/4 cup cheese and bacon until the spinach has wilted, about 2 minutes. Spoon egg mixture into the muffin tins and sprinkle with remaining 1/4 cup cheese. Place into oven and bake for 3-4 minutes, or until the cheese has melted. Serve immediately.

yellow onion, halved, diced small
1 ½ teaspoons McCormick® Paprika
1 teaspoon salt
½ teaspoon McCormick® black pepper
3 cups potato, frozen, shredded
2 large handfuls fresh spinach
2 eggs, poached
fresh chive, for garnish
3 large egg yolks
lemon, juiced
½ cup butter, melted
½ teaspoon salt

Steps:

  • Heat 1 tablespoon olive oil in a skillet over medium-low heat. When the oil is hot, add the diced onion, McCormick paprika, salt, and pepper. Cook onions, stirring occasionally, until softened, about 5 minutes. Add in frozen shredded potatoes and the remaining tablespoon of olive oil. Cook, stirring occasionally, until potatoes start to turn golden and crisp up a bit.
  • Within the skillet, divide the potatoes into two piles and place a large, circular cookie cutter ring around each pile. Scoop any potatoes that are outside of the cookie cutters into the center of the rings. Use a spatula to pat down the piles inside the rings to form patties. Turn heat down to low and cook until bottom of hash browns are crispy. Use tongs to remove cookie cutter rings and carefully flip the hash browns to crisp up the other side. Once crispy, remove from the pan.
  • In the same pan, add the baby spinach and wilt down over low heat. Remove spinach from the pan.
  • Hollandaise: Place egg yolks and lemon juice in a blender. Blend for 10 seconds, then slowly stream in the hot, melted butter (while blender is still running). Sauce will thicken by the time all of the butter has been added. Blend in salt.
  • Assembly: Place a hash brown on each plate. Top with spinach, then a poached egg. Spoon hollandaise over the eggs. Garnish with chives.
  • Enjoy!

They are delicious, easy to make, and can be customized to your own tastes. I not only use the recipe as a delicious grab-and-go breakfast, but serve it to guests nestled into some lovely cheese grits, alongside fresh fruits and French toast made on a panini press. Oh, and don't forget the mimosas!
