1/2 cup butter or 1/2 cup chicken fat
1/2 cup flour
3 cups whole milk
1 cup chicken stock

Steps:

  • In a 2-qt saucepan make a roux using the butter and flour and bring to a light brown color.
  • Meanwhile in another pan combine the milk and stock and heat to just boiling.
  • Pour the milk mixture slowly into the roux whisking constantly to prevent lumps.
  • Cook over low heat for 30 min.

2 garlic heads
6 anchovies
2 cups vinegar
3 tablespoons soy sauce
2 teaspoons mushroom base dissolved in
2 tablespoons water
1 tablespoon cayenne pepper
4 drops red food coloring (optional)

Steps:

  • Break the garlic head into cloves. Place the anchovies, vinegar and garlic in a blender and blend until the anchovies are more or less dissolved. Add the soy sauce, mushroom base mixture, cayenne and food coloring and process until smooth. Place in a jar. Cover tightly. Let the ingredients infuse for 2 weeks, shaking once a day, then strain and store in a tightly sealed container. This recipe yields 3 cups. Each tablespoon: 5 calories; 81 mg sodium; 0 cholesterol; 0 fat; 0 saturated fat; 1 gram carbohydrate; 0 protein; 0.05 gram fiber. Jars of mushroom base can be found in the soup aisle of well-stocked supermarkets.
