HARVEST SALMON CHOWDER
Hmmm... canned salmon seems to be a theme here. Love the stuff. Commercially canned or home canned, the stuff is just great. So much tastier than canned tuna. Anyway, this recipe was just sent to me from The Farmer's Almanac - gotta stash & save to make sometime soon 'cause it's got all the right stuff.

Steps:
- In a large saucepan or stockpot, melt the butter over medium-high heat.
- Add the onion, celery, green pepper, and garlic and saute until translucent, about 5 minutes.
- Add the potatoes, carrots, broth, salt, pepper, and dill seed. Cover and simmer for 20 minutes.
- Add the zucchini and yellow squash and simmer for 5 minutes.
- Flake the salmon and add to the pot along with its liquid, the milk, and the corn.
- Heat to boil through before serving.

- Melt butter in a large pot over medium heat.
- Saute onion, celery, and garlic powder until onions are tender.
- Stir in potatoes, carrots, broth, salt, pepper, and dill.
- Bring to a boil and reduce heat.

- Stir in salmon, evaporated milk, corn, and cheese.
- Cook on low heat until heated through and cheese melts.

- In a saucepan, cook onion, celery, green pepper and garlic in 1/4 cup broth until tender.
- Add potatoes, carrots, seasoned salt if desired, dill and remaining broth.
- Cover and simmer for 20 minutes or until vegetables are tender.
- Add zucchini; simmer for 5 minutes.
- Add corn, milk and salmon; heat through.

- In a large saucepan, saute celery, onion, green pepper and garlic in butter until the vegetables are tender. Add broth, potatoes, carrots, salt, pepper and dill; bring to a boil. , Reduce heat; cover and simmer for 40 minutes or until the vegetables are nearly tender. Stir in the corn, cream and salmon. Simmer for 15 minutes or until heated through. If desired, garnish with bacon, chives and cracked black pepper.

On a quest to work more salmon into our diets, and to look for good winter recipes, I put this down - and IT IS FANTASTIC. I agree with the reviewer who also called it a budget stretcher - it is that, too. We are all about this salmon chowder now.

Steps:
- Heat canola oil and butter in dutch oven over medium heat.
- Add onion, celery, and bell pepper, and cook until wilted.
- Add garlic and cook 1 minute.
- Stir in flour and cook 3 minutes.
- Stir in broth, potato, carrot, dill, salt, milk, and corn; bring to boil.
- Reduce heat, cover, and simmer 30 minutes.
- Saute' salmon in olive oil until seared both sides.
- Flake salmon and add to the soup. Continue to cook over low heat for 30 mintues longer.
- Adjust seasoning to taste, serve.
