4 carrots (about 3/4 pound), peeled, halved lengthwise and crosswise, thick pieces halved again
2 sweet potatoes (about 1 pound total), peeled and cut into 3-by-1/2-inch pieces
1 butternut squash (about 2 pounds), peeled, seeded, and cut into 3-by-1/2-inch pieces
8 garlic cloves, unpeeled
2 tablespoons olive oil
Coarse salt and ground pepper

Steps:

  • Preheat oven to 450 degrees. Divide carrots, sweet potatoes, squash, and garlic between two rimmed baking sheets. Toss each batch with 1 tablespoon oil, and season with salt and pepper.
  • Roast until vegetables are tender and starting to brown, 25 to 35 minutes, rotating sheets from top to bottom halfway through. Peel roasted garlic, return to vegetables, and serve.

1/2 lb (2-1/2 cups) Brussels sprouts (trimmed and halved)
1 medium carrot (peeled and sliced into 1/2" thick rounds)
1 medium sweet potato (peeled and cut into cubes)
1/2 lb (2-1/2 cups) baby potatoes (halved)
4 Tablespoons olive oil (or more as needed)
1 teaspoons sea salt (or to taste)
1/2 teaspoon black pepper (or to taste)
1 teaspoons Italian seasoning
1 teaspoons garlic powder (or 3-4 cloves fresh garlic, minced)
1/4 cup Panko crumbs
1/4 cup finely grated Parmesan cheese
Broccoli, Cauliflower, Rutabaga, Butternut Squash can be be swapped in or added in addition to the other vegetables.

Steps:

  • Preheat oven to 425 F. Lightly grease or line a large rimmed baking sheet (13x18 or a 10x15) with parchment paper, set aside
  • Combine all the ingredients to a large mixing bowl. Toss to coat well.
  • Spread the vegetables evenly in a single layer over a prepared baking sheet, arranging the Brussels sprouts cut-side down. (do not overcrowd - use two baking sheets as needed)
  • Roast in preheated oven for 25 to 35 minutes (stirring half-way through) or until vegetables are tender and lightly browned. If you like them slightly charred, you can leave them in longer.
  • Remove from oven and transfer to serving dish.

An easy recipe for Harvest Roasted Vegetables with butternut squash, Brussels sprouts, cranberries, bacon, and walnuts. Your new favorite fall side dish!

8 ounces bacon ((see note 1))
1 pound Brussels sprouts (halved)
1 pound butternut squash (peeled, seeded, and diced (see note 2))
1 cup fresh cranberries
1 large sprig fresh rosemary (leaves removed and chopped (see note 3))
1/4 cup walnuts (toasted if desired and chopped (see note 4))
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with parchment or foil for easy clean up.
  • In a large skillet over medium-high heat, cook bacon until crispy. Remove bacon from skillet, chop, and set aside. Reserve 1/4 cup rendered bacon fat and discard the rest (or add olive oil to reach 1/4 cup fat).
  • In a large bowl, add Brussels sprouts, squash, cranberries, and rosemary. Drizzle with bacon fat and toss to coat. Spread evenly in a single layer on prepared baking sheet, arranging the sprouts cut-side down as much as possible.
  • Bake until vegetables begin to brown and are tender, about 40 to 45 minutes. Remove from oven and transfer to serving dish. Add chopped bacon, walnuts, and salt and pepper to taste and toss to combine.

Hearty and flavorful harvest bowls with roasted vegetables, quinoa, and a creamy, 3-ingredient tahini dressing! A healthy, plant-based, gluten-free meal!

4 medium whole carrots ((peeled and quartered // large pieces halved))
1 1/2 cups quartered baby yellow potatoes
2 Tbsp maple syrup ((divided))
2 Tbsp olive oil ((divided))
1 healthy pinch each sea salt + black pepper
1 Tbsp chopped fresh rosemary ((or dried))
2 cups halved Brussels sprouts
1 cup white quinoa (well rinsed + drained)
1 3/4 cups water
1 pinch sea salt
1/2 cup tahini
1 medium lemon, juiced ((yields ~3 Tbsp or 45 ml as original recipe is written))
2-3 Tbsp maple syrup
Fresh herbs (parsley, thyme, etc.)
Pomegranate arils

Steps:

  • Preheat oven to 400 degrees F (204 C) and line a baking sheet with parchment paper (or more baking sheets if increasing batch size).
  • Add the carrots and potatoes to the sheet and drizzle with half of the maple syrup, half of the olive oil, the salt, pepper, and rosemary (as original recipe is written, 1 Tbsp maple syrup and 1 Tbsp olive oil // adjust if altering batch size). Toss to combine. Then bake for 12 minutes.
  • In the meantime, heat a saucepan over medium-high heat. Once hot, add rinsed quinoa to lightly sautée before adding water to evaporate leftover moisture and bring out a nutty flavor.
  • Cook for 2-3 minutes, stirring frequently. Then add water and a pinch of salt. Bring to a low boil over medium-high heat. Then reduce heat to a simmer and cover. Cook for 18-22 minutes or until liquid is absorbed and quinoa is fluffy. Then open lid and fluff the quinoa with a fork. Tilt the lid, remove from the heat, and set aside.
  • When the veggies are at the 12-minute mark, remove pan from the oven and add the Brussels sprouts. Top with remaining 1 Tbsp olive oil, 1 Tbsp maple syrup, and another pinch each salt and pepper (amounts as original recipe is written // adjust if altering batch size). Loosely toss to combine.
  • Return pan to oven and roast for 10-12 minutes more or until Brussels sprouts are golden brown and the carrots and potatoes are fork tender. (This ensures that the potatoes and carrots are cooked through and the Brussels don't get too soft.)
  • Lastly, prepare dressing by adding tahini, lemon juice, and maple syrup to a small mixing bowl and whisking to combine. Add 2 Tbsp (30 ml) warm water at a time and whisk until thick but pourable. Taste and adjust flavor as needed, adding more maple syrup for sweetness or lemon juice for acidity.
  • To serve, divide quinoa and vegetables between serving bowls and top with a generous drizzle of tahini sauce. Top with garnish of choice, such as pomegranate arils or fresh herbs.

24 oz. cremini mushrooms, cut into halves (divided)

1 3-inch cinnamon stick
4 dried bay leaves
3 tablespoons oat flour or whole wheat flour
3 tablespoons tomato paste
¼ cup reduced-sodium tamari or soy sauce
¼ cup lemon juice
¼ cup finely chopped fresh parsley, divided
2½ tablespoons finely chopped fresh thyme leaves
2½ tablespoons finely chopped fresh sage leaves
2 tablespoons pine nuts
2 tablespoons dried cranberries, chopped

Steps:

  • In a 13x9-inch casserole dish, spread lentils out in an even layer. Set aside.
  • In a sauté pan, bring 1 cup of the broth to boiling; add cauliflower, squash, and carrots. Cover and steam over medium-high 10 minutes, until vegetables are almost cooked. Using a slotted spoon, transfer the vegetables to the casserole dish, leaving the liquid in the sauté pan. Spread vegetables over lentils. Top with pearl onions and half of the mushrooms.
  • Preheat oven to 500°F. Roast casserole for 30 minutes, or until vegetables are browned on top.
  • For gravy, to the sauté pan add the remaining mushrooms, the diced onion, garlic, cinnamon stick, bay leaves, and ½ cup of the broth. Cook 10 minutes over medium, until onion is tender.
  • Discard cinnamon stick and bay leaves. Transfer sautéed mushroom mixture to a blender; add the remaining broth, the flour, tomato paste, tamari, and lemon juice. Blend into a smooth sauce. Return sauce to sauté pan. Stir in fresh herbs, reserving some parsley for garnish. Cover and cook over medium-low 20 minutes, stirring occasionally.
  • Remove casserole from oven. Pour hot gravy over the top; garnish with pine nuts, reserved parsley, and the cranberries. Serve right away.

FALL HARVEST SHEET PAN ROASTED VEGETABLES — TRISH MAGWOOD
2021-10-14 Use whatever fall vegetables you have on hand. Add parsnips or whatever vegetables arrive in your weekly produce box. Preheat oven to 400. In a large pot, bring water to boil, boil beets 20-30 minutes or until tender to the squeeze. When cool enough to handle, peel and cut into large bite-size pieces. (you may want to use kitchen gloves) Reserve.
