8 Tablespoons Unsalted Butter ( (softened))
2 Eggs ((large))
1 1/2 Cups Pumpkin Puree ((not pumpkin pie mix))
2 Cups Flour ((all purpose flour))
1/2 Cup White Granulated Sugar
1/2 Cup Brown Sugar ((packed))
1 Teaspoon Vanilla Extract
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder ((aluminum free))
1/2 Teaspoon Salt
1/2 Teaspoon Cinnamon
1 Cup Semi-Sweet Chocolate Chips

Steps:

  • Preheat oven to 325 degrees F.
  • Soften butter in a microwave.
  • Stir eggs, pumpkin puree and butter together.
  • Mix in remaining ingredients (except the chocolate chips). Stir until the batter is fully mixed.
  • Add the chocolate chips after the batter has been completely mixed. Make sure the chocolate chips are evenly spread throughout the batter.
  • Grease bread pan (if necessary).
  • Pour finished batter into a nonstick bread pan. Smooth out the top of the batter within the bread pan.
  • Bake in the oven for 70 minutes.
  • Take out of oven and let the pumpkin bread cool down in the bread pan for 10 minutes. Do not remove the pumpkin bread from the bread pan during this 10 minute cool down period. Use oven mitts as the bread pan will be very hot coming out of the oven.
  • After 10 minutes, remove the pumpkin bread from the bread pan. Place the pumpkin bread on a cooling rack in order to completely cool. This cool down may take 1-2 hours. Gently slide a silicon spatula between the pumpkin bread and the bread pan walls if the bread is stuck in the pan.

1 cup vegetable oil
⅔ cup water
4 eggs

1 tablespoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 1 pound size coffee cans, or three 9x5 inch loaf pans.
  • In a large bowl, combine sugar, pumpkin, oil, water, and eggs. Beat until smooth. Blend in flour, cinnamon, nutmeg, baking soda, and salt. Fold in chocolate chips and nuts. Fill cans 1/2 to 3/4 full.

1 tsp baking powder
1 tsp baking soda
4 tsp pumpkin pie spice
2 cups canned pumpkin ((not pumpkin pie filling))
2/3 cup brown sugar
2/3 cup granulated sugar
1 cup applesauce OR canola oil
3 eggs (room temperature)
1 tbsp vanilla extract
1 1/2 cups semi sweet chocolate chips
1/2 cup mini semi sweet chocolate chips (reserve a couple tablespoons for the top of the bread if desired)

Steps:

  • Preheat oven to 350F. Grease two 8x4 in loaf pans and line with parchment paper. Set aside.
  • In a large bowl, whisk together flour, salt, baking powder, baking soda and pumpkin pie spice. Set aside.
  • In a medium bowl, whisk together pumpkin, brown sugar, granulated sugar, applesauce OR oil, eggs, and vanilla extract.
  • Stir wet ingredients into dry ingredients, mixing just until moistened and combined.
  • Fold in chocolate chips, reserving a small amount of mini chocolate chips for topping if desired.
  • Pour half of the batter into each of the prepared loaf pans and bake for 50 to 55 minutes or until an inserted toothpick comes out clean.
  • Cool for 10 minutes in the pan before removing to a wire rack to cool completely.

Steps:

  • In a large mixing bowl combine pumpkin, eggs, sugar, brown sugar, oil, sour cream, cinnamon, nutmeg, cloves, vanilla, orange juice and molasses.
  • Stir until well blended.
  • Add in baking soda, baking powder, salt, and flour.
  • Stir in just until combined. Then fold in all but 1/3 cup of chocolate chips.
  • Grease and flour 2 9 x 5 inch loaf pans.

3 cups whole wheat flour
2 cups quick-cooking oats
2/3 cup packed brown sugar
2 packages (1/4 ounce each) active dry yeast
2-1/2 teaspoons pumpkin pie spice
1-1/2 teaspoons salt
1 teaspoon sugar
4-1/2 to 5 cups bread flour
1-1/2 cups warm water (120° to 130°)
1 cup canned pumpkin
1/3 cup canola oil
1/3 cup unsweetened applesauce
2 large eggs
1/2 cup raisins
FILLING:
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 cup butter, softened

Steps:

  • In a large bowl, mix first 7 ingredients and 2 cups bread flour. In a small saucepan, heat water, pumpkin, oil and applesauce to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Add eggs; beat on high 2 minutes. Stir in raisins and enough remaining bread flour to form a firm dough., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover; let rise in a warm place until doubled, about 1 hour., Mix brown sugar and cinnamon. Punch down dough. Turn onto a lightly floured surface; divide in half. Roll each portion into an 18x9-in. rectangle. Spread each with 2 tablespoons butter to within 1/2 in. of edges and sprinkle with 1/4 cup brown sugar mixture. Roll up jelly-roll style, starting with a short side; pinch seam to seal. Place in greased 9x5-in. loaf pans, seam side down. Cover with kitchen towels; let rise in a warm place until doubled, about 30 minutes. Preheat oven to 350°., Bake until golden brown, 50-60 minutes. Cool 10 minutes before removing from pans to wire racks to cool.

A nice hearty and health loaf of bread. Unlike most pumpkin breads this one is yeast risen rather than a quick bread. Yeast breads require a bit of expierence in judgement as to proper amount of flour to add at the end, so yeast recipes are not easy for first time bakers. But expierience has to start some where and this one is not that difficult.

3 1/4-3 3/4 cups all-purpose flour
2 packages active dry yeast
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/8-1/4 teaspoon ground cloves
3/4 cup milk
1/4 cup packed brown sugar
2 tablespoons margarine or 2 tablespoons butter
1/2 teaspoon salt
1/2 cup canned pumpkin
3/4 cup walnuts or 3/4 cup pecans
3/4 cup chocolate chips
milk (for brushing on top)

Steps:

  • In a large mixing bowl stir together 1-1/2 cups of the flour, the yeast, ginger, nutmeg, and cloves; set aside.
  • In a 1-quart saucepan heat and stir milk, brown sugar, margarine or butter, and salt just until warm (120ºF to 130ºF) and margarine is almost melted.
  • Add to the flour mixture; add pumpkin.
  • Beat with an electric mixer on low speed for 30 seconds, scraping the sides of the bowl constantly.
  • Beat on high speed for 3 minutes.
  • Using a wooden spoon, stir in nuts, chocolate chips and as much of the remaining flour as you can while still keeping a pliable dough.
  • Turn dough out onto lightly floured surface.
  • Knead in enough of the remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total).
  • Shape into a ball.
  • Place in a lightly greased bowl; turn once to grease the surface.
  • Cover and let rise in warm place until double (30 to 45 minutes).
  • Punch dough down.
  • Turn out onto a lightly floured surface.
  • Cover and let rest for 10 minutes.
  • Lightly grease an 8x4x2-inch loaf pan.
  • Shape dough into a loaf; place in the prepared pan.
  • Cover and let rise until double (25 to 30 minutes).
  • Brush top with milk.
  • Bake in a 375ºF oven for 35 to 40 minutes or until loaf sounds hollow when tapped.
  • If necessary, cover with foil the last 10 to 15 minutes to prevent overbrowning.
  • Remove from pan.
  • Cool on a wire rack.
