KATHY'S SOUTHERN CORN PUDDING

This is a wonderful side dish that goes great with ham or pork. It's wonderful for that big crowd at Thanksgiving and Christmas, and very quick and easy to make.

Number Of Ingredients 8

3 eggs
½ cup melted margarine
½ cup white sugar
1 (16 ounce) can whole kernel corn, drained
2 (15 ounce) cans cream-style corn
2 teaspoons cornstarch
½ cup milk
1 teaspoon vanilla extract

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 baking dish; set aside.
  • Beat eggs until fluffy in a large bowl. Stirring constantly, pour in melted margarine. Stir in sugar, whole kernel corn, and cream-style corn until well combined. Dissolve the cornstarch in the milk; combine with the corn mixture. Stir in vanilla. Pour the mixture into the prepared baking dish.
  • Bake in the preheated oven until the pudding is puffed and golden, and a knife inserted into the center comes out clean; about 1 1/2 hours.

Number Of Ingredients 8

1 lb can (2 cups) cream-style corn
1 c med-fine dry bread crumbs
1 c milk
2 Tbsp chopped green pepper
1 tsp salt
1/4 tsp pepper
4 oz sliced cheddar cheese, cut in 1 1/2-inch squares
3 slice bacon, cut in 1 1 /2-inch lengths

Steps:

  • 1. Combine corn, bread crumbs, milk, green pepper, salt, and pepper.
  • 2. Pour into 10x6x2 baking dish.
  • 3. Arrange alternate pieces of cheese and bacon across top in checkerboard fashion.
  • 4. NOTE: I find the easiest way to cut the bacon is with scissors -- You can cut through the whole 3-stack at precise intervals which makes it speedy, neat, and easy. Using a knife seems to distort the bacon.
  • 5. Bake 325 F for 1 to 1 1/4 hours

This recipe seems a little heartier than the Hartwell Farm's recipe. And it differs from many of the other corn pudding recipes because it is not made with corn bread. It is made with saltine crackers. Hope you like my Mother's recipe!!

COMBINE:
1 can(s) whole kernel corn, drained
1 c cracker crumbs (saltines or oyster crackers)
1/4 c chopped onion
1/4 c chopped green pepper
1 tsp salt
1 dash(es) pepper
1 c milk
2 whole eggs, beaten
1 tsp sugar
DOT TOP WITH:
2 Tbsp butter

Steps:

  • 1. Combine all except the butter in mixing bowl and pour into 8x8 or 9x9 greased baking pan
  • 2. Cut the butter in many small pieces and randomly dot the top of the whole dish with the butter
  • 3. Bake 350 F 30 min or until set

1 (14 3/4 ounce) can cream-style corn
1 (8 ounce) package corn muffin mix (recommended -- Jiffy)
1 cup sour cream
1/2 cup butter, melted
1 -1 1/2 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter.
  • Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown.
  • Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted.
  • Let stand for at least 5 minutes and then serve warm.

It's amazing to know that this corn pudding originally appeared in a Kansas cookbook dated 1854! This time-tested recipe is wonderful, and I've served it often to my family and guests. It's also a recipe I've shared with many of my friends who've requested it.

2 tablespoons butter, melted
2 tablespoons all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 cup whole milk

Steps:

  • In a bowl, beat eggs. Add butter, flour, sugar and salt; mix well. Stir in milk and corn. Pour into a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 35 minutes or until a knife inserted in the center comes out clean.
