Salmon with Spinach Sauce image

You won't have to fish for compliments with this tasty recipe. Poaching is a quick and healthy way to prepare an entree as delicate as fish, keeping it moist and tender while cooking. And the flavorful spinach sauce adds a pretty green accent to the pink salmon. -Taste of Home Test Kitchen

Number Of Ingredients 8

5 ounces frozen chopped spinach, thawed and squeezed dry (about 1/2 cup)
1/3 cup mayonnaise
1-1/2 teaspoons Dijon mustard
1 teaspoon lemon juice
1/8 teaspoon garlic salt
2 salmon fillets (6 ounces each)
1/2 teaspoon lemon-pepper seasoning
4 slices lemon

Steps:

  • In a small bowl, combine spinach, mayonnaise, mustard, lemon juice and garlic salt; cover and refrigerate until serving., Place trivet insert and 1 cup water in a 3- or 6-qt. electric pressure cooker. Place salmon on trivet; sprinkle with lemon pepper and top with lemon slices. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. Quick-release pressure. A thermometer inserted in fish should read at least 145°., Discard lemon slices. Serve salmon with spinach sauce.

Number Of Ingredients 11

2 tablespoon Unsalted Butter
10 ounce Fresh Baby Spinach
0.5 ounce Fresh Parsley
1/2 teaspoon Ground Nutmeg
2 Salmon Fillet
1/2 cup White Cooking Wine
12 ounce Leek
1/4 cup Whipping Cream
1 tablespoon Olive Oil
1 1/2 teaspoon Salt
3/4 teaspoon Ground Black Pepper

Steps:

  • Cut the Leek (12 ounce) into half inch diced pieces, and set aside. Remove the leaves from the Fresh Parsley (0.5 ounce) and discard stems. Roughly chop the leaves and set aside.
  • In a medium saucepan over low heat, add Unsalted Butter (2 tablespoon) and Olive Oil (1 tablespoon). Add the leeks and cook for five minutes until translucent.
  • Add Whipping Cream (1/4 cup). Cover and remove from heat.
  • Heat a medium saute pan over medium heat. Add the White Cooking Wine (1/2 cup) and half a cup of water. Season with Salt (1 teaspoon) and Ground Black Pepper (1/2 teaspoon). Add the Salmon Fillet (2) and half of the parsley to the saute pan. Simmer for seven minutes.
  • Remove fish from heat and keep warm.
  • Meanwhile, in a large saute pan, add one tablespoon of water and the Fresh Baby Spinach (10 ounce). Cover, and cook six minutes until slightly wilted. Season with Ground Nutmeg (1/2 teaspoon), Salt (1/2 teaspoon) and Ground Black Pepper (1/4 teaspoon). Remove from heat and keep warm.
  • Meanwhile, return the leeks back to medium low heat and let simmer for three minutes. Remove from heat and set aside for plating.
  • In the center of two plates, place the spinach. Add the salmon fillets on top of the spinach and top with leek cream sauce. Garnish with remaining parsley.
  • Serve and enjoy!

4 salmon fillets (4 ounces each)
6 tablespoons thawed orange juice concentrate, divided
1/2 teaspoon salt, divided
1/2 teaspoon paprika
1/4 teaspoon pepper
5 cups fresh baby spinach
1 medium navel orange, peeled and cut into 1/2-inch pieces
2 green onions, thinly sliced
1/4 cup chopped walnuts, toasted
4-1/2 teaspoons balsamic vinegar
1 tablespoon olive oil
1 garlic clove, minced
1/4 cup crumbled goat cheese

Steps:

  • Brush salmon with 4 tablespoons orange juice concentrate. Sprinkle with 1/4 teaspoon salt, paprika and pepper. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill salmon, covered, over medium heat or broil 4 in. from the heat for 8-10 minutes or until fish flakes easily with a fork., Meanwhile, in a large bowl, combine the spinach, orange, green onions and walnuts. In a small bowl, whisk the vinegar, oil, garlic, remaining orange juice concentrate and salt. Drizzle over salad; toss to coat., Divide among plates; sprinkle with cheese. Top with salmon.,

4 skinless salmon fillets, (6 ounces each)
Coarse salt and ground pepper
10 ounces baby spinach
1 pint grape tomatoes, halved
3/4 cup crumbled fresh goat cheese (3 ounces)
1/4 cup pecans
1/4 cup Balsamic-Rosemary Vinaigrette

Steps:

  • Heat broiler, with rack set 4 inches from heat. Place salmon on a foil-lined rimmed baking sheet; season with salt and pepper. Broil, without turning, until opaque throughout, 7 to 9 minutes. Let cool briefly, then flake.
  • Divide spinach and tomatoes among serving plates. Top with salmon, goat cheese, and pecans, and drizzle with vinaigrette.
