HARISSA-MARINATED TOP SIRLOIN TIPS

2 lbs top sirloin steaks, trimmed of fat (about 1 1/2 inches thick)
4 tablespoons olive oil
4 garlic cloves
2 tablespoons brown sugar
2 tablespoons soy sauce
1 tablespoon fresh thyme leave
5 teaspoons harissa
salt

Steps:

  • Cut the steak lengthwise in half and slice each half across at an angle into 2 inch wide triangles.
  • Combine 2 tbsp olive oil, garlic, sugar, soy sauce, thyme and 2 tsp harissa sauce into a zip bag (or large bowl) and add beef. Close the bag and mix by squeezing the bag with your fingers to coat all the beef pieces (or toss in bowl to coat each piece and cover). Marinate at room temperature for 30 minutes, or refrigerate at least 2 hours (or up to overnight), mixing occasionally.
  • Drain the beef. Divide and cook in two batches in a large skillet (or cook them in two skillets simultaneously - preferred). Add 1 tbsp olive oil to the skillet and heat on high. Add beef, taking care not to overcrowd. Cook until well browned on all sides for a total of 6 - 7 minutes for medium rare.
  • Whisk 2 tbsp olive oil, 1 tbsp harissa and 2 tbsp water in a small bowl to blend. Season this sauce with salt.
  • Drizzle sauce over the steak tips and serve.

1/2 cup harissa (sold in specialty stores)
1/3 cup plain whole-milk yogurt, preferably Greek
2 teaspoons kosher salt
1 1/2 pounds beef tri-tip; top sirloin; London broil; flank, skirt or hanger steak, sliced 1/8- inch thick (ask butcher to do this)
1 English cucumber, unpeeled, halved lengthwise and thinly sliced crosswise
1 small red onion, halved and thinly sliced
4 ounces black oil-cured olives, pitted and roughly chopped
4 mint sprigs, leaves torn
Sea salt
4 whole-wheat pita bread rounds
Extra virgin olive oil, for brushing and drizzling
16 ounces prepared hummus
2 lemons, each cut in 4 wedges

Steps:

  • In a gratin dish, whisk harissa with yogurt and kosher salt. Add beef slices and turn to coat. Cover with plastic and refrigerate at least 30 minutes; 2 hours is ideal.
  • In a bowl, combine cucumber, red onion, olives and mint leaves, and season with sea salt. Thread meat onto metal skewers. Heat a grill or grill pan. Grill skewers over medium-high heat, turning once, until medium, about 4 minutes. Transfer to a platter as they are done.
  • Brush pita with olive oil and grill, turning once, until lightly browned, about 3 minutes total. Drizzle skewers and cucumber salad with olive oil. Serve with hummus and lemon wedges.

Steak tips in the oven with a very flavorful steak tip marinade that is best suited for a hearty winter dish but can be enjoyed anytime. Feel free to experiment with the ingredients because I don't think you can really go wrong.

¾ cup soy sauce
¼ cup olive oil
¼ cup balsamic vinegar
2 tablespoons brown mustard
2 tablespoons maple syrup
2 tablespoons molasses
1 tablespoon sesame oil
1 teaspoon ground cinnamon
3 whole cloves
salt and ground black pepper to taste
1 cup beef broth, or as needed
2 pounds sirloin steak tips

Steps:

  • Whisk soy sauce, olive oil, balsamic vinegar, mustard, maple syrup, molasses, sesame oil, cinnamon, cloves, salt, and pepper together in a large glass or ceramic bowl. Add steak tips and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 6 to 24 hours.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Remove steak tips from the marinade and shake off excess. Discard the remaining marinade. Put steak tips into a baking dish and fill the bottom of the dish with beef broth.
  • Bake in the preheated oven until steak tips are beginning to firm and are hot and slightly pink in the center, about 25 minutes, flipping halfway. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

•1 tablespoon fresh thyme leaves
•2 teaspoons plus 1 tablespoon harissa sauce

Steps:

  • •Cut steak lengthwise in half, forming two 2- to 3-inch-wide strips. Cut each strip into 2- to 3-inch triangles. Combine 2 tablespoons olive oil, garlic, sugar, soy sauce, thyme, and 2 teaspoons harissa in large bowl; whisk to blend. Add beef; toss to coat evenly. 2 1/2 lbs sirloin tip steaks, cubed
2 tablespoons butter
1 tablespoon oil
3 cups sliced fresh mushrooms
2 garlic cloves, crushed
2/3 cup beef broth
1/4 cup wine vinegar
1 1/2 teaspoons soy sauce
1 teaspoon Dijon mustard
2 teaspoons cornstarch
1/2 cup whipping cream

Steps:

  • Brown the meat in butter and oil in a lg skillet.
  • Place in a 2qt baking dish.
  • In the skillet, saute mushrooms and garlic for 2 minutes.
  • Pour all over meat.
  • Cover and bake at 325* for 1-1/2 hour or until tender.
  • In skillet, mix broth, vinegar, and soy sauce; bring to a boil.
  • Boil for 2 minutes.
  • Mix mustard, cornstarch and cream, stir into broth mixture.
  • Bring to a boil; boil for 1 minute, stirring constantly.
  • Drain juices that have accumulated around the beef into broth mixture.
  • Cook on med heat, stirring, until bubbly.
  • Add the meat, mix well.
