MAPLE ROASTED CARROTS WITH CRANBERRIES

Maple roasted carrots with cranberries are easy to make, naturally vegan and gluten-free. They make for a delicious Thanksgiving or Christmas side dish too.

Yield serves 4 as a starter

Number Of Ingredients 11

500 g / 1.1 lb / 17 oz medium young carrots, scrubbed clean
100 g / 3.5 oz fresh cranberries*
60 ml / ¼ cup maple syrup, divided
zest of ½ large orange
30 ml / 2 tbsp olive oil
3 tsp harissa paste**, adjust to taste (strength varies!)
a few springs of thyme or lemon thyme
1 garlic clove, finely grated
½ tsp salt, adjust to taste
black pepper, to serve
20 g / ¼ cup almond flakes

Steps:

  • Set the oven to 170° C / 340° F fan forced (or 190° C / 375° F no fan) and line one large baking tray (or two smaller ones) with baking paper.
  • Trim the green tops off the carrots (you can make pesto out of them or add them to soups) and cut carrots into halves lengthwise.
  • Coat cranberries in 1 tbsp of maple syrup and mix in orange zest.
  • In a separate bowl, combine olive oil, 3 tbsp maple syrup, harissa paste, thyme leaves (about 1 tbsp), garlic, salt and a good pinch of black pepper.
  • Coat dry carrots in the maple and harissa mixture (keep any leftovers) and space them out on a large baking tray,. If you have a large tray, place cranberries at the other end, if not use two separate trays.
  • Roast for about 20-25 minutes, until carrots are tender and the exterior slightly caramelized and cranberries are soft and jammy. If cranberries are done sooner, remove them from the tray with a spatula and set aside. If you have any leftover carrot marinade, apply it with a brush again half way through the baking time.
  • Toast almonds lightly in a hot pan until lightly browned and fragrant.
  • Place roasted carrots and cranberries on a large serving platter. Sprinkle with toasted almonds and fresh thyme or finely chopped carrot tops (but go easy on them as they taste bitter).

Approx. 21 small-medium carrots
2 Tbsp extra virgin olive oil
2 Tbsp pure maple syrup
Salt, to taste
1/8 cup raw pistachios, chopped
1/8 cup fresh parsley, chopped
1.5 tsp lemon zest
1/2 cup plain greek yogurt
1 Tbsp harissa paste
1/2 tsp garlic powder
1 tsp lemon juice
Salt, to taste

Steps:

  • Preheat oven to 400F.
  • Wash and dry carrots well, removing green tops if necessary. Spread carrots on a large baking sheet, and toss in olive oil, maple syrup, and salt until well-coated.
  • Place baking sheet in the oven for about 25-30 minutes, tossing once halfway through. Carrots are done when they are slightly browned and tender.
  • While the carrots cook, chop the parsley and pistachios. Zest the lemon and set aside.
  • Next, prepare the harissa yogurt by combining all sauce ingredients in a small bowl, mixing well.
  • Spread harissa yogurt sauce on a serving dish and top with roasted carrots. Sprinkle chopped parsley, pistachios, and lemon zest overtop. Add salt if desired. Enjoy immediately!

1 pound (450 grams) carrots
1 tablespoon oil
2 tablespoons harissa sauce
2 tablespoons maple syrup
1 tablespoon water
Pinch flaky sea salt
Optional: fresh herbs, cumin seed for garnish

Steps:

  • Wash and cut carrots: First, wash and peel carrots, trim off the stem, and slice diagonally.
  • Prepare the sweet harissa sauce: In a small mixing bowl, add harissa, maple syrup, and a water. Whisk well to combine and set aside.
  • Roast carrots until brown: Heat a large cast iron skillet over medium-high heat and add oil. Add carrot slices to the skillet and cook until they begin to soften and become brown, about 7-10 minutes. Toss carrots with a spatula every few minutes to brown them on all sides.
  • Add harissa sauce: When the carrots are browned on all sides, pour the sweet and spicy harissa sauce into the pan and toss to coat the carrots completely. Cook 1-2 minutes more, or until the sauce has thickened.
  • To finish: Remove carrots to a plate and top with a sprinkle of flaked sea salt and fresh herbs or cumin seeds (optional). Then enjoy!

2 pounds medium rainbow carrots, halved lengthwise
1/4 cup olive oil, plus more for drizzling
1 teaspoon kosher salt
1/4 cup maple syrup
2 tablespoons harissa paste
2 teaspoons ground cumin
2 cloves garlic, grated with a fine zester
Zest of 1 lemon
Freshly ground black pepper
1/4 cup ranch dressing
1/4 cup roasted and salted pistachios, coarsely chopped
Flaky salt, for sprinkling

Steps:

  • Preheat a grill or grill pan over medium heat. (See Cook's Note.)
  • Put the carrots in a large bowl and drizzle with olive oil. Sprinkle with salt and toss to coat. Place the carrots on the grill and cook, flipping halfway through, until fork-tender, 10 to 12 minutes.
  • Meanwhile, combine the olive oil, maple syrup, harissa, cumin, garlic, lemon zest and black pepper in a small bowl. When the carrots are almost cooked, brush with the harissa glaze. Remove from the grill and transfer to a serving plate, then drizzle with additional harissa glaze. Follow with a drizzle of ranch dressing, then sprinkle on the pistachios and a pinch or two of flaky salt. Serve and enjoy!
