BLACK BEAN VEGETARIAN MEAT LOAF



Black Bean Vegetarian Meat Loaf image

This was a creation based on trying my first black bean vegetarian burger and deciding I had to learn how to make one, then I decided to go for a vegetarian meatloaf instead! Based on a 4 ounce serving, this recipe could be used to make twelve 4 ounce burgers instead of a meatloaf.

3 (15 ounce) cans black beans, drained and rinsed
1 sleeve buttery round crackers (such as Ritz®), crushed
1 cup shredded Cheddar cheese
1 cup diced multi-colored bell peppers
⅔ cup frozen corn kernels
½ cup diced onion, or to taste
24 slices jalapeno pepper, diced
1 egg white
1 (1 ounce) packet hot taco seasoning mix
1 (1 ounce) package spicy Ranch-style seasoning mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Generously coat the inside of an 8x13-inch baking dish with cooking spray.
  • Mash black beans in a large bowl. Mix crackers, Cheddar cheese, bell peppers, corn, onion, jalapeno pepper, egg white, taco seasoning, and Ranch seasoning into black beans until evenly mixed. Spoon mixture into the prepared baking dish; form into a loaf.
  • Bake in the preheated oven until cooked through, 45 to 60 minutes.

This side or I would eat this as a snack. It has a garlicy, crisp, squeaky bite to it! Tossed with almonds. Use tender, young, thin beans.

1 lb French style green bean, rinsed and microwaved for 4 minutes
2 -4 garlic cloves, minced
1/4 cup sliced almonds
2 tablespoons olive oil
1/8-1/4 cup water or 1/8-1/4 cup chicken broth
coarse sea salt, to season
pepper (to season)

Steps:

  • In a large pan over medium high heat, heat oil adding almonds and toss till for 1 minute add garlic to lightly brown add beans and water or broth cover for 5 minutes on low heat.
  • Season with salt and pepper.

16 cups water
1 tablespoon sea salt
1 ½ pounds fresh green beans, rinsed and trimmed
3 tablespoons unsalted butter
1 clove garlic, crushed
1 large red onion, sliced in rings
1 pinch dried thyme
2 tablespoons red wine vinegar
sea salt to taste
ground black pepper to taste
freshly ground nutmeg to taste
1 tablespoon finely minced fresh parsley

Steps:

  • In a large pot bring salted water to a boil. Carefully drop, by handfuls, green beans into boiling water. Return water to a boil for 5 minutes. Immediately drain the beans and plunge them into ice water for 5 minutes. Drain and wrap in a clean cloth; set aside.
  • In the same pot heat butter over medium heat. Lightly brown the garlic. Remove from heat and set aside for 20 minutes.
  • Remove the garlic from the butter, and discard it. To the garlic flavored butter add onions and thyme. Cover the pot and braise the onion over medium heat for 5 minutes, or until soft and transparent. Increase the heat to medium-high, uncover the pot and slightly caramelize the onion.
  • Stir the green beans into the pot. After 1 to 2 minutes, de glaze the pot with red wine vinegar. Season to taste with sea salt, pepper and nutmeg. Sprinkle with parsley.

5 tablespoons unsalted butter, softened
3 tablespoons finely chopped shallots
3 tablespoons finely chopped flat-leaf parsley
2 teaspoons finely chopped tarragon
1 1/2 teaspoons grated lemon zest
1 tablespoon fresh lemon juice
2 lb haricots verts or other green beans, trimmed

Steps:

  • Stir together all ingredients except haricots verts with 3/4 teaspoon salt and 1/4 teaspoon pepper in a large bowl until combined well.
  • Cook beans in a large pot of boiling salted water (1 tablespoon salt for 6 quarts water), uncovered, until crisp-tender, about 6 minutes, then drain. Toss with herb butter.
  • Do Ahead
  • Herb butter can be made ahead and chilled, covered, 3 days or frozen, rolled into a cylinder in plastic wrap and kept in a sealed bag, 1 week. Haricots verts can be trimmed 1 day ahead and chilled in a sealed bag lined with paper towels.

1-1/2 cups ketchup, divided
1 can (16 ounces) kidney beans, rinsed, drained and mashed
1 cup seasoned bread crumbs
1 large onion, chopped
1 celery rib, chopped
2 teaspoons Worcestershire sauce
1 teaspoon salt-free lemon-pepper seasoning
1/2 teaspoon seasoned salt
2-1/2 pounds lean ground beef (90% lean)
1/2 cup water

Steps:

  • In a large bowl, combine the eggs, 1 cup ketchup, beans, bread crumbs, onion, celery, Worcestershire sauce, lemon-pepper and seasoned salt; crumble beef over mixture and mix well. , Shape into two loaves. Place in a 13x9-in. baking dish coated with cooking spray., In a bowl, combine water and remaining ketchup; pour over meat loaves. Bake, uncovered, at 325° for 70 minutes or until meat is no longer pink and a thermometer reads 160°.

2 teaspoons olive oil
1 leek, washed, trimmed and sliced
1 1/2 tablespoons fresh gingerroot, peeled and grated
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1 onion, peeled and quartered
3 carrots, trimmed, peeled and grated
1 garlic clove, peeled and chopped
3 tablespoons fresh parsley, chopped
50 g sunflower seeds
24 g oat bran
1 tablespoon vegetable stock powder, wheat-free
1 (410 g) can haricot beans, drained and rinsed
1 (410 g) can red kidney beans, drained and rinsed

Steps:

  • Preheat the oven to 190°C.
  • Lightly oil a loaf tin and line the base with grease-proof paper.
  • Put the remaining oil and the leek in a small saucepan and cook over a low heat for 5 minutes. Add the ginger, cumin and coriander and cook for a further minute. Remove from the heat and allow to cool.
  • Place the onion, carrots, garlic, parsley, sunflower seeds, oat bran, vegetable stock powder and one of the cans of beans (either is fine) in a food processor and blend for 20 seconds until semi-smooth. Transfer into a large bowl and stir in the second can of beans and the leek mixture.
  • Spoon into the prepared tin and bake for 40-45 minutes until golden brown in color.
  • Turn out of the tin onto a serving plate. Serve either hot or cold with a salad.

2 cloves garlic, minced
1 pound French Beans (Haricots Verts), rinsed and dried
1/2 cup chicken broth or white wine
salt and pepper

Steps:

  • Heat olive oil in sauce pan on high heat.
  • Add green beans, turn the burner down to medium high heat. Cook the beans for 10 minutes, folding the beans on the bottom to the top once.
  • Add garlic and sauté for 1 minute.
  • Add the chicken stock or wine and turn the burner up to high heat for 2-3 more minutes (give the beans enough time to cook & absorb flavors, but make sure you remove them while the are still a bit crunchy).
  • Season will salt and pepper and enoy.

1 large egg
2/3 cup grated parmesan
1/2 tsp pink Himalayan salt
1/4 tsp black pepper

Steps:

  • Preheat the oven to 400°F and make sure your green beans are dry and snipped (the fibrous end cut off).
  • Combine the grated Parmesan cheese with the seasonings on a shallow plate and mix to evenly disperse everything.
  • Whisk an egg in a bowl large enough to drench the green beans in. Drench a handful of green beans in the beaten egg and let the excess drop off for a few seconds.
  • Gently press the green beans in the Parmesan cheese mixture and sprinkle some cheese over. Toss gently with your hands.
  • Place the green beans on your largest, greased baking sheet making sure they have room on all sides to crisp up in the oven. Bake for about 10 minutes, checking to see that the cheese has become slightly golden.
  • Let the green beans cool until they can be handled. Serve with some spicy mayo or ranch and enjoy!
