ROTI RECIPE - HOW TO MAKE ROTI/CHAPATI
Roti or Chapati is everyday Indian flatbread which is made with only 2 ingredients- whole wheat flour (atta) and water. Learn all the tips to make soft roti at home!

- Take 2 cups (270 grams) atta in a large bowl. Usually a round flat plate with shallow edges called paraat is used but I just had a round mixing bowl so that's what I used.You can add little oil if you like here, I did not add any.
- Start adding water, little by little. As you add water, mix with your hands and bring the dough together. I needed around 3/4 cup (180 ml) +1 tablespoon (15 ml) water here. You may need more or less water depending on the kind of flour.
- Once the dough comes together, start kneading the dough. Knead with the knuckles of your finger, applying pressure.
- Fold the dough using your palms and knead again applying pressure with your knuckles.Keep kneading until the dough feels soft and pliable. If it feels hard/tight, add little water and knead again. If it feels too sticky/soft, add some dry flour and mix.
- Once done, the dough should be smooth. Press the dough with your fingers, it should leave an impression.
- Cover the dough with a damp cloth or paper towel for 20 to 30 minutes.I placed my paper towel under tap water and then squeezed all the water from it and used that damp paper towel to cover the cloth.
- After the dough has rested, give it a quick knead again.Divide the dough into 12 equal parts, each weighing around 35 to 37 grams.
- Start working with one ball, while keep the remaining dough balls covered with a damp cloth so that they don't dry out.
- Take one of the balls and press it between your fingers to make it smooth. Then roll it between your palms to make it round and smooth. There should be no cracks. Press the round dough ball and flatten it slightly.
- Now take around 1/4 cup atta in a plate for dusting the roti while rolling it. Dip the prepared dough ball into the dry flour and dust it from all sides.
- Then start rolling the roti, using a rolling board and rolling pin.Move the rolling pin lengthwise across the dough applying gentle pressure as you roll. If you are rolling it correctly, the dough will move in circular motion on its own and the roti will roll evenly. This comes with practice.
- You can also roll a little and then take the roti and move it a little with your hands and roll again. Roll it thin until you have a 5 to 6 inch diameter circular roti.You will have to dip the roti in dry flour several time while rolling the roti. Anytime the dough starts sticking to the rolling pin, dip the roti into the atta from both sides and then continue rolling.
- Heat the tawa (skillet) on medium-high heat. Make sure the tawa is hot enough before you place the roti on the tawa.Dust excess flour off the rolled roti and place it on the hot tawa.
- Let it cook for 15-30 seconds until you see some bubbles on top side. At this point flip the roti, you don't want the first side to cook too much.Now, let the other side cook more than the first side, around 30 seconds more. Use a tong to see how much it has cooked from the second side now. If you see brown spots all over, means it has cooked enough.
- Now, remove the roti from the tawa using a tong and place it directly on flame with the first side (which was little less cooked) directly on the flame.The roti if rolled evenly will puff up, flip with a tong to cook the other side as well. The roti is done when it has brown spots, don't burn it.
- Apply ghee on the rotis immediately. Make all the roti/phulka similarly. Serve warm.
- here's how you can make chapati (or roti whatever you call it) on tawa without putting it directly on flame to puff.Roll the roti as usual and place it on the hot tawa. Let it cook for 30 seconds until you see some bubbles on top. At this point flip the roti. You don't want the first side to cook a lot.
- Now, let the other side cook until it has nice brown spots (so it should cook more than the first side). Now flip again (with the first side now at the bottom), press the roti with a paper cloth, any cotton cloth or spatula. It will puff up.Flip again to cook the other side some more. Remove from tawa and brush with ghee.

DHALPURI | DHALPOURIE | DHAL PURI RECIPE
Steps:
- Fill a saucepan with 12 cups water and place over medium heat.
- Pick through and discard any stones or debris. Rinse split peas, rubbing between fingers, until the water runs clear.
- Add to the pot along with salt and turmeric and bring to a boil.
- Cook for 20-30 minutes or until dhal is cooked and firm (not soft) and crushes easily between thumb and forefinger with no grainy feel.
- Drain thoroughly and allow it to cool and dry.
- Add garlic, hot pepper and bandhania to the bowl of the food processor and pulse until finely chopped. Set aside and wipe bowl as added moisture will make the split peas unmanageable.
- Add 1/3 split pease to the bowl of the food processor (or food mill) along with the garlic, hot pepper and bandhania and pulse to mince, scraping down the sides of the bowl at intervals to ensure even processing. Do not over mince into a paste! Transfer to a dish and repeat 2 more times with the remaining split peas.
- To the bowl with the ground split peas, add cumin, salt, garlic, pepper and bandhania paste and mix well to combine.
- Heat 3 tablespoons oil in a large heavy bottomed pot over high heat, add ground split peas and cook for 3-5 minutes until light and grainy, stirring constantly to prevent sticking.
- The prep for the split peas can be done in advance and portioned out and kept in the freezer in small tightly closed resealable freezer bags. It will stay in the refrigerator for 2-3 days. The split peas usually makes enough filling for 8 cups of flour.
- In a large bowl, add flour, baking powder, sugar and salt.
- Mix to combine and gradually add lukewarm water and squeeze dough between fingers to bring it together. Knead for 3 minutes. You want a soft dough-not as shaggy as buss up shot and not as firm as sada roti. Somewhere in between. Rub 1 tbs oil all over the dough and place in bowl and let rest for at least 15 minutes.
- Separate dough into 4 balls. Then separate each into two equal pieces. Form into small balls (making 8 balls). You can make 6 if you have a large tawa.
- Working with one piece of dough at a time, press and flatten each into a round 4-5 inch disk. Place 1/4 cup of dhal onto the disk and stretch the edges over and around the ground dhal to meet at the top, then press together or pinch the dough tightly to seal.
- Dust with flour and press all the way around to evenly disperse filling. Place on a floured counter and cover.
- Repeat with the remaining dough until all are filled. Many times it is ready to be rolled out immediately and does not require resting. Prolonged resting and make it difficult to manage since it becomes too soft and the dough is at risk of breaking while rolling out.
- Heat and oil tawa, flat iron griddle or a 10 - 12 inch cast iron skillet over medium heat.
- Meanwhile, dust counter and rolling pin with flour. Take one of the loyahs and gently flatten with your fingers. Starting from the center of the dough, roll out using a rolling pin, pushing outwards, then down, turning dough 90 degrees angle several times and flipping and repeating turning until it is a flat, even circle(about 1/8 inch thick and as wide as your tawa or pan), ensuring that the edges are also even. Amateurs: please do not roll out too thin which can cause breakage and seepage of filling. Keep it well floured at all times.
- Pick up the dough and gently place it on the tawa (or alternative) by flipping and rotating your wrists. Allow it to cook for 15-20 seconds, brush with oil and immediately flip. Brush again with oil and allow it to cook for another 15 - 30 seconds, then flip and cook for another 30 - 45 seconds, pressing edges with the back of the spoon to ensure that they are cooked.
- Remove with the handle of a spoon, dabla or spatula and place in a large bowl lined with paper towel, kitchen towel or brown paper bags to absorb any excess oil. If at any time the the roti browns too quickly or the tawa starts smoking, reduce the heat. Alternately, if nothing seems to be happening raise heat.
- Repeat rolling out and cooking until all are cooked. Enjoy!

- Sift wheat flour with salt in a bowl.
- Add in 2 tbsps.
- of oil.
- Add mashed peas and mix well.
- Add pepper, cilanto and lime juice.
- Knead well.
- Divide into 16 equal parts.
- Shape into round balls.
- Roll each ball on a floured board into a circle.
- Lift each roti carefully with floured hands.
- Place on a hot griddle one at a time.
- Shallow fry with 1-2 tbsp.
- of oil until brown specs appear on both sides (i. e. both sides must be well cooked).
- Remove on a clean napkin to drain out excess oil.
- Serve immediately.
- Serving tip: Enjoy this roti with methi-aloo and some lime pickle/yogurt.
