TACO SHELLS AND CHEESE

- Bring a pot of salted water to a boil. Add the pasta and cook according to the package directions. Drain and set aside.
- Heat the olive oil and 2 tablespoons of the butter in a pan over medium-high heat. Add the ground beef and cook, crumbling it with a wooden spoon, until browned, 5 to 8 minutes. Stir in the chili powder, cumin, onion powder, garlic powder and paprika. Stir in the diced tomatoes and chiles, hot water, 1 teaspoon salt and 1/2 teaspoon pepper and bring to a simmer. Cook until the sauce thickens, 2 to 3 minutes, then remove to a bowl (it will still be a little juicy).
- In the same pan over medium heat, add the remaining 2 tablespoons butter and the milk and cook until hot and bubbling. Add the processed cheese and cook, stirring, until melted. Do the same with the Cheddar jack. Pour in the cooked pasta, add the taco meat and stir to combine. Taste and adjust the seasoning, thinning with a splash of milk if needed. Stir in the cilantro.
- Top each serving with some sour cream and salsa if desired.

- In a large skillet, heat the canola oil over medium-high heat; add the onions and cook until translucent. Add the cayenne, chile powder, cumin and Mexican oregano and cook, stirring, until fragrant, about 1 minute. Add the tomato paste and cook, stirring, for 2 minutes. Add the beef and cook until browned, 8 to 10 minutes. Stir in the tomato sauce and apple cider vinegar and cook until the sauce reduces slightly, 3 to 5 minutes.
- Build the tacos in this order: cheese on the bottom, followed by the beef, tomatoes, avocados, lettuce and jalapenos. Serve the sour cream on the taco or on the side for dipping.

- To make the filling, in a large skillet, heat the oil on medium-low heat and add the onion and jalapeño. While stirring occasionally, cook until the onions and jalapeño are softened, about 5 minutes. Add the garlic and cook for 30 more seconds.
- Add to the skillet the ground beef, chili powder, cumin, oregano, salt, pepper, cayenne, tomatoes, and cilantro. Stir until everything is well combined then turn the heat down to low and simmer while stirring occasionally until the meat is browned, about 15 minutes. Stir in the lime juice and taste and adjust seasonings. Remove from the heat.
- To make the tacos, line a baking sheet with paper towels and heat 2 inches of oil to 350°F in a heavy skillet. Take a tortilla and fold it in half into a “U” shape, holding it with tongs in the center. Using the tongs, dip one half of the tortilla, lengthwise, into the hot oil, leaving the other half out of the oil. Fry the first side until crisp, about 10 seconds, and then repeat for the other side, holding the already-cooked side out of the oil. Drain the taco shell on a paper-towel-lined sheet and repeat until all the shells are fried.
- To assemble the tacos, take each shell and fill with ground beef, lettuce, tomatoes, and cheddar cheese. Serve with salsa on the side, if desired

- Roughly chop 1/2 onion. Saute the onion in a dollop of oil over medium-high heat for a few minutes.
- Add the ground beef and cook until browned. Drain any fat if you want. Add 1 clove minced garlic and saute briefly. Add 1 minced chipotle, 1 Tablespoon adobo sauce, and 1-2 teaspoons chili powder. You can optionally add dashes of cumin, oregano and black pepper.
- Add 1/4 teaspoon of salt and a couple Tablespoons of water. Let simmer over medium heat. By the time you gather all the taco fixings the meat will be ready. Take a final taste for seasoning (I added another generous pinch of salt to this batch).
- If you want to bake the taco shells, start by warming up the corn tortillas in the oven or microwave. Lightly brush them with a neutral oil (or cooking spray) and drape over two oven rungs for 10-12 minutes at 375F.

- Heat gas or charcoal grill. Cut 2 (18x12-inch) sheets of heavy-duty foil. Fold all four sides up on each sheet and pinch corners to form 2 foil trays. Spray with cooking spray.
- Place fillets on foil trays, and brush each side with oil. Sprinkle taco seasoning mix on all sides until evenly coated.
