EASY SCRAMBLED EGGS AND SCALLION
I'm not a big fan of eggs but my husband is, so I make them quite often. This is one of my favorite ways to eat eggs. Hope you like it, too.

Steps:
- Beat eggs.
- Heat skillet and pour light coating of olive oil.
- Heal oil for about a minute.
- Add diced scallions and fry for about 30 seconds.
- Add eggs.
- Fry for about 2 minutes or until eggs are desired consistency. I use a rubber spatula to break up the egg mixture as it fries.
- Salt and pepper to taste.
- Enjoy!

Steps:
- Place eggs in a large saucepan. Cover them with cool water by 1 inch. Slowly bring water to a boil over medium heat; when the water has reached a boil, cover and remove from heat. Let sit 12 minutes.
- Transfer eggs to a colander; place under cool running water to stop the cooking. Eggs can be peeled and served immediately.

Can be prepared in 45 minutes or less.

Steps:
- In a food processor or blender purée the eggs with the Roquefort, the lemon juice, the yogurt, and salt and pepper to taste, transfer the mixture to a bowl, and stir in the scallions. Serve the dip with the potato chips or crudités.
