TUNNEL OF FUDGE CAKE
So rich and gooey! This cake is made completely from scratch-no mixes required. The secret to the fudgy tunnel is the addition of the nuts-don't be stingy with them! It's from Pillsbury Best of the Bakeoff.

Steps:
- Grease and flour a 12 cup bundt pan or 10 inch tube pan.
- In large bowl, beat butter and sugar till fluffy.
- Add eggs, one at a time, beating well after each addition.
- Gradually add 2 cups powdered sugar, flour and cocoa.
- Stir in nuts by hand.
- Spoon batter into pan; spread evenly.
- Bake at 350 F for 58-62 minutes.
- Note: you won't be able to test for doneness since the filling is soft, so accurate temperature and timing is key.
- Cool in pan 1 hour.
- Invert on serving platter and cool completely.
- In a small bowl, combine all glaze ingredients adding enough milk for desired spreading consistency.
- Spoon over cake, drizzling down sides.
- Store tightly covered.

I used to make this a lot and lost the recipe, finally found it again on another web site. Good cake and pretty presentation.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Grease and flour a Bundt pan.
- I use Bakers Joy.
- In a large bowl combine all ingredients, except nuts and cherry filling at low speed until all ingredients are moistened.
- Beat 2 minutes at high speed.
- Spoon 2/3 batter into pan.
- Spoon 1 cup of cherry pie filling evenly in narrow ring over batter.
- Don't let cherries touch side of pan.
- Cover with remaining cake batter.
- Bake at 350 degrees 36-40 minutes until top is golden brown.
- Cool upright in pan for 1/2 hour.
- Invert onto cake plate.
- Sprinkle with confectioner sugar and serve with remaining cherry pie filling.

- For crust, preheat oven to 400. Mix all ingredients and press into the bottom of a 9 inch spring form pan and bake 5 minutes.
- Bring all cheesecake ingredients to room temperature before starting.
- Beat cream cheese and sugar till fluffy and then add eggs one at a time Beat after each is added.
- Add flour cream and salt.
- Take out 2 cups of filling. In a small bowl melt chocolate, then mix w/ the 2 cups filling and set aside.
- In the remaining filling add vanilla.
- Place half of this mixture on top of crust.
- Take the chocolate mixture and drop by teaspoonfuls in a circle on top of the above. Be sure to leave the center clear of chocolate and also a 3 inch edge around crust.
- Carefully spoon remaining vanilla mixture over all covering the chocolate carefully so not to disturb ring but making a smooth top.
- Place in a glass pan with 2 cups of water and bake at 400° for 15 minutes. Bake another 50 minutes, lowering the oven temp 25 degrees every 10 minutes stopping at 300°. Let cool till room temp and then cover and refrigerate overnight.

- For the fudge filling:.
- Finely chop the chocolate and place into a medium heat-proof bowl.
- Heat the cream and butter in a small pot until the butter has melted and the cream is gently steaming.
- Pour this over the chocolate in the bowl. Let sit for 5 minutes then gently stir until all the chocolate has melted.
- Let this mixture cool at room temperature for 45-60 minutes, stirring occasionally, until thickened but still pipeable.
- Prepare the pan:.
- Preheat the oven to 350 degrees F.
- Use the 2 tablespoons of softened butter and a pastry brush to coat a 12-cup bundt pan very well. Add the cocoa powder to the the pan, tilting and tapping the pan to coat as much of the inside as possible. Tap out any excess cocoa powder.
- For the cake:.
- In a large bowl, beat the butter, granulated sugar and dark brown sugar together until smooth. Beat in the eggs one at a time until smooth. Add the salt, vanilla, baking powder, vegetable oil and mashed banana and stir together until well-combined.
- Add the flour and cocoa powder to the bowl and mix until just combined.
- Scoop 3 cups of the cake batter into the prepared bundt pan. Spread out into an even layer.
- Transfer the thickened, cooled fudge filling to a piping bag. Pipe the fudge filling in a thick ring all the way around in the centre of the batter.
- Cover the fudge filling with the remaining cake batter and spread out evenly in the pan.
- Bake for 35-40 minutes. The cake will look risen and dry on top. You won't be able to test this cake with a toothpick as the centre will still be gooey when the cake is finished baking, so you must ensure your oven is at the correct temperature.
- Remove the cake from the oven and let cool for 20 minutes in the pan. Loosen the edges of the cake with a small spatula or butter knife, flip the cake out onto a wire rack and leave to cool completely.
- For the frosting:.
- In a small bowl, stir together the powdered sugar, cocoa powder and milk until smooth.
- Spoon over the top of the cooled cake, letting it drip down the sides of the cake. Top with the dried banana chips and leave the icing to set for a few minutes before cutting into the cake.
