Steps:
- Combine Italian sausage, eggs, yellow onion, garlic, parmesan, ricotta, breadcrumbs in a large bowl. Add in ground chuck. Gently combine with hands, not overworking. Test small piece in microwave for 30 seconds to taste. Add seasoning as needed. Add in basil, oregano, chili flakes and pepper. Combine with hands. Line baking sheet with foil and spray with cooking oil. Preheat oven to 475 degrees F. Use ice cream scooper to size or shape with hand. Place meatballs on baking sheet, leaving space in between. Spray top with cooking spray and roast until internal temperature is 155 degrees F. Place cooked meatballs in pot of tomato sauce. Simmer for 5-10 minutes. Add parsley and Parmesan cheese.

- Preheat oven to 375°. In a large bowl, combine eggs, water, onion, bread crumbs, Parmesan cheese, garlic and seasonings; mix well. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place meatballs on greased racks in shallow baking pans. Bake, uncovered, until no longer pink, 15-18 minutes. , Freeze option: Freeze cooled meatballs in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in the microwave.
