This healthy cookie recipe is vegan and gluten free and is perfect for breakfast or a snack. You can also satisfy your sweet tooth without any added sugar!

Number Of Ingredients 10

1 cup unsweetened applesauce
3/4 cup chopped dates (from about 13 dates)
1/3 cup raisins
1 cup old fashioned oats
1/2 cup oat flour (you can blend rolled oats in the blender to make oat flour)
1 teaspoon cinnamon
1/2 teaspoon ginger
1 teaspoon pure vanilla extract
1 tablespoon coconut oil, melted, or oil of choice
1 tablespoon ground flax seeds plus 3 tablespoons water (or 1 egg)

Steps:

  • Preheat the oven to 350 degrees.
  • Lightly oil a baking sheet or line with parchment paper or a nonstick baking mat.
  • Combine the flaxseed and water in a small bowl and give it a few minutes to gel. (Omit this step if you are using an egg.)
  • Place all ingredients in a bowl and mix well.
  • Form into small or medium balls (small balls will yield 2 dozen cookies, medium balls will yield 1 dozen), flatten, and place on the cookie sheet.
  • Bake in the preheated oven about 12-15 minutes, until they are just starting to get golden brown. Enjoy!

These easy Baked Apple Oatmeal Cups are perfect for an easy and healthy breakfast throughout the week!

3 cups (300 grams) old-fashioned rolled oats
1 teaspoon baking powder
1 and 1/2 teaspoons ground cinnamon
1/4 teaspoon salt
1 cup (240 ml) milk ((almond or regular dairy milk work well))
2 large eggs
1/2 cup pure maple syrup
1 teaspoon vanilla extract
1 medium Granny Smith apple (, peeled, cored, and chopped (about 1 cup))

Steps:

  • Preheat the oven to 350°F (177°C). Spray a 12-count muffin pan very well with non-stick cooking spray and set aside.
  • Add the oats, baking powder, cinnamon, and salt to a large mixing bowl and mix until well combined.
  • In a separate mixing bowl, whisk together the milk, eggs, maple syrup, and vanilla extract until fully combined. Add the dry ingredients into the wet ingredients and mix until well combined. Add the chopped apple and gently mix it in.
  • Evenly distribute the mixture between all 12 cavities in the prepared muffin pan. Bake at 350°F for 25 to 27 minutes, or until the tops of the oatmeal cups are lightly golden brown and firm.
  • Remove from the oven and allow to cool in the pan for about 5 to 10 minutes, then remove the oatmeal cups and transfer to a wire rack to finish cooling.

2¼ cups quick oats
2 ripe bananas
1 cup natural peanut butter
¼ cup honey
1 tsp vanilla extract
1/8 tsp salt
1 tsp cinnamon
½ cup dried cranberries (chopped)
¼ cup pepitas (green pumpkin seeds) (toasted (see note))
⅔ cup chopped pecans (toasted (see note))

Steps:

  • In mixing bowl, mash bananas well with a fork.
  • Add peanut butter, honey, vanilla, salt and cinnamon, and stir until well-mixed.
  • Stir in oats, chopped cranberries, pepitas and pecans.
  • Drop by heaping teaspoon onto baking stone or lined baking sheet. Flatten slightly with back of spoon. Note: These cookies don't spread, so you can space them close together.
  • Bake at 325° for 14-16 minutes until tips start to brown.

2 1/2 cups water
1 apples, green chopped or 1 golden delicious apple, chopped
1/2 cup raw pumpkin seeds, flower seeds or 1/2 cup raw sunflower seeds
2 tablespoons organic flax seed oil (to taste)
1 tablespoon organic honey
nonfat yogurt, for topping (optional)

Steps:

  • Combine all ingredients except flaxseed oil and honey and simmer for 10 minute Turn off heat, cover and let steam for 5 minute Stir in flaxseed oil and honey. Top with nonfat yogurt if desired.
