This healthy cookie recipe is vegan and gluten free and is perfect for breakfast or a snack. You can also satisfy your sweet tooth without any added sugar!

Steps:
- Preheat the oven to 350 degrees.
- Lightly oil a baking sheet or line with parchment paper or a nonstick baking mat.
- Combine the flaxseed and water in a small bowl and give it a few minutes to gel. (Omit this step if you are using an egg.)
- Place all ingredients in a bowl and mix well.
- Form into small or medium balls (small balls will yield 2 dozen cookies, medium balls will yield 1 dozen), flatten, and place on the cookie sheet.
- Bake in the preheated oven about 12-15 minutes, until they are just starting to get golden brown. Enjoy!

APPLE CINNAMON BAKED OATMEAL CUPS
These easy Baked Apple Oatmeal Cups are perfect for an easy and healthy breakfast throughout the week!

- Preheat the oven to 350°F (177°C). Spray a 12-count muffin pan very well with non-stick cooking spray and set aside.
- Add the oats, baking powder, cinnamon, and salt to a large mixing bowl and mix until well combined.
- In a separate mixing bowl, whisk together the milk, eggs, maple syrup, and vanilla extract until fully combined. Add the dry ingredients into the wet ingredients and mix until well combined. Add the chopped apple and gently mix it in.
- Evenly distribute the mixture between all 12 cavities in the prepared muffin pan. Bake at 350°F for 25 to 27 minutes, or until the tops of the oatmeal cups are lightly golden brown and firm.
- Remove from the oven and allow to cool in the pan for about 5 to 10 minutes, then remove the oatmeal cups and transfer to a wire rack to finish cooling.

- In mixing bowl, mash bananas well with a fork.
- Add peanut butter, honey, vanilla, salt and cinnamon, and stir until well-mixed.
- Stir in oats, chopped cranberries, pepitas and pecans.
- Drop by heaping teaspoon onto baking stone or lined baking sheet. Flatten slightly with back of spoon. Note: These cookies don't spread, so you can space them close together.
- Bake at 325° for 14-16 minutes until tips start to brown.
