MUSTARD-MAPLE HAM STEAKS WITH CIDER-MADEIRA SAUCE



Mustard-Maple Ham Steaks with Cider-Madeira Sauce image

2 bay leaves
2 1-pound ham steaks (each about 1/3 to 1/2 inch thick), patted dry
2 1/2 cups apple cider
3 tablespoons pure maple syrup
2 tablespoons Dijon mustard
1/2 cup Madeira

Steps:

  • Preheat oven to 350°F. Place bay leaves in 15x10x2-inch glass baking dish. Place ham steaks side by side in dish, overlapping slightly if necessary. Pour 1 1/2 cups apple cider over ham steaks (cider will not cover steaks). Whisk 2 tablespoons maple syrup and mustard in small bowl to blend; spread over top of ham steaks, dividing equally. Sprinkle with pepper. Bake ham steaks 40 minutes.
  • Meanwhile, combine 1 cup apple cider, 1 tablespoon maple syrup and Madeira in medium saucepan. Boil until reduced to 1/2 cup, about 15 minutes.
  • Spoon sauce over ham and serve.

1/4 c dijon mustard
1/4 c honey
1/2 tsp liquid smoke flavoring

Steps:

  • 1. Place ham steak in an ungreased 13 by 9 inch baking pan; set aside. Mix remaining ingredients together and whisk together. Then pour over ham steak. Bake, uncovered, at 350 degrees for 30 minutes, basting often. I cooked mine in an electric skillet. I think I might increase the amount of liquid smoke next time to 3/4 teaspoon.

5 whole cloves
2 slices ham steak

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix water, brown sugar, Worcestershire sauce, and cloves in a baking dish. Arrange ham steaks in baking dish, coating with sugar mixture. Add more water as needed to cover ham.
  • Bake in preheated oven until ham is tender, 35 to 45 minutes.

1 1/2 cups filtered apple cider
2 tablespoons cider vinegar
1 teaspoon mustard seeds
1 teaspoon Dijon mustard
1 tablespoon olive oil
a 1-pound fully cooked bone-in ham steak (about 1/2 inch thick)
1 teaspoon grated peeled fresh gingerroot
2 tablespoons unsalted butter
1/4 cup raisins
1 tablespoon minced fresh flat-leafed parsley leaves

Steps:

  • Finely chop onion and in a measuring cup stir together cider, vinegar, mustard seeds, and mustard.
  • In a large heavy skillet heat oil over moderately high heat until hot but not smoking and sauté ham until golden and heated through, about 4 minutes on each side. Transfer ham to a platter and keep warm, covered.
  • In fat remaining in skillet cook onion over moderate heat, stirring occasionally, until golden, about 5 minutes. Add gingerroot and cook, stirring, 1 minute. Stir cider mixture and add to skillet. Boil sauce, stirring occasionally, until reduced to about 2/3 cup, about 5 minutes. Cut butter into 1/2-inch pieces. Add raisins to sauce and whisk in butter and parsley until butter is incorporated.
  • Pour sauce over ham.
