Easy and cheesy, my go-to casserole for action-packed mornings has made many appearances at holiday breakfasts, potlucks and even my daughter's college apartment to feed her hungry roommates. -Patty Bernhard, Greenville, Ohio

Number Of Ingredients 8

12 large eggs
1 cup 2% milk
1 teaspoon salt
1/2 teaspoon pepper
1 package (30 ounces) frozen shredded hash brown potatoes, thawed
2 cups cubed fully cooked ham (about 1 pound)
1 medium onion, chopped
4 cups shredded cheddar cheese

Steps:

  • Whisk together first 4 ingredients. Place a third of the potatoes in a greased 5- or 6-qt. slow cooker; layer with a third of each of the following: ham, onion and cheese. Repeat layers twice. Pour egg mixture over top. Refrigerate, covered, overnight., Cook, covered, on low 4-5 hours, until casserole is set and edges begin to brown. Turn off slow cooker. Remove insert; let stand, uncovered, 30 minutes before serving.

Here's what you need: crescent dinner rolls, mozzarella cheese, pepperoncinis, fresh basil, salami, ham, prosciutto, provolone cheese, salt, pepper, olive oil, balsamic vinegar

Number Of Ingredients 12

8 oz crescent dinner rolls, 2 cans
1 cup mozzarella cheese
½ cup pepperoncinis
¼ cup fresh basil
⅓ lb salami
⅓ lb ham
¼ lb prosciutto
8 slices provolone cheese, halved
salt, to taste
pepper, to taste
olive oil, optional, for the dip
balsamic vinegar, optional, for the dip

Steps:

  • Preheat the oven to 375˚F (190˚C).
  • Unroll cans of dough, separate into triangles.
  • On a large cookie sheet, place a bowl in the center (about 5 inches [12cm] in diameter). Arrange the triangles in a ring around the bowl, dough should overlap.
  • Layer cheese, pepperoncinis, basil, salami, ham, prosciutto, and provolone on each triangle closest to the ring.
  • Season with salt and pepper.
  • Bring the top of the triangle over the filling, and tuck the edges under the bottom layer of dough. Repeat around the ring until the entire filling is enclosed.
  • Bake for 30 minutes or until the dough is golden brown.
  • Serve with olive oil and balsamic.
  • Cool 5 to 10 minutes before cutting into serving slices.
  • Enjoy!

THE BEST OF COOKING by Arne Kruger & Annette Wolter has provided a wealth of new & tantalizing recipes for my personal cookbook that I have just found the time to share w/all of you. This is 1 I have not tried, but appears to be another ideal & easy way to use leftover ham you may have on hand or lurking in your freezer. Although described as an *ideal lunch dish* when served w/a selection of salad items, I see it also working well as part of breakfast or brunch fare. *Enjoy* (Time does not include time for ham mixture to sit as directed in Step 2 of prep)

Number Of Ingredients 9

8 ounces lean cooked ham, finely chopped
2 medium onions (finely chopped)
3 tablespoons fresh parsley (chopped)
2 tablespoons brandy
4 eggs
1/2 teaspoon salt
2 teaspoons paprika
1 pinch dry mustard (pinch of)
4 ounces cottage cheese (may use cream cheese)

Steps:

  • Preheat oven to 350°F (180°C).
  • Mix chopped ham, onion & parsley w/brandy & allow to sit for 20 minutes.
  • Whisk eggs w/salt, paprika, mustard & cottage cheese or cream cheese (I would use my immersion blender for this step).
  • Combine ham & egg mixtures & ladle into a well-buttered (or sprayed w/PAM) 2-pint fluted mold.
  • Stand mold in a roasting pan half-filled w/water & cook for 40 minutes.
  • Allow to cool till well-set & able to be easily handled. Then carefully turn out onto a serving plate, cut into cake-like wedges & serve.

Don't settle for ordinary ham and cheese sandwiches when you can make something deliciously different. The horseradish mustard dressing perfectly compliments the ham.

¼ cup butter, softened
2 tablespoons prepared horseradish mustard
2 tablespoons chopped onions
1 teaspoon poppy seeds
1 teaspoon dill seed
8 slices Swiss cheese
8 slices cooked ham
8 hamburger buns

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Combine butter, mustard, onions, poppy seeds and dill seed. Spread insides of buns with this mixture. Place a slice of cheese and a slice of ham inside each bun.
  • Wrap buns in foil and place in preheated oven. Bake for 15 to 20 minutes, until cheese has melted.

4 ounces ham (diced about 1 cup)
6 ounces shredded swiss cheese or 6 ounces cheddar cheese
1 cup of chopped broccoli
2 (8 ounce) cans refrigerated crescent dinner rolls
2 lemons
1 onion (chopped)
chopped fresh parsley

Steps:

  • Mix ham, broccoli & onion. place rolls on baking stone. arrange triangles slightly overlapping with wide ends 4 inches from edge of stone. (points will extend off the edge). roll wide end of dough to center to create a 5 inch opening.
  • mix all ingredients together except lemon. spoon mix evenly over dough.
  • bring points of triangle up over filling and tuck under dough at center to form a ring. (filling will show).
  • sprinkle parmesian cheese over ring.
  • bake at 375 for 28-30 minutes or until golden brown.
  • remove from oven.
  • squeeze ring with fresh lemon.
  • garnish with lemon slices (slice thinly, cut in half and fold across ring).
  • garnish with lemon wedges and fresh parsley.
