This tomato relish recipe combines tomatoes with onions and peppers for a bit of savory flavor, plus spices and brown sugar to add a nice note of sweet.

16 pounds tomatoes (medium )
12 onions (medium, finely chopped)
3 red peppers (finely chopped)
3 green peppers (finely chopped)
3 tablespoons salt
2 cups brown sugar (firmly packed )
2 cups vinegar (5% acidity)
1 tablespoon ground cinnamon
1 1/2 teaspoons ground allspice
1 1/2 teaspoons ground cloves

Steps:

  • Peel, core and chop the tomatoes. Combine the tomatoes, onions, peppers and salt in a large pot. Bring to a boil, reduce the heat to medium. Cook, uncovered, for 25 minutes. Add the remaining ingredients and reduce the heat. Simmer, uncovered, for 1 1/2 - 2 hours or until thickened.
  • Quickly pack into hot jars leaving 1/2 inch of headspace. Cover immediately with metal lids and screw on bands.
  • Process in a boiling water bath for 20 minutes.
  • Makes 12 - 1 pint jars or 24 - 1/2 pint jars.

500g minced beef
1 red chilli , deseeded and finely chopped
2 tbsp chopped coriander , plus small handful leaves, to serve
300g pack cherry tomatoes on the vine
4 tbsp olive oil
juice 1 lime
2 tbsp sweet chilli
small handful flat-leaf parsley leaves
1 small red onion , cut into wafer-thin slices
2 English muffins , toasted

Steps:

  • Heat oven to 200C/fan 180C/ gas 6. Mix the beef with the chilli and some chopped coriander, then season well. Shape into four patties about 2.5cm thick. Chill until needed.
  • Keeping the tomatoes on the vine, put them in a roasting tin. Drizzle over 1 tbsp of olive oil and season. Roast for 12-15 mins until just soft.
  • Heat 1 tbsp of oil in a non-stick frying pan. Then cook burgers on each side for 4 mins for rare or 5 mins for medium. For the relish, mix 2 tbsp of olive oil, the lime juice and sweet chilli sauce, parsley, coriander leaves and red onion. To serve, place a burger on a muffin half, add a branch of tomatoes and top with red onion relish.

for the burger:
3 lbs. fresh ground beef
1 cup fresh breadcrumbs
½ cup milk
½ cup fresh cilantro - chopped
¾ tsp. salt
½ tsp. black pepper
½ tsp. dried oregano
2 tablespoons worcestershire sauce
for the tomato onion relish:
½ cup of fresh cilantro - chopped
juice of ½ lemon
3 vine ripe tomatoes - blanched
1 sweet onion - sliced
2 cloves of garlic - chopped
2 tablespoons soy sauce
2 tablespoons of worcestershire sauce
¼ tsp. red pepper flakes
½ tsp. salt
¼ tsp. black pepper
2 tablespoons of olive oil

Steps:

  • 1. For the Burger: In a large bowl combine all of the above ingredients; mix well and form into desired sized hamburgers. Heat a large 10 inch frying and place the formed burgers. Do not overcrowd the pan. Depending on how thick you make the burgers will determine how long they should be cooked; also it depends on how you like to eat your burgers. For the Tomato Onion Relish: Bring a small sauce pot of water to a simmer and add the tomatoes. Let the tomatoes simmer for about 2-3 minutes. Remove the tomatoes and set aside to cool. Heat a medium sized frying pan with one tablespoon of olive oil and add the onion slices. Sauté the onions until they are transparent. Add the garlic and cilantro. Continue to sauté for another minute or two until the garlic is fragrant. Gently, remove the skin from the tomatoes and chop the meat from the tomatoes. Add the tomatoes to the onions and garlic; continue to sauté on a low heat. Add the seasonings, soy sauce, and Worcestershire sauce and lemon juice and sauté on low for another few minutes. Remove from the heat; place in a bowl and drizzle with a tablespoon of olive oil. Serve with the burgers.

1 lb Chuck roll, cubed
2 slices smoked bacon, chopped
1 tablespoon kosher salt
½ tablespoon toasted black peppercorns
1 tablespoon fresh thyme, chopped
1 clove garlic, thinly sliced
½ cup mayonnaise
2 ½ tablespoons ketchup
2 ½ tablespoons pickle relish
1 teaspoon white wine vinegar
1 teaspoon lemon juice
salt and pepper, to taste
potato roll, lightly toasted
iceberg lettuce, shredded
tomato, thinly sliced
onion, thinly sliced
american cheese
dill pickle chip

Steps:

  • In a medium bowl, combine cubed chuck roll, salt, black pepper, thyme, and sliced garlic. Stir to coat. Cover and refrigerate to cure overnight.
  • Prepare the sauce: in a small mixing bowl, combine the mayonnaise, ketchup, relish, vinegar, lemon juice, salt, and pepper. Whisk together. Refrigerate to bring flavors together.
  • Using a stand mixer fitted with meat grinder attachment, grind the cured meat, layering in pieces of chopped bacon throughout. (Ensure the meat and grinder attachments are very cold before grinding! Recommended that you place it in the freezer for a few minutes just before using.)
  • Lightly mix together the ground meat and then form into six, 3 ounce balls.
  • To a hot, oiled, cast iron skillet, over medium/high heat - add the balls and allow to cook slightly. Using two spatulas layered on top of one another, press down on the burger to form into thin patties. Continue to cook until the underside has browned and caramelized.
  • Flip the burgers and continue to cook until the second side just begins to brown. Top with cheese and remove from the skillet.
  • To assemble: Spread the burger sauce onto both halves of a toasted potato bun. On the bottom bun, layer lettuce, tomato, and a sprinkle of salt. Add one burger patty, thinly sliced onions, then the second burger patty. Place 4 pickles onto the top bun and place on top of the burger.
  • Enjoy!

1 pound ground sirloin
1/2 pound ground pork
1/2 pound ground veal
Salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
Rolls (recommended: Parker House)
16 dill pickles
Onion Relish, recipe follows
2 tablespoons extra-virgin olive oil
3 cloves garlic
2 onions, cut in 1/2 lengthwise and sliced thinly
Salt and freshly ground pepper
1/2 cup water
1/2 cup ketchup
2 tablespoons yellow mustard

Steps:

  • Heat a grill to high.
  • Combine all of the ground meat into a large mixing bowl. Shape into 16 (1-ounce) patties. Season patties generously with salt and pepper and drizzle with oil.
  • Cook burgers on a very hot grill for about 30 seconds on each side. If a smoky flavor is desired, you may place a lid on the grill during cooking. Serve the patties on Parker House rolls garnished with a dill pickle and Onion Relish.
  • Heat a large skillet over medium-high heat and add the olive oil and garlic cloves. Saute the garlic until lightly browned. Add the onions and continue to cook the mixture until golden brown. Season well with salt and pepper, add the water, stir, and bring to a boil, scraping up the caramelized bits on the bottom of the pan. Stir in ketchup and mustard. Simmer until thick. Remove from heat and let cool before serving with the burgers.
