Transform burgers into something stylish with roasted tomatoes and red onion relish

500g minced beef
1 red chilli , deseeded and finely chopped
2 tbsp chopped coriander , plus small handful leaves, to serve
300g pack cherry tomatoes on the vine
4 tbsp olive oil
juice 1 lime
2 tbsp sweet chilli
small handful flat-leaf parsley leaves
1 small red onion , cut into wafer-thin slices
2 English muffins , toasted

Steps:

  • Heat oven to 200C/fan 180C/ gas 6. Mix the beef with the chilli and some chopped coriander, then season well. Shape into four patties about 2.5cm thick. Chill until needed.
  • Keeping the tomatoes on the vine, put them in a roasting tin. Drizzle over 1 tbsp of olive oil and season. Roast for 12-15 mins until just soft.
  • Heat 1 tbsp of oil in a non-stick frying pan. Then cook burgers on each side for 4 mins for rare or 5 mins for medium. For the relish, mix 2 tbsp of olive oil, the lime juice and sweet chilli sauce, parsley, coriander leaves and red onion. To serve, place a burger on a muffin half, add a branch of tomatoes and top with red onion relish.

2 pounds freshly ground beef (preferably 80/20)
1/2 cup champagne vinegar
3 tablespoons mustard seed
1 tablespoon honey
1 teaspoon salt
1 tablespoon vegetable oil
3 medium onions, julienned
1/4 cup veal stock or store-bought low-sodium beef or chicken stock
8 very thin slices pancetta
Salt and freshly ground pepper
Salt and freshly ground pepper
4 brioche rolls
4 ounces Taleggio cheese, sliced
1 beefsteak tomato, sliced
1 head Bibb lettuce, leaves separated

Steps:

  • Preheat the oven to 350 degrees F. Preheat the grill to high heat.
  • Start by forming the meat into 4 patties about 3/4-inch thick. Refrigerate until ready to grill.
  • For the relish: Combine 2 cups water, the vinegar, seeds, honey and salt in a medium saucepan. Bring to a simmer and cook over medium-high heat until the liquid has reduced to a creamy consistency, about 12 minutes. Heat the oil in a medium skillet over medium heat. Add the onions and cook, stirring occasionally until caramelized and golden brown, about 20 minutes. Add the veal stock and cook until the skillet is dry, about 3 minutes. Stir the onions into the mustard seed mixture and reserve until needed.
  • Meanwhile, lay the pancetta on a baking sheet and bake until golden brown and crispy, 12 to 15 minutes.
  • Sprinkle the burgers liberally with salt and pepper and grill until medium rare, 4 minutes per side. Toast the buns on the grill and place 1 ounce of the cheese on top of each burger. Close the lid until the cheese melts and becomes gooey, about 30 seconds.
  • Place the burgers on the buns and top each with the relish and 2 slices of pancetta. Garnish with the tomatoes and lettuce and serve.

Heat a medium sized frying pan with one tablespoon of olive oil and add the onion slices. Sauté the onions until they are transparent. Add the garlic and cilantro. Continue to sauté for another minute or two until the garlic is fragrant. Gently, remove the skin from the tomatoes and chop the meat from the tomatoes. Add the tomatoes to the onions and garlic; continue to sauté on a low heat. Add the seasonings, soy sauce, and Worcestershire sauce and lemon juice and sauté on low for another few minutes. Remove from the heat; place in a bowl and drizzle with a tablespoon of olive oil. Serve with the burgers.

3/4 pounds yellow onions (about 2 medium), finely sliced
1 tablespoon butter
1 1/2 pounds roma tomatoes (about 6 medium), peeled, cored, seeded, and finely chopped
1/2 cup white sugar
1/4 cup light brown sugar
2 tablespoons juice from 1 lemon
2 tablespoon apple cider vinegar
1 teaspoon kosher salt
1/2 teaspoon red pepper flakes

Steps:

  • Melt butter in a 3-quart stainless-steel saucepan or saucier or a 4- or 5-quart enameled Dutch oven over high heat. Add onions and cook, stirring frequently, until bottom of saucepan is glazed in a pale brown fond, about 5 minutes. Add 2 tablespoons water and scrape up fond with wooden spoon. Continue to cook, stirring frequently, until fond has built up again, about 2 minutes longer. Add 2 more tablespoons water and scrape up browned bits. Repeat cooking, adding water, and scraping until onions are completely softened and a deep, dark brown, about 15 minutes total.
  • Add tomatoes, white sugar, brown sugar, lemon juice, vinegar, salt, and red pepper flakes in with the onions; stir to combine. Bring mixture to a boil, then reduce heat and simmer, stirring occasionally, until tomatoes have broken down and jam has thickened and developed a jammy consistency, 1 to 1 1/2 hours. Remove from heat. Transfer jam to an airtight container and store in refrigerator for up to 2 weeks.

4 large vine tomatoes, peeled and chopped
1 red onion, finely chopped
2 cloves of garlic, crushed
2 tablespoons of balsamic vinegar
1 tsp of grated fresh ginger
½ tsp of cinnamon
1 tablepoon of maple syrup (2 syns)
spray oil
salt and black pepper
Optional: add some chilli ifor a spicy alternative

Steps:

  • Spray a saucepan over a medium high heat with some spray oil
  • Add the onion, ginger and garlic and fry till softened.
  • Add the chopped tomato, maple syrup, balsamic vinegar and cinnamon, reduce heat and simmer until the tomatoes break down (approx 20-30mins)
  • Season as needed with salt and black pepper.
  • Store in a lidded jar in the fridge

1 teaspoon worcestershire sauce

Steps:

  • 1. soak the bread and eggs in a mixing bowl. Let stand while preparing remaining ingredients. Sauté onions and garlic in the skillet in butter over medium-high heat, about three minutes. Cool five minutes. Add parsley, Worcestershire, salt and pepper into bread mixture, then mash together.
  • 2. Mix bread mixture, cooled onion mixture, and ground beef. Divide evenly into four portions and shape to match bread shape. Cover and chill while preparing the relish. Preheat grill or grill pan to medium-high. Grill burgers on medium high to 160°, about 4 or 5 minutes on each side. Serve on slices of grilled French bread and top with tomato bacon relish.
  • 3. Tomato bacon relish: two strips thick sliced bacon, chopped 1/2 cup onions, chopped 1/4 cup Brown sugar 1/4 cup prepared yellow mustard 1/4 cup catsup 1/2 cup tomatoes, seeded and diced sauté bacon until crisp in a frying pan. Add onion and sauté three more minutes. Stir in sugar, mustard, and catsup. Add tomatoes and simmer one minute. Makes about 1 cup.

  • Place the hamburger in a large skillet with high sides (mine is 10 inches in diameter and about 3 inches deep), over fairly high heat. There's no need to add oil, and you can start with the skillet cold. Use a heat proof spatula to break up the meat, and move it around from time to time until it's browned. It doesn't have to be completely cooked at this stage, as it will continue to cook.
  • Add the onion and garlic, and stir for a couple of minutes, until the onions start to turn translucent. Now add the tomato paste, along with the basil, oregano, pepper and salt and and cook, stirring, for a minute or so (this mellows that harsh rawness). No worries if a dark crust is starting to form on the bottom of the pan ... that means flavour!
  • Stir in the can of tomatoes with their juices, scraping the bottom of the pan to loosen and incorporate all the goodness there into the mixture. Add the potatoes and water and stir again. Cover the pan and bring to a boil. Then reduce the heat to a simmer and cook for 25 minutes, checking a couple of times to make sure it's not sticking to the pan. Taste and adjust seasonings if necessary. Check a potato cube for doneness — ideally they'll be cooked through but not soft, but really, it's how you like your potatoes that counts! If the potatoes are still too firm, cook for about 5 minutes more, adding a bit more water if the mixture seems too dry. If the mix seems too juicy, finish cooking with the lid off.
