HAMBURGER STEAK WITH ONIONS AND GRAVY
An easy-to-make classic featuring tasty hamburger 'steaks' smothered in gravy and onions. Traditionally served with hot white rice or potatoes, it's a great way to dress up a pound of ground beef and you probably have all the ingredients on hand!

Steps:
- In a large bowl, mix together the ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic powder, and Worcestershire sauce. Form into 8 balls, and flatten into patties.
- Heat the oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned, about 4 minutes per side. Remove the beef patties to a plate, and keep warm.
- Sprinkle flour over the onions and drippings in the skillet. Stir in flour with a fork, scraping bits of beef off of the bottom as you stir. Gradually mix in the beef broth and sherry. Season with seasoned salt. Simmer and stir over medium-low heat for about 5 minutes, until the gravy thickens. Turn heat to low, return patties to the gravy, cover, and simmer for another 15 minutes.

HAMBURGER STEAK
This recipe is from my dad's side of the family. Given to us in 1993 which is very good fried or baked it's simular to Salisbury Steak.

- 1. Crush crackers in a large bowl, mix hamburger meat, egg, garlic powder, onion powder, salt and pepper to taste, and 1/2 pouch of brown gravy mix,thoroughly combine by hand.
- 2. Form into small patties and drench in flour to cover.
- 3. In a large skillet cook over medium heat until browned on both sides. Save drippings for gravy.
- 4. Mix brown gravy mix according to directions (1 1/2 pouches) and pour into skillet. Bring to a boil, it will begin to thicken. Add patties back into the gravy and simmer for 30 minutes. Add enough water to keep the gravy at perfect consistency.
- 5. Prepare noodles while simmering the meat. Drain and add butter to noodles to coat. Serve meat and gravy on top of the noodles garnish with chopped chives.

- In large bowl, combine ground beef, worcestershire, parsley, garlic, salt and pepper; shape mixture into 5 (1/2-inch thick) patties.
- Heat a large skillet over medium-high heat.
- Add beef patties, and cooke for 4-5 minutes per side or until browned.
- Remove patties from skillet, and set aside.
- Drain skillet, reserving 1 T skillet drippings.
- In the same skillet, heat reserved drippings over medium high heat.
- Add mushrooms and onion, and cook, stirring frequently, for 5-6 minutes, or until tender.
- Return beef patties to skillet.
- In small bowl, combine consomme, broth, and gravy mix; add to skillet.
- Bring to a boil over medium-high heat.
- Reduce heat, and simmer for 15 minutes, or until beef patties are cooked through and sauce is thickened.
- Serve immediately over hot cooked egg noodles, if desired.
- Garnish with fresh parsley, if desired.

HAMBURGER STROGANOFF

- In a large skillet, cook ground chuck, mushrooms, onion, and garlic over medium-high heat until beef is browned and crumbly; drain. Stir in flour, and cook, stirring frequently, for 2 minutes. Stir in broth and next 4 ingredients. Bring to a boil, reduce heat, and simmer, stirring occasionally, for 15 minutes. Stir sour cream and horseradish into beef mixture; cook for 5 minutes or until heated through. Serve over egg noodles, and garnish with sour cream and parsley, if desired.

- Whisk together the eggs, onion, beef base, and pepper in a bowl. Tear the bread into large pieces, and place into the bowl. Let the bread soak for a few seconds and add the ground beef. Mix the meat into the egg-bread mixture, and form into 8 patties.
- Heat a large heavy skillet over medium-high heat, and fry the patties until they are browned and the meat is no longer pink in the center, about 8 minutes per side. Set the patties aside.
- Remove the excess grease from the skillet, and whisk the mushroom soup, water, and Worcestershire sauce together in the skillet until smooth. Place the patties back into the skillet, spoon sauce over them to cover, and bring to a boil over medium-high heat. Reduce the heat to a simmer, and cook until the sauce is thickened and the flavors have blended, about 20 minutes.

PAULA DEEN'S BO BURGER
These burgers take a little more time than regular ones, but they are so worth it! I saw Paula Deen make this on TV and they just made my mouth water...and I'm not really that fond of hamburgers. ;-) But these are so juicy and wonderful...I hope you enjoy! Note: These took a little longer to make than the suggested 8-10 minutes per side, but I used 2 lbs of beef for really BIG burgers and I also used my electric skillet, so maybe that made a difference too.

- In a large bowl, season the ground beef with salt and pepper.
- Add 1/2 c cold water and mix by hand until meat has absorbed all the water (the water keeps the burgers moist and juicy).
- Shape into 4 patties.
- Heat a large cast iron skillet over medium-high heat.
- Spray the skillet with non-stick cooking spray.
- Add the burgers and cook to desired temperature, about 8-10 minutes per side for medium-well.
- Remove the burgers from the pan and set aside.
- Add the onion slices to the same skillet and cook until golden brown on both sides, being careful to keep them in whole slices; it should take about 3 minutes per side.
- Remove from pan and set aside.
- Crack the eggs into the same skillet and cook until the yolk is not runny. Carefully remove from pan.
- Lay the bottom of the 4 hamburger buns on a flat surface.
- Top each bun with a burger.
- Top the burgers with 1 egg, onion slice, 1 slice of cheese and then the top bun.
- Lightly press the sandwich together with your hand.
- Place the sandwiches into the pan and cook for 1 minute on each side to griddle the buns.
- Serve and enjoy!

SALISBURY STEAK RECIPE
We're cooking up Salisbury Steak with Onions and Gravy. It's one of those traditional Southern comfort food items you'll find on the menu at Mom and Pop style restaurants and diners throughout the South. Fresh ground beef, caramelized onions and a rich brown gravy make this one more delicious item to serve to your family and friends.

- In a mixing bowl, combine the Beef, Black Pepper, Salt, Garlic Powder, Worcestershire Sauce, Bread Crumbs and one whole Egg. Stir mixture together well.
- Shape into 4 equal sized patties.
- Heat a skillet over medium heat for about a minute, and then add Butter.
- Place meat patties in skillet and brown on both sides for about 4-5 minutes each. Remove from skillet and set aside.
- Add the sliced Onion into the skillet, right on top of the browned bits.
- Reduce the heat and cook the onions on medium-low heat until the onions turn translucent and brown. Don't rush this step. Cook the onions low and slow for about 20-25 minutes.
- Sprinkle 2 Tablespoons of flour over the onions. Stir. Let cook and brown for about 2 minutes.
- Add 2 cups of warm Water. Stir well. Raise the heat back up to about medium.
- Add 2 teaspoons of Beef Bouillon Granules. Stir Well.
- Place the meat patties back in the pan. Cover. Reduce heat just a little and let simmer for about 15 more minutes. Remove from heat and serve warm.
- Enjoy!

- Melt 4 tablespoons of the butter in a large skillet over medium heat. Add the mushrooms, onions, garlic, lemon juice, Worcestershire sauce and salt, and cook, stirring, until the mushrooms are tender. Stir in the parsley; pour the sauce into a small metal bowl or saucepan, cover, and keep warm. Melt the remaining 2 tablespoons of butter in the skillet. Cook the steaks over medium-high heat, turning them once, for 3 to 4 minutes on each side for medium. Serve the steaks with the mushroom sauce.
