BEEF PASTIES

2 pounds bacon, minced and cooked, drained
2 pounds ground beef, cooked and seasoned
4 cups cooked and small-diced potatoes
2 cups cooked and small-diced carrots
1 cup cooked and small-diced onion
1 cup English peas
1 tablespoon minced garlic
1 tablespoon salt
1 tablespoon ground pepper
1 teaspoon ground ginger
1 teaspoon grated nutmeg
4 sheets puff pastry
4 eggs, beaten

Steps:

  • For the filling: In a bowl, blend the bacon, beef, potatoes, carrots, onions, peas, garlic, salt, pepper, ginger and nutmeg, mixing well, ensuring not to break the peas. Hold cold until construction.
  • For the crust: Preheat the oven to 350 degrees F. Portion the pastry in 8 triangles, allowing the dough to soften. Next, brush the interior of the dough with egg wash. Fill with 2 to 3 ounces of filling. Bring the tip of the triangle to the edge to fold the sides and seal the pasties. Press the sides down to seal and bake for 20 to 25 minutes.

1 tablespoon extra-virgin olive oil
1 small yellow onion, diced medium
Coarse salt and ground pepper
2 garlic cloves, minced
1/2 pound ground beef
1 tablespoon smoked paprika, plus more for sprinkling
1 medium Yukon Gold potato, diced medium
1/2 cup golden raisins
All-purpose flour, for dusting
2 sheets frozen puff pastry, thawed

Steps:

  • Preheat oven to 400 degrees. In a large skillet, heat oil over medium-high. Add onion, season with salt and pepper, and cook until translucent, 5 minutes. Add garlic and cook until fragrant, 30 seconds.
  • Add beef and cook, breaking up meat with a wooden spoon, until browned, 5 minutes. Stir in paprika, potato, and raisins; season to taste with salt and pepper and remove from heat.
  • On a lightly floured work surface, gently roll out puff pastry sheets to smooth creases. Cut each sheet into 4 squares. Place 1/3 cup beef mixture in center of each pastry square. Brush edges lightly with water, fold over filling to form triangles, press to seal, and sprinkle with paprika.
  • Transfer to two parchment-lined rimmed baking sheets and bake until pastry is golden and puffed, 20 to 25 minutes. Let cool 10 minutes before serving.

1 tablespoon Olive Oil
1 Brown / Yellow Onion, diced
1 Carrot, peeled & diced
2 Celery Stalks, diced
2 Garlic Cloves, minced
500g / 1 lbs Beef Mince / Ground Beef
1 tablespoon All Purpose / Plain Flour
1 Potato, peeled & diced
1.5 cups Beef Stock
2 tablespoon Worcestershire Sauce
2 tablespoon Tomato Paste
1/4 cup Frozen Peas
3 sheets Frozen Puff Pastry
1 egg, lightly whisked

Steps:

  • Cook Savoury Mince following the instructions in this post.
  • Preheat the oven to 180C / 350F and a line two baking trays with baking paper or silicone mats.
  • Remove puff pastry sheets from the freezer, seperate and allow to thaw partially.
  • Use a round cookie cutter or a wide mouth mug to cut 4 rounds into each pastry sheet.
  • Spoon a tablespoon or so of savoury mince into the middle of each pastry round, brush the edges with the egg wash then bring the edges together to form a semi-circle. Crimp the edges together with your fingers to seal the filling inside.
  • Place pasties upright on the baking trays, and bake in the oven for 20 minutes, or until golden, puffy and cooked through.

We had lots of leftovers when we sampled Leona's pot roast in out test kitchen, so our staff came up with this recipe for fast-to-fix pasties. Just tuck the cooked roast beef, carrots, potatoes and onion into pie pastry-your family will be amazed at the tender and flaky results!

2 cups cubed cooked roast beef (1/4-inch pieces)
1-1/2 cup finely chopped cooked potatoes
1 cup beef gravy
1/2 cup finely chopped carrot
1/2 cup finely chopped cooked onion
1 tablespoon chopped fresh parsley
1/4 teaspoon dried thyme
1/2 teaspoon salt
1/8 to 1/4 teaspoon pepper
Pastry for double-crust pie (9 inches)
Half-and-half cream

Steps:

  • In a large bowl, combine the first 9 ingredients; set aside. On a lightly floured surface, roll out a fourth of the dough into an 8-in. circle. Mound 1 cup filling on half of circle. Moisten edges with water; fold crust over filling and press the edges with a fork to seal. , Place on an ungreased baking sheet. Repeat with remaining dough and filling. Cut slits in top of each; brush with cream. Bake at 450° for 20-25 minutes or until golden brown.

1 lb ground beef
1/4 c onion (diced)
1 (8 oz) can(s) mixed vegetable (drained)
1 c shredded cheddar cheese or mozzarella
1/4 c ketchup
1/2 tsp garlic salt
1/2 tsp onion powder
1/4 tsp pepper
1 Tbsp prepared mustard
enough pie crust to make 2 pies

Steps:

  • 1. Heat oven to 375 degrees F.
  • 2. Cook and stir the ground beef and onion in a large skillet until meat is browned. Drain off excess fat.
  • 3. Remove from heat and add remaining ingredients except the pie crust. Set aside.
  • 4. Prepare the pie crust. Divide into 8 equal parts. Roll each piece on a lightly floured surface into a 7" circle. Spoon about 1/4 cup of the meat mixture onto on half of the round. Making sure it's packed in to within a 1/2" on the edge of the crust round. Moisten the edges with water and gently fold over the unused side of the roll. Press edges together and crimp with a fork. Brush tops lightly with an egg mixture of 1 beaten egg and about 1/8 cup of water. Sprinkle lightly with salt.
  • 5. Place on an ungreased baking sheet and prick the tops with a fork. Bake for 30-35 until deep golden brown. Can pour brown gravy or sauce over the finished pies and serve.

Double the ground beef mixture (all ingredients except the cheese, mustard and puff pastry) to make a 2-in-1 Dinner. The same base makes our Sweet Potato Cottage Pie. OR if you've already prepared a batch of ground beef, skip down to the puff pastry part below.

Number Of Ingredients 14

2 tablespoons extra virgin olive oil
1 medium sweet onion, finely diced or shredded
2 cloves of garlic, minced
1 pound ground beef
2 tablespoons Worcestershire sauce
2 tablespoons of tomato paste (use ketchup in a pinch)
1 teaspoon salt
½ teaspoon pepper
½ teaspoon thyme
1/2 can beef stock or broth (14.5 ounce can)
1 package frozen puff pastry, thawed
1/2-3/4 cup extra sharp cheddar cheese, diced or shredded
3 tablespoons mustard (any kind)
Small bowl of water

Steps:

  • Set your oven to 400 degrees. If you haven't yet, pull out the puff pastry and set it on the counter to thaw.
  • In a large skillet cook the onions in oil for about 5 minutes. Add garlic and cook about 2 minutes. Add ground beef and brown, about 8 minutes. Combine Worcestershire sauce, tomato paste, salt, pepper, thyme AND stock. Bring to a boil and simmer for about 5 minutes until the sauce reduces. It should be very thick. If not, keep boiling.
  • Roll out your pastry dough on a floured surface and cut each piece into 4 squares. My package had 2 pieces and I made 8 squares. Slather each square with mustard. Then fill each square halfway with the ground beef mixture. Sprinkle the cheddar cheese on top. Dip your finger in the bowl of water and make a line all the way around each square, then STRETCH the pastry over the top, delicately. Crimp the edges with a fork.
  • Bake on a parchment lined sheet at 400 degrees F for 15 minutes. If you're doing 2 pans, rotate them halfway through.

1/4 cup onion, Chopped, 1 sm.
1 (8 ) can canned vegetables, drained
1 cup cheese or 1 cup cheddar cheese, shredded
1/4 cup catsup
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 tablespoon mustard, Prepared
1 (11 ounce) package pie crust mix

Steps:

  • Heat the oven to 375 degrees F.
  • Cook and stir the meat and onion in a large skillet until the meat is brown.
  • Drain off the excess fat.
  • Remove from the heat and stir in the remaining ingredients except the pie crust mix and set aside.
  • Prepare the pastry as for a 2 crust pie as directed on the package.
  • Divide the pastry into 8 equal parts.
  • Roll each part, on a lightly floured surface, into a 7-inch circle.
  • On half of the circle, spread about 1/4 cup of the meat mixture (packed) to within 1/2-inch of the edge.
  • Moisten the edge of the pastry with water and fold over the meat mixture, sealing the edges with a fork.
  • Place on an ungreased baking sheet and prick the tops with the fork.
  • Bake 30 to 35 minutes.
  • You can serve these as sandwiches or, if you prefer, place on a plate and top with gravy or sauce.
  • NOTE: You can substitute 1 cup of your favorite cooked vegetable for the peas or carrots in this recipe.

1 medium onion (finely chopped)

2 pounds ground beef
2 tablespoons tomato puree (or ketchup)
2 tablespoons breadcrumbs (or matzo meal)
1 large egg (lightly beaten)
1 tablespoon oregano
1 tablespoon salt
1/2 tablespoon pepper
1 sheet puff pastry (pareve, thawed)
1 large egg yolk (beaten)
1 tablespoon sesame seeds (more or less as needed)
Optional: prepared marinara sauce

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F/200 C/Gas 6. Line a rimmed baking sheet with parchment paper .
  • Heat the oil in a large, heavy skillet over medium heat. Add the onion and saute just until soft and translucent, about 4 to 6 minutes. Add the garlic and saute for about 1 minute more or until fragrant. Remove from the heat and set aside.
  • In a large bowl, mix together the ground beef, tomato puree or ketchup, breadcrumbs or matzo meal , egg, oregano, salt, and pepper. Stir in the onion and garlic mixture.
  • Roll out the puff pastry until thin. Spread the meat mixture lengthwise on the dough, leaving a 1-inch border on all sides. Fold in the sides of the dough over the meat. Then, roll the dough up over the meat, like a jelly roll.
  • Place the strudel on the prepared baking pan. Brush the strudel with the egg yolk, and sprinkle evenly with sesame seeds.
  • Bake for 40 minutes or until the pastry is puffed, crisp and golden and the filling is cooked through. Remove from the oven and allow the strudel to rest 10 minutes, then cut and serve warm. Offer warm marinara sauce on the side if desired.
  • Serve and enjoy. Note: serve the strudels whole for a family-style meal. Or for a more elegant presentation, plate individual slices atop your favorite tomato-based sauce.

1/2 of a 17.3-ounce package Puff Pastry Sheets (1 sheet), thawed
1 pound lean ground beef
1 large onion, coarsely chopped (about 1 cup)
1/2 teaspoon garlic powder
1 can (10 1/4 ounces) Beef Gravy or 1 1/4 cups Swanson® Beef Gravy
1/4 cup Worcestershire sauce or steak sauce
10 ounces frozen mixed vegetables (carrots, green beans, corn, peas), thawed (about 2 cups)

Steps:

  • Set the pastry out to thaw. Heat the oven to 400°F.
  • Season the beef as desired. Heat a 12-inch skillet over medium-high heat. Add the beef, onion and garlic powder and cook until the beef is well browned, stirring often to separate meat. Pour off any fat.
  • Stir the gravy, Worcestershire and vegetables in the skillet and cook until the mixture is hot. Pour the beef mixture into a 9-inch deep-dish pie plate.
  • Unfold the pastry sheet and place it over the beef mixture. Fold the edges of the pastry under itself to fit the pie plate (this doubled edge makes for a nicer-looking crust). Using a fork, crimp the edge of the pastry to the edge of the pie plate (or you can flute the pastry edge with your fingers).
  • Bake for 25 minutes or until the pastry is golden brown.
