FAVORITE HAMBURGER NOODLE BAKE



Favorite Hamburger Noodle Bake image

This is an old family favorite I made when my boys were growing up. There were never any leftovers.-Patricia Teller, Lewiston, Idaho

Yield 2 casseroles (4 servings each).

Number Of Ingredients 10

5 cups uncooked egg noodles
2 pounds ground beef
1 cup chopped onion
1/2 cup chopped green pepper
2 cans (10-3/4 ounces each) condensed tomato soup, undiluted
2 cups shredded cheddar cheese
1-1/2 cups water
1/2 cup chili sauce
1-1/2 cups soft bread crumbs
3 tablespoons butter, melted

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions until al dente; drain. In a large skillet, cook the beef, onion and green pepper over medium-high heat for 10-12 minutes or until meat is no longer pink; drain. Stir in the noodles, soup, cheese, water and chili sauce. Transfer to 2 greased 8-in. square baking dishes., Toss bread crumbs and butter; sprinkle over casseroles. Bake, uncovered, 35-40 minutes or until bubbly and golden brown. Freeze option: Cool unbaked casseroles; cover and freeze up to 3 months. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Cover casserole with foil; bake as directed, increasing covered time to 45-50 minutes or until heated through and a thermometer inserted in center reads 165°. Uncover; bake 10-15 minutes longer or until golden brown.

2 tablespoons finely chopped onion
1 can (8 ounces) tomato sauce
1/4 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon garlic salt
Dash pepper
1/4 cup cream-style cottage cheese
2 ounces cream cheese, softened
1 tablespoon thinly sliced green onion
1 tablespoon chopped green pepper
1 tablespoon sour cream
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions. , Meanwhile, in a large skillet, cook beef and onion until meat is no longer pink; drain. Remove from heat; stir in tomato sauce, sugar, salt, garlic salt and pepper. , In a small bowl, combine cottage cheese, cream cheese, green onion, green pepper and sour cream., Drain noodles; place half of noodles in a greased 1-qt. baking dish. 1 onion, chopped
2 cups sour cream
2 cups canned whole kernel corn, drained
1 (10.75 ounce) can cream of mushroom soup
1 (10.75 ounce) can cream of chicken soup
1 (6 ounce) package egg noodles
salt and ground black pepper to taste
1 (32 ounce) bag shredded Cheddar cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Cook and stir beef and onion together in a large skillet over medium-high heat until the beef is browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Stir ground beef mixture, sour cream, corn, mushroom soup, chicken soup, and egg noodles together in a large bowl; season with salt and pepper and spread the mixture into a 13x8-inch baking dish.
  • Bake in preheated oven until the egg noodles are tender, about 45 minutes. Sprinkle cheese over the top of the casserole and continue baking until the cheese is melted, 10 to 15 minutes more.

1-1/2 pounds lean ground beef (90% lean)
2 garlic cloves, minced
3 cans (8 ounces each) tomato sauce
1/2 teaspoon sugar
1/2 teaspoon salt

1 package (8 ounces) reduced-fat cream cheese
1 cup reduced-fat ricotta cheese
1/4 cup reduced-fat sour cream
3 green onions, thinly sliced, divided
2/3 cup shredded reduced-fat cheddar cheese

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions. , Meanwhile, in a large nonstick skillet over medium heat, cook beef until no longer pink. Add garlic; cook 1 minute longer. 1 lb ground beef
1/2 cup chopped onion
1/4 cup chopped green onion
1 (10 3/4 ounce) can undiluted condensed tomato soup
1 cup shredded cheddar cheese
3/4 cup water
1/4 cup chili sauce
3/4 cup soft breadcrumbs
1 1/2 tablespoons butter, melted

Steps:

  • Cook noodles according to package directions until almost tender; drain. In a large skillet, cook beef, onions and the green pepper over medium heat for 10- 12 minutes or until beef is no longer pink; drain off fat. Stir in noodles, soup, cheese, water and chili sauce. Transfer to a greased 8 inch square baking dish.
  • Toss bread crumbs with melted butter; sprinkle over casserole. Bake uncovered, at 350°F for 35 to 40 minutes or until bubbly and golden.

This is my variation on "Grandma Dinner" served at my mom's house to her happy, hungry grandkids. It is homey, comforting fare... not gourmet, not too spicy, but quite satisfying when you're in the mood for a delicious ground beef casserole. Perfect with a hunk of crusty bread and a salad.

8 ounces curly egg noodles
1 lb lean ground beef
1 medium purple onion, chopped fine
1 medium red pepper, chopped fine
2 garlic cloves, minced
3/4 teaspoon salt
1/4 teaspoon pepper
2 teaspoons Worcestershire sauce
1 (8 ounce) can tomato sauce
1 (14 1/2 ounce) can Italian-style diced tomatoes
2 tablespoons water
1 teaspoon dried oregano
3 tablespoons chopped fresh basil (or 1 t. dried)
1 teaspoon chili powder
1 cup shredded sharp cheddar cheese
chopped fresh parsley (to garnish) (optional)

Steps:

  • Cook and drain noodles according to package directions. Set aside.
  • In a large skillet, brown ground beef, onion, red pepper and garlic over medium-high heat. Drain fat.
  • To ground beef mixture in skillet, add salt, pepper, Worcestershire sauce, tomato sauce, diced tomatoes, water, oregano, basil and chili powder. Stir to mix well.
  • Add noodles to ground beef mixture. Mix.
  • In buttered 9x13" baking dish, layer half of ground beef/noodle mixture.
  • Sprinkle cheddar cheese over all evenly.
  • Top with remaining ground beef/noodle mixture.
  • Cover with foil. Bake at 350 for 40 minutes.

2 medium red onions, chopped
1 small green pepper, chopped
1 1/2 lbs 95% lean ground beef, raw
29 ounces canned diced tomatoes
1/3 cup flat leaf parsley, chopped
1/4 teaspoon black pepper
1 1/2 cups low-fat cheddar cheese, shredded
3 3/4 ounces ritz reduced-fat crackers, approx 35

Steps:

  • Preheat the oven to 350 degrees.
  • Cook the noodles accordign to the package directions, omiting the salt if desired.
