Steps:

  • In a large saucepan, cook beef over medium heat until no longer pink; drain. Stir in the mixed vegetables, tomatoes, broth and pepper. Bring to a boil; add macaroni. Reduce heat; cover and simmer for 8-10 minutes or until macaroni and vegetables are tender.

Steps:

  • In a large dutch oven or other soup pot, saute onion and garlic in oil until soft, about 10 minutes.
  • Add meat and cook until no pink remains.
  • Add remaining ingredients and bring to a boil.
  • Reduce heat to medium-low and cook an additional 15-20 min until macaroni is cooked through and flavors have had time to meld.

Steps:

  • In a large soup pot brown beef and onion until no pink remains. Drain any fat.
  • Add broth, tomatoes, tomato paste, Worcestershire sauce, and seasonings. Bring to a boil. Simmer 5 minutes.
  • Stir in macaroni noodles and vegetables, simmer an additional 8 minutes or until macaroni is tender. Season with salt & pepper to taste.

1 1/2 lbs lean ground beef
1 medium white onion diced
2 tsp minced garlic
1 28 oz can diced tomatoes
1 10.75 oz can condensed tomato soup
4 cups beef broth
1 tsp dried thyme
2 bay leaves
2 cups frozen vegetables
1 tsp white sugar if your tomatoes are too acidic
1/2 tsp black pepper
2 cups elbow macaroni cooked

Steps:

  • Fry the ground beef and onions together in the bottom of a large soup pot until the ground beef is cooked and the onions are translucent. Add in the garlic and fry until brown. Drain the fat and return the pot to the stove.
  • Stir in the tomatoes, tomato soup, beef broth, bay leaves, thyme, frozen vegetables and pepper.
  • Simmer the soup on low heat until the meat has softened and the vegetables are cooked, around 40 minutes.
  • Remove the bay leaves. Stir in the cooked macaroni and let it warm up. Ladle into bowls and serve.

1 lb low fat hamburger
1/2 Tbsp minced garlic
1/2 c chopped onion
1/2 c chopped celery
1/2 tsp salt
1/2 tsp pepper
1/2 tsp marjoram (optional)
1 can(s) 14.5 oz can diced tomatoes
1 can(s) 10.5 oz can condensed tomato soup
1/2 Tbsp chili powder (more depending on how spicy you want it, can also use hot sauce)
2 can(s) 15 oz cans kidney beans or white beans, or one of each
3 c cooked elbow macaroni

Steps:

  • 1. In a frying pan on med-high heat, cook and crumble hamburger until done.
  • 2. Add garlic, onion, celery, salt, pepper and marjoram. Lower heat to medium, cook 15 minutes or until onions are soft and transparent.
  • 3. While cooking hamburger mixture, turn a crock pot on medium-high heat and add tomatoes with juice and tomato soup (use a small amount of water to rinse can and add to crock pot), stirring occasionally, bring to a soft boil.
  • 4. Into tomato mixture, add chili powder, beans and hamburger mixture. Cover and return to a soft boil stirring occasionally. Reduce heat, cover and simmer for at least an hour, but the longer it simmers, the better the taste. I like to simmer for about 4 hours.
  • 5. Approximately ½ hour before serving, add 2 to 3 cups of cooked elbow macaroni to crock pot. Because the macaroni will soak up the juice, add water as necessary,depending on if you want more of a soup or stew consistency.

1 package (7 ounces) elbow macaroni, cooked and drained
2 cups shredded reduced-fat cheddar cheese, divided

1 medium green pepper, diced
1 medium onion, finely chopped
1/4 teaspoon garlic powder

Talk about comfort food, this beefy macaroni and tomato soup is seriously the best thing I have tasted all fall! There's a reason it's a timeless classic!

1 pound ground beef
1 cup onion diced
3 cloves garlic minced
6 cups very strong beef broth
1- 28 ounces can Chopped Tomatoes
1- 28 ounces can whole Tomatoes
1/2 cup ketchup
1 1/2 tablespoons Worcestershire sauce
1-2 tablespoons brown sugar (to taste if you have a sweeter ketchup you may not need it)
1 teaspoon Italian seasoning
3 cups cooked elbow macaroni OR 2 cups dry macaroni to add in at the end
salt and pepper as desired

Steps:

  • In a medium frying pan, brown the ground beef, onion and garlic until ground beef is no longer pink. Drain the grease (I also like to rinse it with hot water to remove most of the grease) and place in a large crockpot.
  • Add the broth, cans of chopped and whole tomatoes, Worcestershire, ketchup,brown sugar (if wanted) and Italian seasoning. Add more sugar and Worcestershire to taste if needed. Place the lid on the crockpot and cook on low for 8-10 hours.
  • When you are ready to serve, either add the dry macaroni and let cook for 20-25 minutes OR add cooked macaroni. Let the macaroni heat through and serve!
  • Press the saute button and fry the ground beef and onions until the beef is no longer pink. Add in the garlic. Fry for another minute or so. Drain the grease.
  • Use the Instant Pot like the slow cooker, using the slow cook button and the instructions above OR
  • Add in the remaining ingredients except for the macaroni. Cook on the SOUP setting for 10 minutes. ( this really helps get the beef flavor going.) Release the pressure manually.
  • Add the DRY macaroni, (not cooked or it will be mush!) then cook for 10 minutes on the SOUP setting again. Release manually or with the NPR ( naturally)
  • Serve and enjoy!

1 pound ground beef (80/20 is perfect for this)
1-2 Tablespoons olive oil if necessary, (depends on how fatty your meat is)
1 small-to-medium onion,diced (about 3/4 cup)
3 cloves minced garlic
kosher salt and freshly ground black pepper, to taste
3/4 teaspoon Italian seasoning blend of your choice
1 28 oz can whole tomatoes and their juice
3 oz softened cream cheese, (eyeballing it is fine)
1/2-3/4 cup sour cream, (ditto--a huge serving spoonful will do nicely)
1 pound pasta short pasta of your choice, cooked to al dente (elbows, shells, penne, fusilli, rigatoni, wagon wheels, radiatore, cavatappi, etc)

Steps:

  • Place the ground beef in a heavy skillet to brown, breaking it up with a spatula. If the meat is on the lean side, add a tablespoon or two of olive oil to the pan.
  • Once the meat is about halfway done (some will be browned and some still pink or red), add the onion and garlic.
  • Season liberally with salt and pepper.
  • Cook until onions and garlic are softened and meat is completely cooked.
  • Add the tomatoes and softened cream cheese
  • Stir around so the cream cheese melts evenly into the tomatoes.
  • Let simmer for about ten minutes or so.
  • With the heat on low, stir in the sour cream.
  • Taste and adjust the seasonings.
  • Fold the sauce into your freshly drained pasta.
  • Serve as-is or spoon into individual ramekins or a big old casserole.
  • Bake at 350F until the pasta on top has a bit of crunch to it and the casserole is bubbling all around the sides.
  • Let sit for ten minutes before serving.
  • Enjoy!

1 can (14 to 14.5 ounces) beef broth
1 package (16 ounces) frozen mixed vegetables
1 bay leaf
1 cup uncooked macaroni or spaghetti broken into 1-inch pieces

Steps:

  • In a stockpot over medium-high heat, add the olive oil. Crumble up the ground beef and add it to the pot, breaking it up with a wooden spoon. Add the salt and pepper and additional seasoning if you like.
  • Continue to cook, giving it a stir from time to time, until the ground beef is cooked through and browned all over. This will take about 3 to 5 minutes.
  • Stir in both cans of tomatoes, the broth, the frozen vegetables and the bay leaf. Then fill both tomato cans with water and add to the pot. Stir everything together and let the soup come up to a boil.
  • Give it another stir then reduce the heat to medium-low, cover the pot and let the soup simmer for at least 20 minutes and up to 1 hour if you have the time.
  • Stir in the macaroni and cover the pot again. Let the soup simmer until it has thickened up a bit and the pasta is al dente. This will take about 5 to 10 minutes depending on the type of macaroni you are using.

  • Brown the beef, onion and garlic in a large pot over medium-high heat. Drain, and return to pot.
  • Add carrots, celery, tomatoes, green beans, potatoes, tomato paste, broth, water, bay leaf, oregano, thyme, red pepper flakes, ½ teaspoon salt and ¼ teaspoon pepper. Bring to a boil. Reduce heat to low, cover and simmer until potatoes are tender (approximately 15-20 minutes). Remove from heat; stir in parsley. Season with additional salt and pepper, if necessary. Remove bay leaf before serving.
