COPYCAT HAMBURGER HELPER RICE ORIENTAL
I have such fond memories of eating Hamburger Helper Rice Oriental as a kid, and I was devastated when General Mills discontinued this yummy product back in 2007. There's a campaign on social media to bring this flavor back, but until they do, I've created my own. If you use the exact brands and products I listed below, you'll get something that tastes nearly identical to the original. To make it healthier, I also add chow mein veggies and substitute ground turkey instead of ground beef, but that does change the flavor slightly. Enjoy!

- Tip 1: Be sure to use extra lean ground beef (or chicken) so that there won't be any fat to drain. If you drain off any fat, you'll also drain off seasonings.
- Tip 2: The rice you choose is very important to the authentic flavor of the original, but you can substitute brown rice or Jasmine rice. Just be sure to thoroughly rinse the rice and adjust the water and cooking time according to the rice you choose. My recipe is specifically written for Uncle Ben's Original long grain white rice. Do not use Minute Rice or instant rice, as it will be mushy.
- Tip 3: This recipe is very high in sodium, so you can substitute low sodium ingredients, but it won't taste the same. This may not be a good recipe for a person who is on a low sodium diet.
- In a large skillet, add ground beef, chopped onion, onion powder, garlic powder, and seasoning salt. Cook until onions are soft and meat is browned. Do not drain.
- Add all remaining ingredients to the skillet and cook in medium-high heat until the mixture starts to boil. Turn heat down to low, cover with a tight fitting lid, and simmer for 15 minutes. No peeking! If any water remains, uncover and cook a minute or two more, and then turn off the heat. DO NOT OVERCOOK or the rice will turn mushy.
- Let the skillet rest for 5 minutes to absorb remaining moisture. Stir and serve.
- Tip 4: Dress it up! I like to add a can of chow mein veggies, a can of sliced water chestnuts, and a can of sliced mushrooms. These veggies are fully cooked during the canning process, and you don't want them to get mushy, so add them at the very end of the cook time, before the resting period. Stir them in and let it rest.
- Tip 5: Top it off! Sprinkle with sliced green onions, or cashews, or slivered almonds, or sesame seeds, for a little extra crunch and flavor.

- In a large skillet set over medium heat, brown ground beef and garlic; drain grease. Stir in paprika, chili powder, garlic powder, onion powder, sugar, salt, and pepper. Mix in diced tomatoes, beef broth, and macaroni; heat to boiling. Reduce heat to a simmer and cover pan. Simmer for 12 to 14 minutes, stirring occasionally, or until pasta is tender.
- While the beef/macaroni mixture is cooking, prepare the cheese sauce by placing a medium pot over medium heat. Melt butter. Use a whisk to stir in flour, whisking continuously until light golden brown, about 2 minutes. Continue to whisk while slowly and gradually adding milk. Whisk until sauce is smooth and thickened, between 5 to 10 minutes. Remove pot from heat. Add grated cheese, 1/2 cup at a time, stirring until completely melted and smooth before adding more. Once all cheese has been incorporated and the cheese sauce is smooth, stir in garlic salt and freshly ground black pepper, to taste.
- Once the macaroni is done, pour the cheese sauce over the ground beef mixture and stir to combine. Serve immediately.

- Cook the beef. In a large skillet cook the ground beef over medium heat until it's no longer pink and starts to brown. Drain off any excess fat, if needed. If using extra lean ground beef there won't be any excess fat to drain.
- Incorporate onion, garlic and seasoning. Add the chopped onion and minced garlic to the skillet and stir. Season with salt and pepper, Italian seasoning and cook until the onion gets soft and translucent, about 3 minutes.
- Add liquids and pasta. Add the marinara sauce, pasta, chicken broth and stir everything together. Bring to a boil then turn the heat down to low. Cook for about 15 minutes or until the pasta is cooked through, most of the sauce should be absorbed as well.
- Finish the dish. Stir in the cheese and cook for another 30 seconds to a minute until the cheese melts.
- Garnish and serve. Garnish with parsley and serve.

- Cook the large elbow macaroni according to the directions on the bag and drain (do not rinse).
- Add the ground beef to a large cast iron skillet (this browns very well) and brown until a deep brown crust appears before breaking the beef apart.
- Stir the ground beef and brown until a deep crust appears on about 50 or so percent of the beef.
- Remove the beef (you can leave the fat) and add the butter and the onions and bell peppers and mushrooms.
- Let brown for 1-2 minutes before stirring, then let brown for another 1-2 minutes before stirring again.
- Add the beef back into the pan.
- In a small cup mix the beef broth and cornstarch together
- Add the ketchup, Worcestershire sauce, salt, black pepper, beef broth/cornstarch mixture into the pan.
- Cook until the mixture is only slightly liquidy (about 75% of the mixture is above liquid), 3-5 minutes.
- Add the pasta back to the pan and mix together gently.
- Turn off the heat, add in the provolone cheese.
- Top with mozzarella cheese before serving.

- Heat the oil in a large skillet over medium-high heat and brown the ground beef until no pink remains. Add the onions and cook until softened, about 5 minutes. Stir in the tomato paste, seasonings and flour. Pour in the milk and broth and stir. Stir in the macaroni.
- Bring to a boil then reduce to medium-low, cover and simmer for 10-12 minutes or until the macaroni is done. For al dente check after 9 minutes.
- Stir in the Cheddar cheese until melted.
- Serve immediately garnished with some chopped fresh parsley if desired.

HAMBURGER HELPER® BEEF TACO & CHEESE COPYCAT!
I just made this on a whim...why I have no idea but it was awesome and you can't tell a difference from the boxed stuff *yuck* It's soooo much cheaper to make it from scratch! I use Penzey's Taco seasoning but they advertise Old El Paso on the box so I assume that's what they use (could also use your own!). Also the noodles are an approximation since I kinda didn't pre-measure them I grabbed a couple of handfuls to fill up my skillet lol...same with the cheese, I had a half bag of "taco seasoned" shredded cheese left over and just threw it in there too. My husband didn't believe I made it from scratch! He was looking all over for the box haha

- Brown ground beef and cook with diced onions. After the beef is cooked drain and rinse.
- Put back in the pan and add and mix well the seasoning, milk, water and cheese let it come to a slight boil.
- Add the egg noodles, let the pan simmer for about 10 minutes until egg noodles are cooked and sauce has thickened.
