CHEESY HAMBURGER CASSEROLE

Just as easy to make as Hamburger Helper and you can control the ingredients. Great weekday meal and the kids love it!

Number Of Ingredients 11

1 1/2 pounds lean ground beef
1 large onion, diced
1 tablespoon canola oil
salt, to taste
pepper to taste
1/2 teaspoon oregano
2 cloves chopped garlic
1/2 teaspoon paprika
one 28-ounce can pureed tomatoes, or your favorite sauce
16 ounce box macaroni noodles
1/2 cup each grated cheddar and mozzarella cheeses

Steps:

  • Sweat the onions in the oil with a three-fingered pinch of salt. Add the beef and cook it, breaking it up as you do. Add another three-fingered pinch of salt or two, along with the dry seasonings. Add the tomatoes and bring to a simmer, then reduce the heat to low and cook for an hour.
  • Cook the macaroni in boiling water till it's half done. Drain it and add it to the tomatoes. (I wanted this to stretch into two meals, so I used the whole box, but if you want your dish to be very tomatoey and beefy, you might want to add only half the macaroni). Stir it into the sauce. Taste it and add cheese and cover or transfer it to a large baking dish and cover it with foil. It can be refrigerated for up to two days, or frozen a few weeks.
  • If refrigerated bake it in a 400 degree oven till it's piping hot (about 45 minutes if it's cold to room temperature). Just before you're ready to eat, remove the foil, cover macaroni with the cheese and broil till the cheese is bubbly.

Number Of Ingredients 15

2 tablespoons olive oil
1 pound 80/20 ground beef
½ cup chopped onion
2 cups prepared tomato sauce
1 teaspoon sugar
1 teaspoon kosher salt
¼ teaspoon garlic powder
¼ teaspoon freshly ground black pepper
4 cups uncooked egg noodles (any size)
1 cup cottage cheese
8 ounces softened cream cheese
¼ cup sour cream
1/3 cup chopped scallions, tops and bottoms
¼ cup green bell pepper chopped
½ cup Parmesan cheese, grated

Steps:

  • Preheat oven to 350 degrees.
  • In a large skillet, brown beef and chopped onion in olive oil. Drain off fat and discard.
  • Add tomato sauce, sugar, salt, garlic powder and black pepper, mix then remove from heat. Set aside.
  • Cook egg noodles to just under al dente. Drain and set aside.
  • While noodles are cooking, in a large bowl mix cottage cheese, cream cheese, sour cream, scallions and bell pepper. Mix to combine.
  • In a 2-quart rectangular casserole dish (ours was 11x7x1½ inches in size), spread half the noodles. Top with half the beef sauce. Cover with all of the cheese mixture. Cover with remaining noodles and remaining beef sauce then top with Parmesan cheese.
  • Bake uncovered for 30 minutes and serve.

½ pound lean ground beef, or more to taste
½ small onion, minced
1 teaspoon garlic powder
1 teaspoon onion powder
1 pinch salt and ground black pepper to taste
2 cups water
2 cups elbow macaroni
8 ounces reduced-fat processed cheese food (such as Velveeta®), cut into small pieces
2 tablespoons reduced-fat sour cream, or more to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, garlic powder, onion powder, salt, and black pepper in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Return skillet to burner over high heat. Add water; cover skillet and bring to a boil. Stir macaroni into the boiling water-ground beef mixture; cover and lower heat to medium. Cook, keeping covered, for 5 minutes. Stir, cover, and cook until macaroni is tender, about 5 more minutes.
  • Stir processed cheese food into ground beef-macaroni mixture until melted. Remove from heat; stir in sour cream.

I think I got this out of an old Mormon cook book. I'm not Mormon myself, but they sure had some good recipes. Alternative to Hamburger Helper! Makes quite a bit.

1 lb ground beef
1/2 cup onion, chopped
2 (8 ounce) cans tomato sauce
1 teaspoon sugar
3/4 teaspoon salt
1/4 teaspoon garlic salt
1/4 teaspoon pepper
4 cups uncooked egg noodles
1 cup cream-style cottage cheese
1 (8 ounce) package cream cheese, softened
1/4 cup sour cream
1/3 cup green onion, sliced
1/4 cup parmesan cheese, shredded
1 green pepper, chopped (optional)

Steps:

  • In large skillet, cook meat and onion until meat is lightly browned and onion is tender.
  • Stir in tomato sauce, sugar, salt, garlic salt, and pepper.
  • Remove from heat.
  • Meanwhile, cook noodles according to package directions and drain.
  • Combine cottage cheese, cream cheese, sour cream, green onion and optional green pepper.
  • Spread 1/2 the noodles in a 9 x 12 pan; top with a little meat sauce then cover with cheese mixture.
  • Add remaining noodles and meat sauce.
  • Sprinkle with Parmesan cheese.
  • Bake at 350F for 30 minutes.

We like to describe it as a poor mans lasagna. My mom came up with this recipe years ago; I don't know where she found it and it was always a treat when she made it. It is always better the next day after the flavors get a chance to meld together. You can pretty much change or add cheese as you desire. I also double the tomato sauce recipe because it seems like I never have enough. This is great to make large batches and freeze.

1 lb ground chuck
1 medium onion
2 (8 ounce) cans tomato sauce
1 teaspoon sugar
3/4 teaspoon salt
1/4 teaspoon garlic salt
1/4 teaspoon ground pepper
4 cups uncooked medium egg noodles (I just use one bag)
1 cup cottage cheese
1 -8 ounce cream cheese
1/2 cup sour cream
1/2 cup ricotta cheese
1/2 cup green onion, chopped
1/4 cup green pepper, chopped
1/4 cup parmesan cheese (optional)

Steps:

  • Brown ground meat with the first 6 ingrediants. Once the meet is browned (fully cooked) let mixture simmer for 15 - 20 minutes, stirring occasionally
  • Cook noodles as directed by package and then after draining in a large bowl; add the next 6 ingrediants listed mix well.
  • Then in a large deep dish pan or lasagna pan layer 1/2 the noodle mixture, then 1/2 the meat mixture, repeat - noodles then meat.
  • Top with the parmesan cheese if you like.
  • At this point you can cover with foil or lid and freeze or you can place it in the oven.
  • Bake at 350 for 30 min or until warmed through. Enjoy.
  • Once cooked this freezes beautifully in a well sealed container.
