HAMBURGERS WITH BROWN GRAVY (TOTAL COMFORT FOOD AKA "MEAT CAKES" :)
These are sooooo great (and EZ)! I grew up eating these about once a week and they are incredible with mashed potatoes or buttered egg noodles and a veggie. While this recipe is basically my mom's, I have changed one thing...instead of using chopped onion in the burgers, I use an envelope of onion soup mix...it gives them the PERFECT flavor! This is now one of my family's favorite meals...try it and it will probably become one of your's, too. P.S. These burgers also work for grilling (without the gravy :).

Steps:
- Combine ground beef, bread, soup mix, salt, pepper, ketchup, garlic powder, parsley and eggs in a large bowl until well mixed.
- Prepare each burger with approx 1/3 cup of meat mixture and form into patties about 1/2 inch thick.
- Heat a 12" skillet over med-high heat and fry burgers for about 5 minutes on each side, until they are almost done.
- Remove burgers to a plate and discard all but about a tablespoon of drippings from skillet.
- Lower heat under skillet and prepare brown gravy with water in a bowl or measuring cup; slowly pour into skillet, stirring constantly, scraping up any brown bits from the bottom.
- When gravy has thickened, place burgers back in the pan and cover.
- Simmer for about 20 minutes, or until burgers are done.
- Serve with mashed potatoes or egg noodles.

MY HUSBAND'S FAVORITE BAKED BURGERS
Simple, flavorful hamburger recipe that my husband loves. Ketchup is the binder so no egg is required. They hold together very well. I bake them in the oven and they come out perfect every time! I serve these with a slice of cheese melted on top. Top as desired.

- Preheat the oven to 400 degrees F (200 degrees C).
- Combine ground beef, bread crumbs, ketchup, Worcestershire sauce, garlic powder, onion powder, mustard powder, salt, and black pepper in a bowl until well mixed. Form into 4 patties and place on a baking sheet.
- Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Serve immediately.

Despite the unappetizing photo, my recipe for this comfort food favorite is delicious. Serve over hot mashed potatoes or fluffed baked potatoes, or like my Grandma did -- over homemade buttered egg noodles.

- NOTE: IF YOU PREFER AN EXTRA-SAVORY GRAVY, INCREASE PAPRIKA TO 1/2 TEASPOON, AND GINGER, MUSTARD, SAGE AND THYME TO 1/4 TEASPOON. (STEP ONE): IN a large skillet over medium-high heat, add ground chuck and coarsely break apart; ADD the onion salt, garlic salt and fresh cracked pepper.
- STIR and cook until browned but still juicy.
- SPRINKLE the flour over ground beef and stir until all flour is absorbed.
- POUR in the hot water and stir well until flour is dissolved.
- WHISK in the remaining ingredients.
- BRING to a gentle boil then reduce heat.
- SIMMER gravy for 10 minutes, stirring as needed.
- SEASON to taste (if needed) with salt and freshly cracked pepper.
- LADLE over seasoned buttered hot mashed potatoes or seasoned buttered oven-baked, "smashed" potatoes, or butter-parsley egg noodles.
- SERVE and enjoy.

BEEF PATTIES WITH KETCHUP GRAVY

Steps:
- Crush the saltines and place them in a large bowl.
- Add the egg and ground beef and mix well with your hands.
- Form the beef mixture into four ½-inch thick patties.
- Place the patties in a Dutch oven or slow cooker.
- In a small bowl, stir together the ketchup, Italian seasoning, and 1/3 c water.
- Pour the ketchup mixture over the beef in the pot and top with the onion and bell pepper.
- If using Dutch oven-cover, place over medium heat, and cook 1 ½ hours.
- If using slow cooker, cover and seal the pot and cook until the beef patties are tender and no longer pink in the center, 7-8 hours on LOW, 3-4 hours on HIGH.
- Serve the patties over hot cooked rice with the gravy spooned on top.
