Ham and macaroni -- what an excellent way to use up leftover ham from Easter or whenever. This dish is easily put together and tastes just yummy! I got the recipe at the TOH website, posted by Kathy.

Number Of Ingredients 8

1 small onion, finely chopped
2 cups cooked ham, chopped into not too small pieces (I used 3 cups)
2 tablespoons butter or 2 tablespoons oil
1 (10 3/4 ounce) can cream of mushroom soup, unreconstituted (may use cream of chicken or celery)
1/2 cup milk
1 1/2 cups shredded cheddar cheese, divided (I would use more)
2 cups macaroni, cooked and still hot
1/4 cup garlic-flavored croutons or 1/4 cup potato chips, crushed

Steps:

  • Preheat oven to 350 degrees F. Spray a 7- x 11-inch baking dish with cooking spray.
  • Cook onions and ham in the butter until onion is tender but not browned.
  • Add soup, milk and 1 cup (more, if desired) of the cheese. Stir until the cheese melts.
  • Remove from heat and add drained macaroni. Mix gently but well and pour intoo prepared baking dish. Sprinkle with remaining cheese and crumbs.
  • Bake in preheated oven until bubbly hot all throughout, about 30 minutes.

SOUTHWESTERN HOMINY

This recipe has been in our family for a long time, but I'm not sure where it originated. Though it has a Southwestern flair, we love it here in Missouri.

1/2 cup chopped onion
1/2 cup chopped green pepper
3 tablespoons butter
2 cans (15-1/2 ounces each) golden hominy, rinsed and drained
2 to 3 teaspoons chili powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a saucepan, saute onion and green pepper in butter until tender. Add the remaining ingredients. Cook, uncovered, over medium-low heat for 5-10 minutes or until heated through, stirring occasionally.

This is a great side dish for the holidays. Grandma always served this with Thanksgiving and Christmas dinners. Goes well with turkey and dressing.

1 (20 ounce) can white hominy
1 clove garlic, minced
1 tablespoon chopped jalapeno pepper, or to taste
½ cup sour cream
1 tablespoon butter, or to taste
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine hominy, garlic, and jalapeno in a saucepan. Bring to a boil, reduce heat, and simmer until hominy is tender, 15 to 20 minutes. Strain out liquid and pour hominy mixture into baking dish. Stir sour cream and butter into hominy mixture; top with Cheddar cheese.
  • Bake in preheated oven until cheese melts, about 25 minutes.

A different sidedish using hominy, sour cream, cheese and green chilies. Friends who say they don't like hominy eat it and ask for more. It's fast and tasty. Adjust chili peppers to taste.

3 (15 ounce) cans white hominy, drained
1 (8 ounce) container sour cream
2 cups shredded Cheddar cheese
1 (4 ounce) can chopped green chile peppers
1 pinch cayenne pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a 2 quart casserole dish, mix together hominy, sour cream, cheddar cheese, chilies and cayenne pepper.
  • Bake for 25 minutes in the preheated oven, or until heated through.

Butter, for greasing the pan
8 slices bacon, chopped
1 onion, chopped
1 red bell pepper, chopped
One 30-ounce can hominy, drained and rinsed
3/4 cup half-and-half
Hot sauce, to taste
1/2 cup grated Cheddar
1/2 cup grated Monterey Jack cheese
Kosher salt and freshly ground black pepper
1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 375 degrees F. Butter an 8- or 9-inch square baking pan.
  • In a large skillet, fry the bacon over medium-high heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. In the bacon fat, cook the onion and pepper until just starting to brown, 6 to 8 minutes. Stir in the hominy, half-and-half and hot sauce. When the mixture is bubbling, turn off the heat and stir in the bacon and some of the Cheddar and Monterey Jack, reserving some of the cheese for later. Taste and adjust the seasoning with salt, pepper and more hot sauce if needed.
  • Pour the mixture into the prepared pan and top with the remaining cheese and the breadcrumbs. Bake until the top is golden brown and the casserole is bubbling, about 20 minutes. Let rest for 15 minutes before serving.

1 medium onion, chopped
1 tablespoon canola oil
1 garlic clove, minced
1 cup sour cream
3/4 cup shredded cheddar cheese, divided
1/4 cup milk
1 can (4 ounces) chopped green chilies
1/4 teaspoon ground cumin
3 cans (15 ounces each) golden hominy, drained

Steps:

  • In a small skillet, cook onion in oil until tender. Add garlic; cook 1 minute longer. Remove from the heat. In a large bowl, combine onion mixture, sour cream, half of the cheese, milk, chilies and cumin. Stir in hominy. , Pour into a greased 2-qt. baking dish. bake, uncovered, at 350° for 30 minutes or until heated through. Sprinkle with remaining cheese.

Hominy and hominy grits are often confused. Hominy is the whole kernel of corn which has been treated with lye to remove the hulls. Grits are the finer particles or broken hominy. Grits are cooked very much like rice and is served with butter or gravy as a vegetable OR as a cereal. Leftover grits may be molded, cut into thick slices, dipped in cornmeal and fried (delicious served with sorghum, maple syrup or honey).
