Ham Salad is a yummy appetizer or sandwich filling (perfect for leftovers!) made with diced ham, relish, celery, and mayonnaise in 5 minutes!

Steps:
- Add ham to a food processor and pulse until it is in small pieces but not a paste, more like crumbs.
- Add all the ingredients together in a large bowl and stir well.
- Serve chilled, at least 2 hours of refrigerating (this helps hold it together).

HAM PASTA SALAD
Ham Pasta Salad is easy to make and a real crowd pleaser! Salty ham and feta cheese mixed with bright, crunchy vegetables and pasta.

Steps:
- Cook the pasta according to package directions to al dente. Rinse with cold water and drain well. Place in a large bowl.
- Add the olive oil and seasoning salt to the pasta. Toss well and refrigerate. Allow it to cool completely.
- Dice the bell pepper, celery, broccoli and red onion. Peel and dice the carrot. Slice the green onions. Mix the vegetables into the pasta.
- Dice the ham, crumble the feta cheese. Add to pasta also.
- In a small bowl, mix the mayonnaise and vinegar together and toss everything with the pasta and vegetables. Mix well to combine.
- Serve chilled - refrigerate leftovers. This will keep in the refrigerator for 3-4 days.

EASY FRUIT SALAD
Steps:
- Add the orange juice, orange zest, lemon juice, lemon zest, and honey to a saucepan and bring to a boil on medium heat, whisking for 3-4 minutes then turn off, add in the vanilla and let cool completely.
- Add the fruit to a large bowl and toss carefully with the sauce and refrigerate for at least two hours (you can also toss each fruit individually and line up the fruits in rainbow order then garnish the fruit salad with mint).

- Prepare and measure all ingredients using measuring cups.
- Place 2 cups cooked cubed ham, 1 cup shredded cheddar cheese, 1/2 cup chopped dill pickles and 1/3 cup finely chopped white parts of green onions in a large salad bowl. Mix it gently using rubber spatula.
- In a small bowl mix together 1/2 cup avocado oil mayonnaise and 1 teaspoon Dijon mustard. Add 2 tablespoon pickle juice and mix again until smooth.
- Pour dressing over the ham and cheese mixture. Mix everything using rubber spatula.
- Serve chopped green parts of green onion in a small bowl. Sprinkle them over Ham Salad and enjoy!

FRESH FRUIT SALAD
I was looking for a light meal for brunch and decided to toss every type of fruit I had in the house into a yogurt-based salad for lunch. It went over well with my lunch guest who is a fussy eater. My sister actually asked for seconds. The nice thing about this is you make what you need at the time and don't have to bother with leftovers. However, it does keep well for a few days as long as it is refrigerated. Serve in individual dishes with crackers.
