Brunch Strata image

Ham, zucchini, mushrooms and cheese flavor this rich, hearty egg dish. It adds appeal to a breakfast or lunch buffet and cuts easily, too. Enough for a crowd or cut the recipe in halve as this recipe makes 2 casseroles(8 servings each).

3 cups sliced fresh mushrooms
3 cups chopped zucchini
2 cups cooked ham
1 1/2 cups chopped onions
1 1/2 cups chopped green peppers
2 garlic cloves, minced
1/3 cup olive oil
2 (8 ounce) packages cream cheese, softened
1/2 cup half-and-half cream
12 eggs
4 cups day-old bread
3 cups shredded cheddar cheese (12 ounces)
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a large skillet, saute the mushrooms, zucchini, ham, onions, green peppers, and garlic in olive oil until vegetables are tender; drain and pat dry; and set aside.
  • In a large mixing bowl; beat cream cheese and cream until smooth; beat in eggs.
  • Stir in bread, cheese, salt, pepper and vegetable mixture.
  • Pour into TWO (2) greased 11-inch x 7-inch x 2-inch baking dishes.
  • Bake, uncovered at 350 degrees for 35 to 40 minutes or until knife inserted in center comes out clean.
  • Let stand 10 minutes before serving.
  • Note: Vegetables & ham can be prepared the day before, also cream cheese, cream & eggs, refrigerate; Then put together before baking.

6 slices day-old sourdough bread, cubed, divided
4 ounces cream cheese, cubed
1 apple, peeled and chopped
1/2 cup raisins
6 large eggs
1 1/4 cups whole milk
1 tablespoon brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 dash ground nutmeg
powdered sugar
maple syrup

Steps:

  • Put half the bread cubes in a lightly oiled 11x 8 inch baking dish.
  • Distribute cream cheese cubes over bread cubes.
  • Top with apples and raisins; cover with remaining bread cubes.
  • In a bowl, whisk the eggs, milk, brown sugar, cinnamon, cloves, and nutmeg together.
  • Pour over bread mixture; be sure bread is completely covered.
  • Cover and refrigerate for several hours or overnight.
  • Preheat oven to 375°; bring strata to room temperature before baking.
  • Bake, uncovered, 50-55 minutes, until set.
  • Let stand 10 minutes; sprinkle with powdered sugar or pass maple syrup at the table.
  • Cut into squares and serve.

2 lbs boneless cooked ham, cubed
3 slices multi-grain bread
12 ounces shredded cheddar cheese
4 -5 apples, quartered,cored and sliced (about 5 cups)
1/2 cup sugar
1/4 cup flour
1 tablespoon cinnamon
1/2 teaspoon nutmeg
6 eggs
2 cups milk
1/4 cup brown sugar

Steps:

  • Preheat oven to 325º F.
  • Slice crusts from bread, cut bread into cubes and place in a 13x9x2- inch baking pan.
  • On top of bread, layer half of the ham and half of the cheese.
  • In a large bowl, combine apples, sugar, flour, cinnamon and nutmeg; spread on top of ham and cheese.
  • In a medium bowl, combine eggs, milk and brown sugar; pour over apples.
  • Layer remaining ham and cheese on top.
  • Bake, uncovered for about 60 minutes or until eggs are cooked and strata is puffy in center.
  • Let stand 10 minutes before serving.
  • Note: This recipe can be assembled in advance.
