Honey-Glazed Ham with Cranberry Relish image

A tangy cranberry-pecan relish adds a festive touch to a honey-glazed spiral sliced ham.

1 Cook's® Bone-in Spiral Sliced Half Ham (about 9 pounds)
1/2 cup honey (cranberry honey preferred, if available)
1-1/2 teaspoons dry mustard
1 teaspoon lemon juice
1 large Granny Smith apple, peeled, finely chopped (about 1-1/2 cups)
1 cup cranberry juice cocktail
1 package (6 ounces) sweetened dried cranberries (about 1-1/3 cups)
2 tablespoons Orange Marmalade
1/4 cup chopped pecans

Steps:

  • 1. Remove and discard glaze packet from ham or reserve for another use. Begin by preparing ham according to package directions.
  • 2. Make Honey Glaze: While baking, mix honey, mustard and lemon juice in small bowl until blended. Set aside until the last 30 minutes of baking time.
  • 3. Make Cranberry Relish: Combine apples and juice in medium saucepan. Bring to a boil over medium heat. Reduce heat to medium-low; simmer 5 minutes, stirring occasionally. Add cranberries; simmer an additional 5 minutes, or until fruit is tender, stirring occasionally. Remove from heat; stir in marmalade and pecans. Set aside until ready to eat. Or, if made in advance, cover and refrigerate until ready to use.
  • 4. Uncover ham and brush with the Honey Glaze for the last 30 minutes of the baking time.
  • 5. Let stand 10 minutes. Carve and serve with Cranberry Relish.

1 (12 pound) bone-in ham
½ cup whole cloves
1 (20 ounce) can pineapple rings in heavy syrup
½ cup packed brown sugar
1 (12 fluid ounce) can or bottle lemon-lime flavored carbonated beverage
1 (4 ounce) jar chopped maraschino cherries

Steps:

  • Preheat the oven to 325 degrees F (160 degrees C).
  • Place ham in a roasting pan. Score the rind of the ham with a diamond pattern. Press a clove into the center of each diamond. Drain the juice from the pineapple rings into a medium bowl, and stir in the brown sugar and lemon-lime soda. Coat the ham with this mixture. Arrange the pineapple rings over the outside of the ham. Place a maraschino cherry in the center of each pineapple ring, and secure with a toothpick.
  • Bake uncovered for 4 to 5 hours, basting frequently with the juices, until the internal temperature of the ham is 160 degrees F (72 degrees C). Be sure the meat thermometer is not touching the bone. Remove toothpicks before serving.

1 cup brown sugar, firmly packed
4 1/2 teaspoons soy sauce
4 1/2 teaspoons ketchup
1 1/2 teaspoons ground mustard
1 1/2 cups crushed pineapple, undrained
2 tablespoons cornstarch, plus
1 teaspoon cornstarch

Steps:

  • Place ham on a rack in a shallow roasting pan.
  • Bake at 325°F for 1 1/4 to 2 hours or until a meat thermometer reads 140°F and ham is heated through.
  • Meanwhile, in a saucepan, combine 1/4 cup water, brown sugar, soy sauce, ketchup, mustard, and pineapple.
  • Bring to a boil; reduce heat, cover and simmer for 10 minutes.
  • Combine cornstarch and remaining water until smooth; stir into pineapple sauce.

Whole cloves
1 can (20 ounces) sliced pineapple
1/2 cup packed brown sugar
12 maraschino cherries

Steps:

  • Place ham in roasting pan. Score the surface with shallow diagonal cuts, making diamond shapes; insert cloves into diamonds. Cover and bake at 325° for 1-1/2 hours. Drain pineapple, reserving 1/4 cup of the juice. Combine brown sugar and reserved pineapple juice; pour over ham. Arrange pineapple slices and cherries on ham. 2 ½ cups cooked and cubed ham
2 green onions, chopped
1 cup pineapple chunks, drained
1 ⅓ cups pineapple juice
4 teaspoons cider vinegar

2 tablespoons cornstarch

Steps:

  • Melt the butter in a large skillet over medium heat. Saute the ham, onions and pineapple chunks in the butter for about 5 minutes.

This simple pineapple sauce is so delicious and easy to make. I got the recipe from my Sister-in-law. Leftovers are great served warm, over vanilla ice cream. I love it with a Honey Baked Ham.

2 (8 ounce) cans crushed pineapple, in juice (do not drain)
1 cup brown sugar, packed
1 tablespoon cornstarch
1/4 teaspoon salt
2 tablespoons lemon juice
1/2-1 tablespoon Dijon mustard (start with less and adjust to your taste)

Steps:

  • In a small sauce pan mix the brown sugar, cornstarch and salt.
  • Stir in undrained crushed pineapple, lemon juice and mustard.
  • Cook over medium heat, stirring constantly until mixture thickens and comes to a boil.
  • Boil while stirring for 1 minute.
  • Serve warm with ham.

1 tablespoon oil
1 cup diced sweet onion
1/4 cup diced green pepper
1 (20-ounce) can crushed pineapple
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/3 cup cider vinegar
1 teaspoon fresh lime zest
1 tablespoon whole-grain mustard
1 clove garlic, chopped

Steps:

  • In a medium saucepan over medium heat, add the oil onion and green pepper. Saute until the vegetables are soft. Add the pineapple, the salt and the pepper. Cook over medium heat, uncovered, until the liquid reduces, about 30 minutes.
  • Deglaze the saucepan with the vinegar and add the lime zest, mustard and garlic. Cook uncovered over low heat until the liquid is reduced again, about 20 minutes more. Transfer to a bowl, let cool then refrigerate, covered, until ready to use. Aloha!

5 to 6 pound mild cure ham
32 oz carton pineapple juice
1 ripe pineapple
5 green onions
juice of one lime
4 tablespoons chopped fresh cilantro or 6tablespoons chopped fresh mint
minced green chile to taste
salt

Steps:

  • 1. To cook the ham put ham in a large pan and pour juice over and add water to cover well. Put the pan on to boil then turn down to simmer and cook 10 to 15 mins per pound. Once the ham is cooked leave to cool in the liquid this keeps it moist. Remove when ready to serve but reserve some of liquid to store the leftovers in.
  • 2. To make the relish chop the pineapple fairly small, squeeze the skins over the bowl to catch the juices, then add the green onions,lime juice, herbs, chili and then salt to taste, remember the ham will also be fairly salty.
