Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Place ham in a large roasting pan, cut-side down. Press brown sugar evenly onto ham. Pour apple into roasting pan and cover with a lid or aluminum foil.
- Bake in the preheated oven until ham is heated through, about 80 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Let ham rest for 10 minutes before transferring to a serving plate. Pour remaining pan juices into a saucepan.
- Combine flour and milk in a jar with a lid; shake until mixture is blended.
- Bring pan juices to a boil. Slowly whisk flour mixture into the saucepan until gravy is thick, about 5 minutes.

HAM WITH ONION GRAVY
I found the original recipe in Quick Cooking. I thought it sounded a bit odd but gave it a try as I was getting tired of grilled ham. We loved it. This was great with mashed potatoes and roasted broccoli. The orginal recipe called for one large onion and 3 tablespoons of veg. oil. I freeze onions so I added one cup of onions and only used one tablespoon of olive oil.

Steps:
- Into the pan that the ham was cooked in (or use bacon grease if you don't have ham juices), add the butter. Once melted, add 1/4 cup of the flour and whisk to combine. Continue adding flour, whisking constantly, until a smooth paste is achieved. Cook the roux over a medium heat until you get a nice deep golden color, about 3 minutes. Add the milk, whisking the whole time to prevent lumps forming. Cook until thick and season to taste. Serve over biscuits!
ONION AND MUSTARD GRAVY
Mustard and onion gravy is a great alternative to the classic thick onion. Serve on Bangers and Mash or any roast meats for an extra kick of flavour.

Steps:
- Gather the ingredients.
- Over a gentle heat, melt the oil and butter in a large saucepan. Add the finely sliced onion and cover the pan with a lid. Cook the onions slowly for approximately 10 minutes or until the onions are soft and translucent. Have a peek now and again to make sure the onions are not browning.
- Add the sugar plus the balsamic vinegar to the onions and stir well. Cover again with the lid and continue to cook for a further 5 minutes, again taking care to make sure they do not burn.
- Remove the lid from the pan, raise the heat slightly and pour in the dark beef stock. Gently boil uncovered for 5 minutes to reduce the gravy by roughly a third.
- In a heatproof jug or bowl mix the corn flour/starch with the cold water to create a thin paste.
- Pour a little of the hot gravy into the cornflour mixture and mix thoroughly. A very thick paste will start to form so add more gravy to thin this down to create a thick pouring liquid.
- Pour the thickened gravy mixture back into the gravy in the pan, add your chosen mustard, raise the heat to a rolling boil and boil for 10 minutes or until the gravy thickens slightly.
- Taste the gravy to decide if you want more mustard, add if needed. Season with salt and pepper to taste. Cook for a further 3 minutes. The gravy is now ready to serve. If not serving immediately keep warm until needed.
