Use ready-rolled puff pastry for a fuss-free, midweek masterpiece - fill this pie with pulled ham hock and a creamy, herby sauce

50g butter
1 onion , chopped
2 celery sticks , chopped
50g plain flour
600ml milk
90g pack pulled ham hock
small pack tarragon , leaves only, chopped
1 egg , beaten
320g pack ready-rolled puff pastry
cooked peas , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a shallow casserole dish, melt the butter over a medium heat on the hob. Add the onion and celery, and fry gently to soften. Add the flour and stir to coat the vegetables. Slowly add the milk, stirring really well after each addition, making sure there are no lumps of flour before you add the next splash of milk. Once all the milk has been added, bring to a simmer to thicken, then fold in the ham hock and the tarragon. Season to taste, then add about half the beaten egg.
  • Cut a circle of puff pastry 2cm wider than the top of the pan and pop it onto seal in the filling underneath, folding the edges to create a crust. Cut the off-cuts of pastry into rough strips and use them to decorate the top. Brush the pastry with the remaining egg and bake in the oven for 25 mins or until the pastry is golden and crisp. Serve with peas.

3 celery ribs, diced
2 medium onions, diced
2 medium carrots, diced
1/2 fennel bulb, diced
2 tablespoons olive oil
1/4 cup unsalted butter, cubed
1/2 cup all-purpose flour
1 carton (32 ounces) reduced-sodium chicken broth
1 teaspoon dried thyme
2 cups cubed fully cooked ham
1 tablespoon chopped fresh tarragon
1/4 teaspoon salt
1/4 teaspoon pepper
BUTTERMILK BISCUITS:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon kosher salt
1/2 teaspoon baking soda
2/3 cup unsalted butter, cubed
3/4 cup buttermilk

Steps:

  • Preheat oven to 425°. Toss celery, onions, carrots and fennel in oil to coat. Spread in a single layer in a 15x10x1-in. baking pan. Roast, stirring occasionally, until lightly browned, 20-25 minutes. Cool. Reduce heat to 350°., Meanwhile, in a large saucepan, melt butter. Stir in flour until smooth. Gradually whisk in broth; add thyme. Bring to a boil, stirring constantly; reduce heat and simmer 10 minutes. Add roasted vegetables, ham, tarragon, salt and pepper, cooking until heated through. Transfer to a greased 13x9-in. baking dish., For biscuits, pulse flour, baking powder, salt and baking soda in a food processor until blended. Add cubed butter; pulse until butter is the size of peas. Transfer to a large bowl; stir in buttermilk until no flour is visible. Turn onto a floured surface; knead gently 8-10 times. Roll dough into a 13x9-in. rectangle; cut into shapes of your choice., Arrange biscuit pieces, overlapping slightly, over ham mixture. Bake until biscuit topping is golden brown, 25-30 minutes. Let stand 10 minutes before serving.

The ultimate comforting supper, bursting with flavorsome vegetables and a rich herby gravy. You can either use some of the pre-frozen chicken filling , in which case thaw it, then assemble the pie and eat straight away. Alternatively, you can make the filling, let cool, and assemble the pie, then freeze the whole thing uncooked ready to defrost and bake in the oven at a later date.

1 (18-ounce) package refrigerated all-butter puff pastry in a block
all-purpose flour, for dusting
2 thick slices good-quality fully cooked ham, cut into strips
1 heaped tablespoon finely chopped fresh tarragon
1/2 quantity of Chicken with White Wine and Herbs
1 egg, beaten

Steps:

  • Roll out the pastry on a floured counter and, using your pie dish as a template, cut out a piece to generously fit the top. From the trimmings, cut a 3/4-inch wide strip (it can be in pieces) to fit around the rim of the dish. Dampen the edges and stick the strips in place around the rim.
  • Mix the ham and tarragon into the chicken filling, then spoon this into the dish. Dampen the top of the pastry strip and place the pastry round on top. Trim the edges and press down gently. Decorate the top if you wish with pastry shapes made from the trimmings, then brush with the beaten egg and make a small slit in the top for a steam hole. Either freeze or cook within 4 hours (keep the pie in the fridge).

2/3 cup sweet onion diced
1 clove garlic minced
2-3 cups golden potatoes chopped
3 large carrots chopped
1/2 cup butter
1 teaspoon tarragon OR thyme
1/2 cup all-purpose flour
1 1/2 cups chicken stock
1 cup milk
1 cup corn (peas or other veggies)
1/2 cup cheddar cheese
1 Puff Pastry

Steps:

  • Preheat the oven to 425-degrees F and butter a 9×13 baking dish.
  • Peel and dice the potatoes and carrots.
  • Boil the potatoes and carrots for 5-8 minutes. Drain and set aside.
  • In a large skillet, melt the butter, and cook the onions and garlic until tender.
  • After that, whisk in the flour.
  • Continue whisking as you add the chicken stock and milk to make the roux.
  • Season the mixture with salt, pepper and tarragon OR thyme.
  • Mix all the vegetables and ham into the roux. Taste for seasoning.
  • Pour half of the ham pot pie filling into the bottom of the buttered baking dish.
  • Sprinkle half the cheddar cheese on top.
  • Add the rest of the filling and top with the remaining cheese.
  • Unroll the puff pastry on top of the filling and tuck the edges until.
  • Bake for 20-25 minutes until the puff pastry is golden brown and the filling is hot and bubbly.

2 cups flour
1 tbsp baking powder
1/2 tsp kosher salt
2/3 cup unsalted butter, cubed
3/4 cup buttermilk
5 celery ribs, diced
1 medium onion, diced
4 medium carrots, diced
2 tbsp extra virgin olive oil
1/4 cup unsalted butter, cubed
1/2 cup flour
1 carton (32 oz) chicken broth
1 tsp dried thyme
2 cups cooked ham
1 tbsp chopped fresh tarragon
1/4 tsp salt
1/4 tsp pepper

Steps:

  • Preheat the oven to 425. Grease a 9x13 baking dish and set aside.
  • Mix the celery, onion, and carrots in the oil. Put in and spread out on a cookie sheet and place it in the oven for 20-25 minutes. Give it a stir every few minutes, when slightly brown take it out and cool.
  • Take the oven temperature down to 350. While you are waiting, get out a large saucepan.
  • Melt the butter and then add the flour, whisking until smooth. Then whisk in the chicken broth. (You may not need it all) sprinkle in the thyme.
  • Bring it to a boil, and stir without ceasing; lower the heat and simmer, about 10 minutes.
  • Add all the browned vegetables, ham, tarragon, salt and pepper, cook until it is all heated through. Pour the filling into the prepared baking dish.
  • For the biscuits, put the flour, baking powder, salt, and baking powder in a food processor. Add the butter and pulse. The butter should look like peas.
  • Put it in a medium sized bowl and add buttermilk. Use your hands or a wooden spoon, to stir it until the flour is incorporated.
  • Flour a surface, and put the dough on it. Knead the dough a few times. (10 should be enough.) Roll out the dough into as much of a rectangle you can manage. Cut into whatever shapes you want. You may have to repeat this process a few times to get enough biscuits. Lay the biscuits out over the filling, overlapping a little bit. Bake in the oven for 25-30 minutes, or until golden brown. Let cool for about 10 minutes before being served.

Small knob of butter
1 tbsp sunflower oil
1 medium onion, finely chopped
2 garlic cloves, crushed
150ml white wine
1 chicken stock cube
1kg whole cooked chicken (you can buy a ready-roasted one from your butcher or use 550g cooked chicken meat instead)
400ml crème fraiche
2 tbsp fresh tarragon leaves, roughly chopped
2 tbsp plain flour
Flaked sea salt
Freshly ground black pepper
1.5 litre pie dish

Steps:

  • Melt the butter with the oil in a large frying pan over a low heat, then add the onion and the crushed garlic. Fry gently for 5-6 minutes until the onion is softened, but not coloured, stirring occasionally.
  • Pour in the white wine, then crumble the stock cube into the pan and stir well until it dissolves. Simmer over a high heat, stirring constantly, until the liquid has reduced by half and thickened. Remove from the heat.
  • Take the skin off the chicken, then strip the meat from the bones and tear it into bite-sized pieces. Place these in a large bowl. Add the onion and garlic mixture and spoon the crème fraiche on top. Scatter over the tarragon, sprinkle the flour on top and season with a good pinch of sea salt and plenty of freshly ground black pepper. Toss everything together until just combined, then spoon into your pie dish. Preheat the oven to 210°C/420°F/Gas Mark 6½.
  • Now for the topping. Brush a sheet of filo pastry with melted butter and cut it into 6. Scrunch up each portion with your hands and place it on top of the filling. Repeat with the remaining sheets of filo until the filling is completely covered.
  • Bake the pie in the centre of the oven for 30 minutes or until the filo pastry topping is crisp and golden brown and the filling is bubbling beautifully.
